1 pound asparagus, trimmed
1 tablespoon butter
¼ cup sliced onion
1 pinch onion salt, or to taste

Steps:

  • Melt 1 tablespoon butter in a large skillet over medium-high heat.
  • Cook and stir asparagus in melted butter until bright green, but still firm, 3 to 4 minutes.
  • Stir 1 tablespoon butter and onion into asparagus; sprinkle with onion salt.
  • Cook and stir until onion is slightly browned and asparagus are tender, 3 to 5 minutes.

1/4 cup extra-virgin olive oil
1 tablespoon whole-grain mustard
1 teaspoon prepared horseradish
Juice and zest of 1 lemon
Kosher salt and freshly ground black pepper
2 large bunches thick asparagus, trimmed
2 red endive, quartered
1 large yellow onion, cut into 1/2-inch-thick rings
Olive oil, for cooking
Fresh tarragon leaves, optional, for serving

Steps:

  • Set up a grill for even medium-high heat. If using a charcoal grill, build coals evenly along the bottom.
  • Whisk together the extra-virgin olive oil, mustard, horseradish, lemon juice and zest in a bowl. Season with salt and pepper. Set aside. Place the asparagus, endive and onions on a rimmed baking sheet and drizzle with the olive oil. Sprinkle with salt and pepper and toss to coat. Place on the grill and cook, turning once, until tender-crisp and lightly charred, 4 to 5 minutes. Serve drizzled with the dressing and topped with the tarragon leaves, if using.

1 tablespoon olive oil
1 bunch fresh asparagus
1 lemon, quartered
1/4 teaspoon salt
1 pinch ground black pepper
1 tablespoon yellow onion, minced
1 lemon, sliced thinly

Steps:

  • Cut 1 inch off of the bottom of the asparagus. Discard. Heat pan over medium heat. Add extra virgin olive oil. Add onion and cook for approximately 3 minutes or until onion starts to soften.
  • Place the remaining ingredients in a saucepan, except lemons. Squeeze quartered lemons into same saucepan and place lemon in as well. Fill pan with enough water to cover the asparagus half way and cover.
  • Cook at medium to high heat until the asparagus is bright green and tender (2-3 minutes). Place asparagus and onion on platter to serve. Garnish with sliced lemon.

Steps:

  • Wash the asparagus and trim off the ends. Cut the stalks into bite-sized pieces.
  • In large skillet, heat the olive oil over medium high heat. Add the asparagus, kosher salt, and fresh ground pepper. Cook, stirring occasionally, until the largest pieces are tender, about 5 to 8 minutes. This depends on the thickness and maturity of the asparagus, so it's different every time! Taste and remove when it's just tender and still bright green, but not crunchy (cook a minute longer if you need to).
  • Meanwhile, zest the lemon and juice it. When the asparagus is done, remove from heat and stir in lemon juice and lemon zest. (Optional: top with feta cheese crumbles or shredded Parmesan.)

1 1/2 to 2 pounds large asparagus
Olive oil as needed, about 2 tablespoons
Salt and freshly ground black pepper to taste
Juice of 3 lemons
2 tablespoons minced shallots or scallions
1/4 cup minced fresh parsley leaves

Steps:

  • Snap off the woody ends of the asparagus; most spears will break an inch or two from the bottom. Peel the stalks up to the flower bud. Meanwhile, start a charcoal fire or heat a gas grill; if you're cooking indoors, heat a cast-iron or other heavy skillet over medium-high heat until it smokes.
  • To grill the asparagus spears, toss them with about a tablespoon of oil, mixing with your hands until spears are coated. Season well with salt and pepper. Grill until tender and browned in spots, turning once or twice, in all 5 to 10 minutes.
  • To pan grill the asparagus, do not oil or season them. Just toss them in the hot skillet, and cook, turning the spears individually as they brown, until tender, 5 to 10 minutes. Remove as they finish, and season with salt and pepper.
  • Mix together the lemon juice and shallots, then stir in enough olive oil to add a little body and take the edge off the sharpness of the lemon; the mixture should still be strong. Season it well with salt and plenty of black pepper, and stir in the parsley. Serve the asparagus hot or at room temperature with grilled fish. Spoon the sauce over everything.

The menu they gave is Gefilte Fish (no recipe), Chicken Soup With Matzo Balls, Mixed Green Salad (no recipe), Stuffed Tarragon Roast Capon With Rich Pan Gravy, Matzo Walnut and Mushroom Stuffing, Roasted Tzimmes, Asparagus With Lemon and Mint, Chocolate-Almond Torte With Strawberry Sauce, and Assorted Macaroons. One of these days I may get this made but for safe keeping I'm saving it here.

