1 cm ginger, finely chopped
1 teaspoon lime juice
1/2 red chile, deseeded and chopped
1 tablespoon water
1 kg asparagus, trimmed
1 tablespoon peanut oil
2 garlic cloves, chopped
1 tablespoon sesame seeds
1 1/2 tablespoons light soy sauce

Steps:

  • Preheat BBQ or chargrill.
  • Combine water, ginger, lime juice and chilli, stir well set aside.
  • Toss asparagus in oil and grill until charred on all sides.
  • Mix with garlic and sesame seeds.
  • Add soy and reserved ginger mixture. Serve.

1 lb fresh asparagus
1/2 cup orange juice
1 teaspoon orange zest, grated
1 1/2 teaspoons cornstarch
1 inch fresh gingerroot, peeled and grated
2 tablespoons slivered almonds, toasted

Steps:

  • Wash asparagus and snap off tough ends. Place in a steamer basket and steam until just tender, about 5 minutes.
  • In a small saucepan, stir together juice, zest and cornstarch.
  • Cook over medium-high heat until boiling. Let thicken and reduce while stirring with a whisk, about 3 minutes.
  • Remove from heat and add grated ginger.
  • Place asparagus on a serving plate and pour sauce over asparagus; top with toasted almonds.

I just love asparagus! Friends moved here (Florida) from the Dakotas and told me they picked it out of the ditches there!! How wonderful...I'd be wading through ditches everyday! I think its a "special" veggie, something I haven't ever seen grown here. This is a nice Asian themed asparagus salad. Chilling time is not included in prep and cooking time.....You will need to chill at least an hour and a half.

3/4 cup rice vinegar
1 1/2 tablespoons gingerroot, minced
2 tablespoons sugar
1 lb fresh asparagus
2 1/4 tablespoons vegetable oil
1 1/2 tablespoons dark sesame oil (reduce if you are not a fan of sesame oil)
1 garlic clove, minced
1 teaspoon soy sauce
1/2 teaspoon salt (optional)

Steps:

  • Combine the vinegar and gingerroot in a small saucepan; bring to a boil. Boil 7 minutes or until the liquid is reduced by half. Remove from the heat, and stir in the sugar. Set aside.
  • Snap off tough ends of the asparagus. If you want to, remove the scales from the sides of the asparagus stalk -- I don't.
  • Place the asparagus in a large skillet and add cold water to cover. Bring to a boil and immediately remove from heat. Plunge the asparagus into cold water (with ice) to stop the cooking process. Drain the water off the asparagus.
  • Arrange the asparagus on a serving platter.
  • Combine the vegetable oil and next 4 ingredients, stirring well; drizzle over the asparagus. Cover and chill at least 30 minutes before adding the vinegar mixture. One hour before serving, drizzle the vinegar mixture over the asparagus. Chill for one more hour.

3 tablespoons olive oil
1 tablespoon lime juice

  • Whisk all vinaigrette ingredients in a small jug.
  • Snap woody ends from asparagus and place in a steamer for 4-5 minutes until they are crisp tender.
  • Then plunge them into ice cold water to stop cooking process.

This is a great sauce for almost anything. It's also great on shrimp or chicken. You can strain the sauce and make it smoother. It's very tangy and goes great with earthy veggies.

FOR THE SAUCE
2 Tbsp each fresh lime juice and white wine vinegar
1 Tbsp minced shallots
2 tsp fresh chiles chopped red or green
1 tsp fresh grated ginger
1 stick cold butter cut into chunks
salt
ASPARAGUS
1 bunch fresh asparagus trimmed
salt

Steps:

  • 1. For the sauce Add the lime juice, vinegar, shallots, chilies and ginger into a saucepan. Bring to a boil and let reduce for about 3 minutes. Whisk in the butter 1 pat at a time until each is melted. Taste and adjust for salt. Set aside.
  • 2. For the Asparagus Bring a pan of water to a boil. Add salt and throw in the asparagus. Boil until desired doneness. About 3 to 5 minutes.

1 small lemon, zested and juiced
2 tablespoons coconut oil
1/2 teaspoon fennel seed
1/2 teaspoon mustard seeds
3 -4 garlic cloves, chopped in small pieces

1 -2 tablespoon freshly grated ginger

Steps:

  • Rinse and drain the asparagus spears, then chop into 1 inch pieces, making sure that the top inch of the spear isn't cut so that they retain their nice shape.

1 teaspoon fresh ginger, grated
1 garlic clove, finely minced
