ROASTED BALSAMIC GARLIC ASPARAGUS APPETIZER
After preparing AngelaTN's roasted asparagus for dinner recently, I just couldn't get enough of them! I wanted to make them again, but the event I was going to was a non-heating kind of thing, so I decided I'd put together an adapted version that would work well chilled or room temperature, as an appetizer. Here's what I came up with, and it's delicious! I made them as part of an anti pasto tray. Prep time does not include chilling.

Steps:
- Preheat your oven to 400 degrees F.
- Trim the asparagus: rinse the asparagus, cut about an inch off the ends, then use a vegetable peeler to take the outer layer off another inch of the remaining fibrous ends (easiest is to lay the spear on a flat surface then use peeler to gently take off the layer - careful, or you'll remove too much).
- Place the trimmed asparagus in a single layer on a non-stick baking sheet, then spray with an olive oil mister or drizzle evenly with olive oil (or spray with pan spray).
- Season with the sea salt and the freshly ground pepper.
- Place in oven and roast for 8 minutes (don't overcook).
- Meanwhile, in a small saucepan over very low heat melt the butter and extra virgin olive oil.
- Add the sliced garlic and simmer (again, over very low heat) for 5 minutes - careful not to burn.
- Remove from heat and add the soy sauce and balsamic.
- When asparagus is done, remove from the oven and place in a container which has an airtight cover.
- Place the garlic from the balsamic mixture on the asparagus; whisk the balsamic mixture well (I use a pigtail whisk) and pour it over the roasted asparagus.
- Cover tightly, shake, and place in refrigerator to chill (please note that the asparagus is still hot in the container, and that covering them and adding the sauce at this point will continue to steam them a bit for a few minutes).
- Chill for at least 4 hours before serving, the place attractively on serving platter.
- Goes well as part of an anti pasto course!
- Note: although I used these as an appetizer/snack, they could also work quite well as a side dish.
ASPARAGUS APPETIZER ROLL-UPS
This is a wonderful warm appetizer for springtime entertaining. It's perfect for showers and also makes a tasty first course for Easter dinner.

- In a small bowl, combine the cream cheese, bacon and green onion. Flatten bread slices with a rolling pin; spread tops with cream cheese mixture. Trim asparagus 2 in. longer than bread. Place two spears on each slice; roll up bread and place seam side down on a greased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake at 400° for 10-12 minutes or until lightly browned. Serve immediately.

Can be a bit messy to make, but well worth the effort. Never have made these and not wished I had more to serve. They really do go quickly

- Cut bacon in half strips.
- Fry in a pan until just beneath Crisp Not to limp.
- Lay on paper towels to degrease the Bacon.
- Cut Asparagus into 5/6 inch lengths. Pick thin Stems not thick. Steam the Asparagus in a Steamer until Tender.
- Cut cheese into thin strips about 5x1/2 inches long.
- Melt Butter.
- White bread. Cut off the crust, and roll out thinly with a rolling pin.
- Lay Asparagus, bacon and cheese on a diagonal into the bread.
- Roll the bread upward and seal with butter.
- spread Butter on top so to brown.
- Put into Broiler until Bread is Browned.
- Serve.
ASPARAGUS SPEARS WITH SESAME

- Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
- Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
- Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
- Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.
PROSCIUTTO-WRAPPED ASPARAGUS WITH TRUFFLE BUTTER

- Prepare a large bowl of ice and cold water. Trim asparagus to 5 inches long, then steam in a steamer over boiling water until crisp-tender, about 4 minutes. Transfer to cold water to stop cooking. Drain and pat dry. Season with salt.
- Stir oil into butter until incorporated.
- Cut prosciutto slices into roughly 3- by 3-inch pieces, then thinly coat with truffle butter and place an asparagus stalk at one edge. Roll up, leaving tip and end visible. Repeat with remaining asparagus and prosciutto.
ASPARAGUS PARMESAN PASTRY ROLLS

- Unfold pastry sheets and halve each parallel to fold lines. Roll out 1 half (keep remaining 3 halves chilled, covered with plastic wrap) into a 20- by 7-inch rectangle with a floured rolling pin on a well-floured surface. (Pastry will shrink slightly after rolling.) Brush off excess flour from work surface and both sides of pastry, then trim all edges with a sharp knife to make even. Cut crosswise into 6 (6 1/2- by 3-inch) rectangles.
- Brush rectangles with some egg wash and sprinkle each evenly with 1 packed tablespoon cheese, leaving a 1/2-inch border on long sides. Lay an asparagus stalk along 1 long side, then roll up asparagus in pastry, pressing seam to seal. Make more rolls with remaining pastry, cheese, and asparagus.
- Arrange rolls, seam sides down, about 1 inch apart on lightly oiled baking sheets and brush top and sides lightly with egg wash. Chill rolls until pastry is firm, at least 15 minutes.
- Preheat oven to 400°F.
- Bake rolls in batches in middle of oven until puffed and golden, about 16 minutes.
- Transfer with a metal spatula to a cutting board and trim about 1/2 inch from ends. Halve each roll crosswise, then, starting about 1/2 inch from either end, cut each section diagonally in half (see photo, opposite). Stand asparagus rolls on end, 2 by 2 on platters, and drizzle each with 1 drop of truffle oil (if using). Serve warm.

- Preheat oven to 425 degrees.
- Wrap each Asparagus Tip with a prosciutto strip.
- Set aside until needed.
- Roll out puff pastry sheets on a lightly floured board.
- Brush the rolled out puff pastry with the mustard.
- Cut the prepared pastry into 2" squares.
- Place the reserved prosciutto & asparagus tip diagonally on each square.
- Roll the pastry around the asparagus,leaving the ends of the asparagus uncovered.
- Moisten with water to seal.
- Bake 1" apart.
- Bake 15- 20 minutes- serve hot.

- Trim the asparagus stalks so that the spears are 5 inches long. In a deep skillet bring 1 1/2 inches salted water to a boil and cook the asparagus until they are crisp-tender, about 2 minutes. In a colander drain the asparagus and rinse under cold water. Drain the asparagus well on paper towels.
- In a bowl mash the Boursin with a fork until it is smooth. Cut 1 slice of prosciutto lengthwise into 1-inch strips and spread each strip with about 1/2 teaspoon Boursin. Spread about 1/4 teaspoon mustard over the Boursin and wrap each strip in a spiral around an asparagus spear, trimming any excess. Make more hors d'oeuvres with the remaining prosciutto, Boursin, mustard, and asparagus spears in the same manner.