  • Peel asparagus. Lay in a flameproof casserole dish and pour marinade over so asparagus is just covered with liquid (more water may be added if needed). 12 ounces pork tenderloin
1 teaspoon fish sauce
2 tablespoons fish sauce
1 teaspoon soy sauce
1/3 cup low sodium chicken broth
2 teaspoons lime juice
1 tablespoon light brown sugar
1 teaspoon cornstarch
2 medium garlic cloves, minced
1/4 cup minced lemongrass, from 2 stalks (trim all but bottom 3-4 inches, remove tough outer sheath, then cut finely)
3/4 teaspoon red pepper flakes
3 1/2 tablespoons peanut oil or 3 1/2 tablespoons vegetable oil
1 lb asparagus, cut on the diagonal into 2-inch pieces
1/4 cup water
1 large onion, cut into 1/4-to 3/8-inch wedges
2 -3 tablespoons chopped fresh Thai basil

Steps:

  • Freeze the tenderloin until firm, 20 to 30 minutes. Cut the tenderloin crosswise into 1/3-inch-thick medallions. Slice each medaillon into 1/3-inch-wide strips.
  • Combine the pork, 1 tsp fish sauce, and the soy sauce in a small bowl.
  • Whisk the remaining 2 tbsp fish sauce, the chicken broth, lime juice, brown sugar, and cornstarch in a measuring cup.
  • Combine garlic, lemon grass, red pepper flakes and 1 tbsp of the oil.
  • Heat 1 1/2 tsps oil in a nonstick 12-inch skillet or in a wok over high heat until smoking; add half of the pork to the skillet and cook, stirring occasionally and breaking up the clumps, until well browned, about 2 minutes. Transfer pork to a bowl. Repeat with an additional 1 1/2 tsps oil and the remaining pork.
  • Add 1 tbsp oil to the now-empty skillet or wok; add the asparagus and cook, stirring every 30 seconds, until lightly browned, about 2 minutes. Add the water, cover the pan, and lower the heat to medium. Steam the asparagus until tender-crisp, about 2 minutes; transfer the asparagus to the bowl with the pork.
  • Add the remaining 1 1/2 tsps oil to the skillet or wok; add the onion and cook, stirring occasionally, until beginning to brown and soften, about two minutes.
  • Clear the center of the skillet; add the garlic and lemon grass mixture to the clearing and cook, mashing the mixture with a spoon, until fragrant, about 1 minute, then stir the mixture into the onion. In this supremely springy recipe, thick asparagus stalks and thinly sliced leeks are glossed with olive oil and covered in salty capers. Everything is roasted in the same pan and emerges tender and golden-edged. Capers also make an appearance in the mustard sauce served alongside, which adds a tangy, mayonnaise-like richness. You can double the recipe, if you wish, though you may have to increase the roasting time by a few minutes to make up for a more-crowded pan. Serve this on its own as a first course, or as an accompaniment to roast chicken, braised meats or seared fish. Just don't use thin asparagus: It'll cook too quickly, before the leeks have a chance to turn golden. Stick with spears that are at least 1/2 inch in diameter.

  • Drain the asparagus and pat very dry with paper towels.
  • Heat 3 tablespoons oil in a skillet over medium heat.
  • Add in the chopped green onions, shallots and sugar; saute until the onions and shallots are tender (about 5 minutes).
  • Add in garlic; saute 2 minutes.
  • Add in the reserved 1 cup broth, 1 tablespoons oil, Dijon mustard, lemon juice, thyme and lemon peel; simmer until slightly thickened and the liquid is reduced to about 1-1/4 cups (about 5 minutes).
  • Season with salt and pepper.
  • Cool to room temperature.
  • Arrange the asparagus on a platter.
  • Spoon the prepared lemon sauce over, then sprinkle with more chopped green onions.

Asparagus and onions are steamed until tender, then quickly browned in butter with garlic.

¼ cup water
½ pound fresh asparagus, trimmed
½ cup diced white onion
3 tablespoons butter
salt and black pepper to taste
2 cloves garlic, thinly sliced

Steps:

  • Pour water into a skillet. Place asparagus and onion in the skillet. Bring water to a boil over medium heat. Cover skillet and steam asparagus and onion 2 to 5 minutes, just until slightly tender. Add a few tablespoons of extra water, if needed, to maintain steam.
  • When water has steamed off, immediately place butter in skillet. Continue cooking until onions and asparagus are lightly browned. Mix in garlic, and continue cooking about 30 seconds. Season with salt and pepper to taste.
