ASPARAGUS ROLL-UPS
These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

Steps:
- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

ASPARAGUS APPETIZERS
My mother-in-law used to make these at her cocktail parties. There were never any left. I use them even as an appetizer when entertaining just one other couple. The nice thing is that you can take out just the amount you want. Although, be careful... I have one friend that could eat them all herself! Enjoy!

Steps:
- 1. Mix together: cream cheese, lemon zest and bacon.
- 2. Cut crusts from 20 slices of Pepperidge Farm bread; roll flat.
- 3. Spread cheese mixture on bread. Lay stalk of asparagus on each and roll up. Secure with toothpick if necessary.
- 4. Brush top with melted butter and sprinkle with parmesan cheese. Put in freezer until frozen.
- 5. When using, partially thaw. Slice each roll into 3 equal pieces. Bake at 375 degrees 15 minutes.
- 6. Serve WARM.

- In a small bowl, combine the cream cheese, bacon and green onion. Flatten bread slices with a rolling pin; spread tops with cream cheese mixture. Trim asparagus 2 in. longer than bread. Place two spears on each slice; roll up bread and place seam side down on a greased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake at 400° for 10-12 minutes or until lightly browned. Serve immediately.

DELICIOUS ASPARAGUS ROLL UPS
These roll-ups are simply delicious! they make a great finger food for parties and gatherings and are quite simple to prepare, if you are not a lover of blue cheese you may omit, you may also add in some finely crumbled bacon to the cream cheese mixture :)

- Set oven to 400°F.
- Grease a baking sheet.
- Flatten bread with a rolling pin.
- In a bowl combine the cream cheese with blue cheese, garlic and green onions.
- Spread about 1 tablespoon of the cream cheese mixture on each slice of bread.
- Top with asparagus spear then roll up tightly.

- Preheat oven to 400 degrees F (200 degrees C).
- Grease a baking sheet.
- Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- When bacon is cool, crumble and set aside in a bowl.
- Place asparagus spears into a large skillet and pour in about 1 inch of water. Place over medium heat, cover the skillet, and simmer asparagus until bright green and slightly tender, about 5 minutes. Remove asparagus and set aside.
- Place cream cheese and chives into the bowl with bacon and stir to evenly combine.
- Roll each bread slice with a rolling pin on a work surface until the slices are thin and flat.
- Spread cream cheese mixture evenly over each slice of bread.
- Center 2 asparagus spears on a bread slice, and roll the slice around the asparagus into a tidy and compact cylinder. Place seam side down onto the prepared baking sheet. Repeat with remaining ingredients.
- Brush each roll with melted butter and sprinkle each with about 1 1/2 teaspoon Parmesan cheese.
- Bake in the preheated oven until lightly golden brown and hot, 10 to 12 minutes.

CHEESE AND ASPARAGUS ROLLS
This is a recipe from a cooking class taught by Doris Simms over 20 years ago, and it is still a favourite of ours. Doris shared many wonderful recipes. This is untested with low fat ingredients, but I expect that by using them the bread would become too moist and not brown and crisp when baked, and thus would not be as delicious, or beautiful to behold.

Steps:
- Trim crusts from the bread.
- Sprinkle one side of bread with poppy seeds.
- Flatten with a rolling pin.
- Turn over bread slice and roll lightly again.
- Beat cream cheese together with mayonnaise and egg yolk.
- Beat until smooth then blend in grated cheese and lemon rind.
- Spread cheese mixture over plain sides of bread slices.
- Place 1 or 2 asparagus spears on each slice.
- Roll up, jelly roll fashion, and cut rolls in half. For a coctail party cut into thirds.
- Brush with melted butter.
- Place rolls, seam side down on baking sheet and bake in 400 degree oven for 10 minutes.
- If making ahead of time, cover the rolls with plastic wrap touching the surface, then cover the container.
