RISOTTO WITH ASPARAGUS AND PROSCIUTTO



Risotto With Asparagus And Prosciutto image

1 pound asparagus
1 quart hot chicken stock
2 tablespoons olive oil
3 tablespoons unsalted butter
3 shallots, finely chopped
1/4 pound prosciutto, chopped
Coarse salt and freshly ground pepper to taste
2 cups arborio rice
1 cup dry white wine
1 generous pinch saffron threads
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Cut the asparagus into pieces two inches long, keeping the tips separate from the stalks. Bring the chicken stock to simmer and cook the stalks until tender. Remove with a slotted spoon. Add tips and repeat process.
  • Heat the oil and two tablespoons butter in a skillet and gently soften the shallots with the prosciutto. Season with salt and pepper and add the rice. Stir with a wooden spoon to coat the grains. Let the rice cook three to four minutes, stirring so that it absorbs the butter and turns opaque.
  • Add the wine, stir, and then add the saffron.
  • Add the hot stock a ladle at a time, and cook the rice, stirring. Keep stirring and adding stock for about 20 minutes. The rice will absorb the liquid. Make sure the stock is being absorbed and that there is not much liquid on top. The bottom of the pan should be clean.
  • Start testing the rice. It is done when it is al dente. You may not need to use all the stock or you may need to add a little hot water. Be careful not to overcook the rice.
  • Just before the risotto is ready, stir in the asparagus to heat through. Stir in the remaining butter but do not return to the heat. Add the cheese, spoon the rice onto individual heated plates and sprinkle with extra cheese and ground pepper.

1 lb asparagus, peeled
3 1/2 tablespoons butter, unsalted
1 ounce prosciutto, thinly sliced, cut into 1/2-inch wide strips
1 lb sea scallops
salt
pepper, freshly ground
1/2 teaspoon lemon zest
2 tablespoons lemon juice
1/4 cup chicken broth

Steps:

  • Cook the asparagus in a large saucepan of boiling salted water until tender, about 8 minutes.
  • Using tongs, transfer the asparagus to a colander and leave the pan of water simmering on the stove.
  • Melt 1 tablespoons butter in a large skillet.
  • Add the proscuitto to the butter and cook over low heat until crisp, about 4 minutes.
  • Transfer proscuitto to a plate.
  • Melt 2 tablespoons butter in the skillet and add the scallops, season with salt and pepper and cook over moderately high heat until browned, about 2 minutes per side.
  • Transfer the scallops to a plate.
  • Add the lemon zest to the skillet and cook over moderate heat until browned, about 1 minute.
  • Add the lemon juice and simmer for 10 seconds.
  • Add the broth and simmer, scraping the bottom of the pan until reduced to a rich glaze, about 3 minutes.
  • Swirl in the remaining 1/2 tablespoons butter and return the scallops to the pan, along with any juices and cook on low heat until heated through.
  • Return the asparagus to the simmering water to heat through.
  • Season the sauce with salt and pepper.
  • Using tongs, transfer the asparagus to a large platter and spoon the scallops and sauce over it.
  • Top with proscuitto and serve.

1 bunch asparagus (ends trimmed)
4 ounces shallot boursin cheese
10 slices of imported prosciutto
2 tablespoons heavy cream (optional)

Steps:

  • Trim Asparagus ends and blanch in boiling salted water for 30-45 seconds and immediately place in an ice water bath.
  • Take half package of boursin cheese and 2 tablespoons of heavy cream (optional) and blend to a crumbly texture.
  • Start to roll:.
  • Place a piece of prosciutto on wax paper.
  • Add asparagus and top with cheese.

10 fresh asparagus spears (about 1/2 lb), trimmed and cut into 2-inch pieces (about 1 1/2 cups)

1 package (3 oz) thinly sliced prosciutto, cut into thin bite-size strips (about 1 cup)
1 cup whipping cream
3 tablespoons white wine or chicken broth
1/4 cup grated Romano cheese
1 teaspoon grated lemon peel

Steps:

  • Cook ravioli as directed on package, adding asparagus during last 4 minutes of cooking time; drain and rinse.
  • Meanwhile, in 1-quart saucepan, cook shallots and prosciutto over medium-high heat 2 to 3 minutes, stirring frequently, until prosciutto is slightly crisp. Remove from skillet; set aside. In same skillet, heat whipping cream and wine over medium heat 4 to 6 minutes, stirring constantly, until slightly thickened.

1 1/4 pounds thin asparagus spears, washed and dried
1 lemon, juiced
Extra-virgin olive oil, for drizzling
1/4 pound thinly sliced prosciutto di Parma

Steps:

  • For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
  • Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.
  • Remove bundles of several spears at a time from the pan and wrap with sliced prosciutto. Pile assembled bundles on a serving plate.

1 pound medium asparagus
3 tablespoons unsalted butter
2 shallots, minced
1/4 pound prosciutto, diced
3/4 cup heavy cream
1 tablespoon fresh tarragon leaves, chopped
Coarse sea salt and freshly ground pepper to taste
1 pound fettuccine
About 3/4 cup toasted bread crumbs
2 tablespoons grated Parmesan

Steps:

  • Trim the tough ends of the stalks from the asparagus. With a vegetable peeler, pare away any tough skin from the lower half of the stalk. Cut the asparagus into inch-and-a-half pieces on the diagonal.
  • Meanwhile, bring six quarts salted water to boil for the fettuccine. Preheat oven to 450 degrees. Steam the asparagus until barely tender. Set aside and keep warm.
  • Melt the butter in a saute pan. Add the shallots and the prosciutto and saute until the shallots are soft. Add the cream and bring to a simmer. Add the tarragon and cook five minutes, or until the sauce has thickened slightly. Season to taste with salt and freshly ground pepper. Add the asparagus and keep warm until the fettuccine is cooked.
  • Cook the fettuccine until al dente. Add it to the sauce and toss. Drain and transfer to a buttered baking dish and sprinkle with bread crumbs and cheese. Bake about 15 minutes or until the top is golden brown.

  • In a bowl mash the Boursin with a fork until it is smooth. Cut 1 slice of prosciutto lengthwise into 1-inch strips and spread each strip with about 1/2 teaspoon Boursin. Spread about 1/4 teaspoon mustard over the Boursin and wrap each strip in a spiral around an asparagus spear, trimming any excess. Make more hors d'oeuvres with the remaining prosciutto, Boursin, mustard, and asparagus spears in the same manner.
