BACON WRAPPED ASPARAGUS

1 1/2 pounds fresh asparagus, ends trimmed
8 slices bacon
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon mustard powder
1/2 teaspoon onion powder
Pinch freshly grated nutmeg
1 cup whole milk
1/2 cup grated Gruyere
1/2 cup crispy fried onions

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Divide the asparagus spears into 8 bundles. Wrap each bundle in the middle of the spears with one piece of bacon. Place the bundles seam-side down on the prepared baking sheet. Drizzle with the olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake until the bacon is fully cooked, about 25 minutes.
  • Melt the butter in a medium saucepan over medium-high heat. Sprinkle the flour over the butter and stir. Cook until the mixture is golden brown and has a nutty aroma, about 1 minute. Stir in the mustard powder, onion powder, nutmeg and remaining 1/2 teaspoon each salt and pepper. Slowly whisk in the milk a little at a time and continue cooking and whisking until the mixture thickens, 2 to 3 minutes. Stir in the cheese until melted, then take off the heat.
  • Carefully transfer the bacon bundles to a serving platter. Pour the cheese sauce over the asparagus and sprinkle with the fried onions. Serve warm.

These roll-ups are simply delicious! they make a great finger food for parties and gatherings and are quite simple to prepare, if you are not a lover of blue cheese you may omit, you may also add in some finely crumbled bacon to the cream cheese mixture :)

16 large canned asparagus spears (use the largest spears as possible)
16 slices whole wheat sandwich bread, crusts removed
1 (8 ounce) package cream cheese, softened
2 -3 tablespoons crumbled blue cheese
1 garlic clove, minced
1 green onion, finely minced
1/4 cup butter or 1/4 cup margarine, melted
grated parmesan cheese (to taste)

Steps:

  • Set oven to 400°F.
  • Grease a baking sheet.
  • Flatten bread with a rolling pin.
  • In a bowl combine the cream cheese with blue cheese, garlic and green onions.
  • Spread about 1 tablespoon of the cream cheese mixture on each slice of bread.
  • Top with asparagus spear then roll up tightly.
  • Place seam side down on a greased baking sheet.
  • Brush with butter and sprinkle with parmesan cheese.
  • Cut roll-ups in half.
  • Bake at 400°F for 10-12 minutes or until lightly browned.

6 slices bacon
24 spears fresh asparagus, trimmed
1 (8 ounce) package cream cheese, softened
2 tablespoons finely chopped chives
12 slices white bread, crusts removed
2 tablespoons butter, melted
3 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Grease a baking sheet.
  • Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • When bacon is cool, crumble and set aside in a bowl.
  • Place asparagus spears into a large skillet and pour in about 1 inch of water. Place over medium heat, cover the skillet, and simmer asparagus until bright green and slightly tender, about 5 minutes. Remove asparagus and set aside.
  • Place cream cheese and chives into the bowl with bacon and stir to evenly combine.
  • Roll each bread slice with a rolling pin on a work surface until the slices are thin and flat.
  • Spread cream cheese mixture evenly over each slice of bread.
  • Center 2 asparagus spears on a bread slice, and roll the slice around the asparagus into a tidy and compact cylinder. Place seam side down onto the prepared baking sheet. Repeat with remaining ingredients.
  • Brush each roll with melted butter and sprinkle each with about 1 1/2 teaspoon Parmesan cheese.
  • Bake in the preheated oven until lightly golden brown and hot, 10 to 12 minutes.

