DONNA'S MEATLOAF

My friend Donna makes the best meatloaf ever. The amount of chili powder seems excessive, but it really tastes great. You can use 1 tbsp if you are fearful, but believe me - it tastes better with the amount given if you use Spice Islands brand. If your brand is very strong, cut the amount in half. Here is her recipe.

Number Of Ingredients 12

3 lbs lean ground beef
16 ounces canned creamed corn
1 large onion, diced
1 large tomatoes, chopped into about 1 inch chunks
1 green bell pepper, in 1/2 inch dice
3 -4 slices white bread, crusts removed & torn into small pieces (I use a very soft white bread for this)
2 eggs, beaten
1/2 cup ketchup, for meat mixture
4 teaspoons chili powder (I use Spice Islands)
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup ketchup, for topping

Steps:

  • Mix creamed corn, eggs, chili powder, 1/2 cup ketchup, salt, pepper and bread together. Let sit while mixing meat, onion, tomato & bell pepper in large bowl.
  • Add corn mixture to meat mixture.
  • Form into a large rectangular mound, about 2 to 3 inches high on a baking sheet with sides, to avoid dripping in oven.
  • Top with 3/4 cup ketchup.
  • Bake at 350°F for 40-45 minutes, or until cooked through and lightly browned.

AUNT MILLIE'S MEATLOAF

This is the simplest meatloaf recipe that made me a meatloaf lover! There is nothing fancy in the mix, but the flavor is wonderful. The mix will seem so wet that you will think you will not be able to form it, but you will. It also makes good meatballs, just add a little oregano and garlic and bake them at 350°F for about 15 minutes. Hope you like it as much as I do! We call it Aunt Millie's but Aunt Honey swears it's hers (so we give them both credit)!

1 lb ground beef
2/3 cup evaporated milk
1/3 cup breadcrumbs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Mix all ingredients together in large bowl (It will seem VERY wet--This is ok).
  • Spray baking pan with a little cooking spray.
  • Place mixture in pan and shape into loaf.
  • Bake at 375°F for 1 hour.

2 pounds lean ground beef
2 eggs
1 ½ cups dry bread crumbs
¼ cup ketchup
1 teaspoon monosodium glutamate (MSG)
½ cup warm water
1 (1 ounce) package dry onion soup mix
2 slices bacon
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, eggs, crumbs, ketchup, MSG, water and soup mix. Mix well and spoon mixture into loaf pan. Cover with 2 strips of bacon, then cover with tomato sauce.
  • Bake in preheated oven for 1 hour.

My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

¾ cup minced onion
½ cup finely chopped bell pepper
½ cup milk
2 large eggs
2 cloves garlic, minced
¾ cup ketchup, divided
2 tablespoons chopped fresh parsley
4 teaspoons Worcestershire sauce, divided
2 teaspoons minced fresh thyme
2 teaspoons Dijon mustard
¾ cup seasoned bread crumbs
2 pounds ground sirloin
1 ½ teaspoons kosher salt
¾ teaspoon ground black pepper
2 teaspoons balsamic vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
  • Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.
  • Combine remaining ketchup with balsamic vinegar and remaining 1 teaspoon Worcestershire in a small bowl. Mix until well combined and spread over the top of the meatloaf.
  • Bake in the preheated oven until an instant read thermometer inserted in the center reads 160 degrees F (71 degrees C), about 1 hour. Let stand for 10 minutes before slicing and serving. The longer it sits, the easier it will be to slice.

This recipe came out of Paula Deen's Cookbook. This is a basic meat loaf that is my go to meat loaf recipe. My family loves it!!! This meat loaf recipe is the best for next day meat loaf sandwiches. I feed a family of 5 so I double the recipe.

1 (6 ounce) can tomato paste
1/2 cup chopped vidalia onion
1/2 cup chopped green bell pepper
1/2 cup quick-cooking oats
1 egg, lightly beaten

1/3 cup ketchup
2 tablespoons packed brown sugar
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 375. In a large bowl, combine the ground beef, tomato paste, onion, green pepper, oats, eggs, salt and pepper. Shape the mixture into a loaf and place it in a 9 by 5 inch loaf pan.

2 pounds ground beef
1 onion, chopped
1 cup ketchup
1 cup Italian-seasoned bread crumbs
2 eggs
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 ½ cups ketchup
¼ cup water
3 tablespoons white wine vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
  • Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
  • Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.
