EGGPLANT (AUBERGINE) MEATBALLS

Eggplant (Aubergine) Meatballs image

My fiancee loves having meatballs with pasta, but I sometimes tire of having so much meat! I've found these to be a great compromise.

EGGPLANT (AUBERGINE) - CHICKEN TERRINE

Eggplant (Aubergine) - Chicken Terrine image

We really liked the subtle slight lemony flavor of the coriander brushed onto the eggplant. Grilling the eggplant was the most time consuming, you can do that that even the day before.

Categories     Lunch/Snacks

Time 1h25m

Yield 2 serving(s)

Number Of Ingredients 14

2 -3 tablespoons olive oil
1 teaspoon ground coriander
2 medium eggplants (enough to line a one quart loaf tin)
1 lb chicken breast
2 garlic cloves, crushed
10 ounces defrosted frozen spinach, squeezed dry as much as possible
2 tablespoons chopped chives
1/2 cup cashew nuts, chopped
1/2 cup fresh basil leaf, chopped
2 -3 chopped sun-dried tomatoes (approx a full tablespoon)
2 eggs, beaten
salt and pepper
grated nutmeg, to taste
sour cream, to serve (optional)

Steps:

  • Mix the olive oil with the coriander.
  • Slice the eggplants lengthwise in approx ½ inch thick slices.
  • Brush only one side of the eggplant slices with the olive oil mixture, starting with the oiled side and preferably using a grill pan, sear the slices, pushing them down with a spatula, turn over and cook until they are colored and softened but still firm.
  • Repeat with all the slices, then set aside to cool.
  • Preheat the oven to 350°F.
  • Finely chop the chicken breasts or let the food processor do this for you, it should be chopped, not a paste.
  • Mix with all the other ingredients and seasonings.
  • Line a one quart non-stick loaf tin with the eggplant slices, start on the bottom laying the slices lengthwise, then vertically up the sides so that you have 2 to 3 inches hanging over the sides.
  • If you don't have a non-stick loaf tin, line first with parchment paper.
  • Pour the chicken mixture into the loaf tin, even out and fold back the eggplant slices to cover.
  • Bake for 35-40 minutes until firm, check half way to make sure it does not get too dark, otherwise cover with aluminum foil.
  • Remove from the oven, leave to cool in the tin.
  • The terrine can now be transferred to the fridge until ready to serve.
  • Run a knife around the tin, turn the terrine out, cut in slices and serve with some sour cream.

Delicious! Hope you try it!

Categories     Other Main Dishes

Time 55m

Number Of Ingredients 10

2 large eggplant
18 - 24 oz of your favorite marinara sauce (i love classico tomato & basil)
1 - 15 oz container ricotta cheese
1 c grated parmesan cheese
1/2 c chopped parsley - or dried
1 tsp garlic powder
2 tsp oregano, dried
3 eggs
2 c fresh spinach leaves
2 c fresh shredded mozzarella

Steps:

  • 1. Preheat oven to 450 degrees. Cut eggplant into rounds about 3/4 inch thick. Coat front and back with olive oil. Put eggplant on two baking sheets. Add salt & pepper. Bake in the oven for 20-25 minutes-flipping them half way. Eggplant should be nice and golden brown. While eggplant bakes, mix the ricotta, eggs, spices and 1 cup of Parmesan together in a small bowl. Add some salt & pepper.
  • 2. In an oven safe casserole dish, layer the bottom with a bit of the marinara sauce. Add 1 layer of your eggplant on top, a handful of spinach. Then add more sauce, and a layer of ricotta.
  • 3. Repeat until you run out of eggplant. Top layer should be remaining spinach, sauce and Mozzarella cheese. In that order. Reduce oven temp to 375. Place the dish in the oven and bake for 20 - 30 minutes, or until desired brownness. The cheese should be melted and the marinara should be bubbly. Let sit for at least 10 minutes before serving. I served with a salad and crusty bread.

EGGPLANT (AUBERGINE) -SPINACH CURRY

Eggplant (Aubergine) -Spinach Curry image

This curry is an adaptation of a recipe I found posted on several different websites. When I first served this dish, people commented on its professional, restaurant-like quality. However, the original version called for a lot of butter, so I played with the ingredients and preparation until I found what worked best for me. Instead of steaming the eggplant cubes, you can sauté them in 1/4 cup of ghee until they turn golden, but I prefer this less fatty version.

