This colourful Lebanese salad of roasted aubergine, peppers, pomegranate and a sweet and spicy dressing makes a mouth-watering treat for two

1 medium aubergine
1-2 spring onions , chopped
4 cherry tomatoes , cut into quarters
½ small red pepper , deseeded and finely diced
½ small green pepper , deseeded and finely diced
1 tbsp mint , chopped
seeds from 0.5 pomegranate , to serve
juice 0.5 lemon
½ small red chilli (deseeded if you don't like it too hot), finely chopped (optional)
½ tbsp pomegranate molasses
1 small garlic clove , crushed
1 ½ tbsp extra virgin olive oil , plus extra to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Prick the aubergine with a sharp knife to prevent it from exploding, then put it on the prepared tray and roast for 45-55 mins until the skin is wrinkled and it is very soft.
  • While the aubergine is roasting, make the dressing. Mix together the lemon juice, chilli, if using, the pomegranate molasses, garlic and olive oil in a bowl. Season and set aside.
  • When the aubergine is cool enough to handle, peel and place it in a colander. Press down on it very gently over a bowl to allow the juices to run out, then transfer the aubergine to a serving plate and cut into large pieces. Dress quickly with half of the dressing, then add the spring onions, cherry tomatoes and peppers to the plate. Pour over the remaining dressing and mix with your hands or a spoon to coat. Serve scattered with mint, pomegranate seeds and more olive oil drizzled over.

Chinese Eggplants (Aubergine) With Black Bean Sauce image

I love eggplants, but allergic to all seeds, peanuts and nuts. I cannot use commercially available hoisin sauce because it has sesame oil. I cannot make hoisin sauce because it has peanut butter, so I came up with this dish tonight to satisfy my craving for Chinese eggplants.

1 tablespoon canola oil
4 tablespoons gingerroot (peeled and minced)
2 garlic cloves (minced)
3 green onions (separate whites and green, and slice thinly)
salt and pepper (to taste)
2 tablespoons fermented black beans (these are not black beans, they're fermented soy beans available at Asian markets)
1 small onion (chopped)
2 tablespoons oyster sauce
1 tablespoon rice vinegar, seasoned (or regular vinegar with 1/2 teaspoon of sugar)
2 small Japanese eggplants (cut 1/2-inch thick on the bias)
1/2 teaspoon red pepper flakes (optional)
soy sauce (to taste)

Steps:

  • Heat saucepan on medium high. Add oil, hot but not smoky.
  • Add minced ginger root, garlic, white part of green onion and salt and pepper. Cook to soften.
  • Add fermented black beans, smash with spoon and mix into ginger, garlic, onion mixture.
  • Add chopped onion, cook to soften 2 minutes.
  • Add oyster sauce and rice vinegar, mix well.
  • Add eggplants and mix well.
  • Add red pepper flakes, if using.
  • Cook until eggplants and onion are well done.
  • Taste and add soy sauce, if needed.
  • Garnish with green part of onions.
  • Serve with sauce over white rice.

CHARRED AUBERGINES WITH WHITE BEANS & SALSA VERDE



Charred aubergines with white beans & salsa verde image

Serve these charred aubergines with white beans and salsa verde topping as a veggie option at a barbecue. The aubergines char and blister beautifully

2 tbsp olive oil , plus extra for rubbing and drizzling
1 onion , finely chopped
2 garlic cloves , crushed
½ tsp chilli flakes
2 x 400g cans cannellini beans , drained and rinsed
2 thyme sprigs
200ml vegetable stock
3 tbsp crème fraîche or vegan alternative, if needed
lemon , zested, plus wedges to serve
4 medium aubergines
50g flaked almonds , toasted
small bunch of parsley , roughly chopped
40g skinless hazelnuts
½ small bunch of garlic clove
1 tbsp capers , drained
1 tbsp red wine vinegar
7 tbsp olive oil

Steps:

  • Heat the oil in a frying pan set over a low heat and fry the onion with a pinch of salt for 10 mins. Add the garlic and chilli flakes, and fry for 2 mins more. Tip in the beans, thyme and stock, bring to a simmer and cook for 15 mins, or until the beans have broken down a little. Stir in the crème fraîche and lemon zest. Season to taste.
  • To make the salsa verde, put the parsley, hazelnuts, garlic, capers, vinegar and oil in a pestle and mortar and crush everything together - this will take about 5 mins. Alternatively, blitz in a food processor until combined but not smooth. Transfer to a bowl and season to taste.
  • Light the barbecue and wait for the flames to die down. Cut the aubergines in half lengthways and score the cut side in a diamond pattern using the tip of a knife. Rub with some oil, then put directly on the grill and cook for 7-10 mins on each side, or until charred and soft. Alternatively, cook under a grill (see tip, below). Top the cooked aubergines with the bean ragu and salsa verde, then scatter over the toasted almonds and serve with the lemon wedges on the side.
