SPICY SHRIMP AND ASPARAGUS

I found this recipe on a website a few weeks ago and it was wonderful! If you do not like extremely spicy food try adding a 1/2 cup of coconut milk right after you add the shrimp and cook just until the coconut milk has thickened and the shrimp is cooked through.

2 tablespoons chili-garlic sauce
1 tablespoon minced garlic
1 tablespoon dark brown sugar
1 tablespoon fresh lime juice
3 teaspoons fish sauce, divided
1 lb large shrimp, peeled and deveined
1 lb asparagus
3 tablespoons oil
fresh cracked pepper
2 tablespoons chopped cilantro
2 cups cooked jasmine rice

Steps:

  • In a medium size bowl add chili garlic sauce, garlic, sugar, lime juice and 2 teaspoons of the Fish Sauce. Mix well. Add shrimp and mix until covered with sauce. Set aside to season.
  • Diagonally trim asparagus into one inch pieces. *If thicker asparagus is used, boil in salted water 2-3 minutes. Drain, and immediately cool down in ice water. Drain well.
  • Heat oil in a large skillet over a high heat. Add asparagus, remaining teaspoon of Fish Sauce, and fresh cracked pepper. Stir-fry 2-3 minutes, or until asparagus is tender-crisp.
  • Add shrimp mixture to skillet. Stir-fry until shrimp turns opaque (pink) and sauce is well mixed with ingredients. Serve immediately. If desired, sprinkle with cilantro and serve with hot Jasmine Rice.

1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons water
1 tablespoon sugar
1 tablespoon oyster sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 garlic cloves, minced
1 onion, sliced
1 lb asparagus, cut into 2-inch pieces
1 green onion, chopped

Steps:

  • In a large bowl, place shrimp, seasoning with salt and pepper; set aside.
  • In a smaller bowl, mix the water with the sugar, oyster sauce, and corn starch; set aside.
  • Heat your wok, or skillet, over high heat; stir fry oil, garlic, onion, and shrimp.
  • Once shrimps become opaque and a pink color, add asparagus.
  • Stir in cornstarch mixture and stir until sauce thickens; remove from heat and stir in green onion.

16 jumbo shrimp, peeled, deveined and butterflied
1/2 lb green asparagus
1/4 cup vegetable oil
16 ginger, slices peeled
2 garlic cloves, minced
2 tablespoons shaoxing wine
1 tablespoon malt vinegar
1 tablespoon light soy sauce
2 teaspoons white sugar
1/4 teaspoon sesame oil
1/4 cup water

Steps:

  • Peel, devein and butterfly the shrimp, leaving tails intact.
  • Wash asparagus and snap off tough ends. Cut each spear into 4 diagonal cuts.
  • Heat 2 tbsp oil in a hot wok. Add half the shrimp and stir fry for 30 seconds.
  • Remove shrimp from wok with a slotted spoon and set aside. Repeat with remaining shrimp.
  • Add remaining oil to hot wok. Stir in asparagus, thinly sliced ginger and garlic. Stir fry for 30 seconds, stirring constantly so that garlic does not burn.
  • Put shrimp back into the wok with the wine, the vinegar, soy sauce, sugar and sesame oil. Stir fry for 30 seconds.
  • Pour in water and stir fry for another 30 seconds or until shrimp are just cooked through.
  • Arrange shrimp and asparagus on a platter and serve with steamed rice, if desired.

1 lb shrimp, medium to large, peeled and deveined
1 pinch black pepper, to taste
1 lemon
4 tablespoons olive oil or 4 tablespoons extra virgin olive oil
4 medium garlic cloves, sliced thinly
3/4 lb asparagus, tough ends snapped off and cut into 2 inch lengths (about 2 cups)
1/4 teaspoon crushed red pepper flakes
2/3 cup reduced-sodium chicken broth
1/2 teaspoon cornstarch

Steps:

  • Place shrimp on paper towels and dry very well.
  • Sprinkle shrimp with a bit of the pepper.
  • Using a vegetable peeler, peel off strips of the lemon peel and then cut the strips into very thin long pieces; be sure to peel only the yellow part of the peel, not the bitter white part.
  • Cut lemon in half and juice it into a small dish, removing seeds.
  • Heat a deep 12 inch skillet (preferably NOT non-stick) over medium high heat for 1 minute.
  • Add 2 Tbsp of the oil and heat until it's shimmering hot -- just a few seconds.
  • Add the shrimp in a single layer and do not disturb it; let cook for about 2 minutes until browned.
  • Turn shrimp over and brown the other side, about 1 1/2 minutes, then transfer to a plate. Shrimp should not be cooked through.
  • Reduce heat to medium-low and add garlic, stirring for 30 seconds.
  • Add asparagus, lemon zest strips, red pepper flakes and cook, stirring for 2-3 minutes.
  • Add chicken broth and cover, simmering for 1-2 minutes until asparagus is almost done.
  • Stir cornstarch with 1 Tbsp water and stir into the pan.
  • Add shrimp back to the pan and cook another 1-2 minutes until done.
  • Stir in 1 Tbsp lemon juice, then taste and add more juice and pepper if needed.

This is an incredibly quick and easy recipe, perfect for busy weekday meals. I found this in the Chicago Sun-Times and it stated that it serves 2 but I have to double it for my husband and myself. I use Thai Kitchen Sweet Red Chile sauce.

1/2 cup Thai sweet chili sauce
1/4 cup chicken broth or 1/4 cup water
1/2 lb medium shrimp, peeled and deveined
1/2 lb asparagus
1 teaspoon soy sauce
1/4 cup fresh cilantro leaves
1 teaspoon toasted sesame seeds

Steps:

  • Pour the chile sauce and broth into a medium-size skillet and bring to a simmer over medium-high heat. Add the shrimp, reduce the heat to medium and cook, turning the shrimp, until they turn pink and opaque and are cooked through and the sauce thickens somewhat, about 3-4 minutes.
  • Add water to a large skillet to a depth of about 1 inch and bring to a boil over medium-high heat. Rinse the asparagus spears and snap off and discard their tough ends. Add the asparagus to the boiling water, reduce heat and simmer until the spears turn bright green, about 3 minutes. Drain the asparagus and cut them into 1 1/2-inch pieces, then add the soy sauce to them.
  • Spoon the shrimp onto plates; garnish the shrimp with asparagus, cilantro and sesame seeds.
  • I serve this with steamed jasmine rice.