Time 1h5m

Yield 5-6 serving(s)

Number Of Ingredients 17

1 large eggplant, cut into 1 1/2 centimeter cubes, with skin
2 teaspoons kosher salt
2 tablespoons brown mustard seeds
2 tablespoons canola oil
1 large onion, diced
6 garlic cloves, minced
2 tablespoons fresh ginger, minced
1 teaspoon cumin, ground
1/2 teaspoon coriander, freshly ground
1/2 teaspoon cardamom, freshly ground
1/2 teaspoon garam masala
1/4 teaspoon cayenne
1/4 teaspoon ground cloves
1 (796 ml) can diced tomatoes
2 (300 g) packages frozen spinach, thawed and drained
3/4 cup plain yogurt
3/4 cup cilantro, chopped

Steps:

  • Put eggplant cubes in colander over large bowl, sprinkle with kosher salt, and let stand for 30 minutes to sweat. Pat dry and remove excess salt with paper towels or clean dishcloth. (Careful, this juice stains!).
  • Toast mustard seeds in a small dry non-stick pan over medium-low heat until they turn grey and begin to pop. Remove from heat and reserve in a small bowl.
  • Place eggplant in a mid-sized steamer and cook for about 10 minutes, until eggplant is soft and tender but not mushy. Remove from heat and reserve.
  • Heat canola oil in large pot over medium heat. Add onion and sauté until golden. Stir in garlic, ginger, and all other spices, being careful to avoid scorching.
  • After 1 minute, add spinach and tomatoes. Raise heat to high and boil for 2 minutes, stirring often. Turn heat down to low and simmer with lid on for 20 minutes to allow flavours to blend.
  • Stir in reserved mustard seeds and eggplant. Once eggplant is hot, stir in yogurt and chopped cilantro. Remove from heat.
  • Serve alone on a bed of rice, or with a beef curry and naan bread.

SALMON AND SPINACH TERRINE

Salmon and Spinach Terrine image

One of the nicest ways to begin a meal is with a chilled terrine of fish. This salmon-cod combination, flavored and colored with fresh spinach leaves, is a favorite at Eniscree Lodge, a charming country retreat perched on a County Wicklow hillside in Eniskerry. Served with brown soda bread, the terrine is perfect for a luncheon dish or as a first course for dinner. From "The Irish Heritage Cookbook"

EGGPLANT AND RED PEPPER TERRINE

Eggplant and Red Pepper Terrine image

This is from Simply Recipes (in my opinion the best food blog out there!) www.simplyrecipes.com by Elise Bauer.

Provided by Queen Dana

Categories     European

Time 1h

Yield 4 serving(s)

Number Of Ingredients 14

3 large red bell peppers (about 1 1/2 lbs)
2 large firm eggplants (about 2 1/2 lbs)
2 tablespoons grapeseed oil (high smoke-point oil)
1 1/2 cups loosely-packed flat leaf parsley
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
8 ounces fresh mozzarella cheese, cut into 1/8-in slices, about 14 slices
3 garlic cloves, peeled and finely chopped
2 -3 ripe tomatoes, each cut into 6 to 8 pieces (1 1/4 lbs)
1/4 cup virgin olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon Tabasco sauce

Steps:

  • Prepare the red peppers. Arrange the red peppers on a broiling pan and place them under a hot broiler so that their upper surfaces are about 1/2 inch from the heat. Broil for 15 minutes, turning occassionally, until the peppers are blistered and black on all sides. (You can alternatively blacken the peppers directly over the open flame of a gas cook-top, holding them and turning them with tongs.) Place them in a brown paper or plastic bag and close the bag. Let the peppers steam in their own residual heat inside the bag for 10 minutes. Then peel them (the skin will slide off) and remove the seeds.
  • Note that Trader Joe's makes an excellent bottled cooked red pepper that can be used as a shortcut to the above step.
  • Prepare the eggplants. Heat a grill or grill pan until very hot. Cut the eggplants into 1/2-inch slices and lay out flat on a large flat surface such as a baking pan. Brush the slices on both sides with the grapeseed or peanut oil, and sprinkle with salt. Cook the eggplant slices on the grill, covered, for 4 minutes on each side, until they are nicely browned and softened. If your grill does not have a lid, make a tentlike lid of aluminum foil and place it over the eggplant as it cooks.
  • Prepare the parsley. While the eggplant is grilling, soften the parsley by blanching it in boiling water for 5 to 10 seconds. Remove, cool under cold water, drain.
  • Build the terrine. Line a terrine mold (loaf pan) with plastic wrap. Arrange a layer of eggplant in the bottom of the mold and top it with about a third each of the red pepper pieces, parsley, and cheese. Repeat, beginning and ending with a layer of eggplant, until all the ingredients are used. Cover with plastic wrap and press on the wrap to compact the mixture. Refrigerate.
  • At this point you can make the terrine in advance and store in the refrigerator until you are ready to serve it.
  • Prepare the sauce. Place the garlic and tomatoes in a blender and blend until smooth. Push the mixture through a food mill (fitted with a fine screen) over a bowl. Add the remainder of the sauce ingredients. Mix well.
  • To serve, pour some of the sauce on a large platter and unmold the terrine in the center. Cut it into slices and serve with the remainder of the sauce.