16 slices sandwich bread, crusts removed
1 package (8 ounces) cream cheese, softened

1/3 cup finely chopped onion
1 tablespoon butter
3 cups cubed day-old bread
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg, lightly beaten
10 bacon strips

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. 1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

2 pounds fresh asparagus, ends trimmed
12 slices bacon
1/2 cup light brown sugar
1/2 cup (1 stick) butter
1 tablespoon soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

1 loaf bread
1 (10 1/2 ounce) can cream of mushroom soup (cream of chicken soup also works well)

Steps:

  • Cut crusts off bread slices and then cut all slices in half.
  • Cut all slices of bacon into thirds.
  • Spread all of the crustless bread halves with cream of mushroom soup. Take 1/3 of slice of bacon and lay the bread slice on top of it, and roll up. Secure with a toothpick. Place on cookie sheet (that has lip on it) Continue until all bread is used up.
  • You can freeze them at this point or bake in the oven on 425 degrees until browned--approximately 20 minutes (turn 1/2 way through baking). (Do not broil as the bread will burn before the bacon is sufficiently cooked).
  • Note: If you freeze them, you don't have to defrost them before cooking.

A do-ahead appetizer. You can 'wow' them with this one. I found this at Southern Living and this is the recipe as written. I like to use about half of the amount of blue cheese called for and I just use a 'swipe' on the bread.. not 2 tablespoons full.

24 fresh asparagus spears
1 (8 ounce) package cream cheese, softened
1 (4 ounce) package crumbled blue cheese
2 tablespoons mayonnaise
1 tablespoon chopped fresh chives
12 slices bread, crusts trimmed off
12 slices thinly sliced deli ham
1/4 cup butter or 1/4 cup margarine, melted
paprika
green onion, curl
red bell pepper

Steps:

  • Snap off tough ends of asparagus, and remove scales from stalks with a vegetable peeler, if desired.
  • Arrange asparagus in a steamer basket over boiling water.
  • Cover and steam 4 to 6 minutes or until crisp-tender.
  • Remove from steamer, and cool on paper towels.
  • Stir together cream cheese and next 3 ingredients.
  • Roll each bread slice with a rolling pin to flatten.
  • Spread 1 side of each slice with 2 tablespoons cream cheese mixture; top each with 1 ham slice.
  • Place 2 asparagus spears, tips pointed toward opposite ends, on one end of each bread slice; roll up, and place, seam side down, on a greased baking sheet.
  • Brush with butter; sprinkle with paprika.
  • Bake at 400°F for 12-15 minutes or until golden.
  • Serve immediately.
  • Garnish, if desired.
  • Note: Freeze unbaked roll ups up to 1 month in an airtight container.
  • Thaw in refrigerator, and bake as directed.
  • Yield: 12 appetizer servings.

1 cup monterey jack cheese, grated
1/4 cup bacon bits

  • Preheat oven to 400*.
  • Break off tough ends of the asparagus leaving just the tender tips. Steam for several minutes until cooked crisp tender.
  • Open crescent roll dough and separate at the seams. Sprinkle some cheese, bacon bits and green onion on each roll followed by an asparagus spear.

This recipe is from a cookbook that I received many years ago. I love it because I can sneak in a vegetable that I really like, but my husband hates! I don't even go by the recipe anymore because I have to add more bacon to satisfy his food weakness and "hide" the asparagus!

1 package(s) whipped cream cheese
12 - fresh asparagus spears (or canned spears)
- crumbled bacon bits (if you use store bought, use real bacon bits, not the crispy salad topping stuff)
- melted butter
- parmesan cheese

Steps:

  • Cook the asparagus spears, drain and cool (I suggest steaming-it's faster).
  • Meanwhile, use a rolling pin to flatten out the bread-cut off the crusts after you have rolled over the bread-this gives an uptown finish to the rollups.
  • Spread the cream cheese over the bread slices, sprinkle bacon bits over this, add the asparagus spear and roll jellyroll style. Cut each slice in half, place on cookie sheet, brush each roll with butter and sprinkle the parmesan cheese on top.
  • Bake in preheated 400 degree oven until the parmesan has a golden glow. This should take about 5-8 minutes, but watch closely so the rolls do not get "overglowed". You could also broil 6 inches from broiler until lightly toasted.
  • BONUS: These rolls can be made up early in the day (or even the night before) and refrigerated until ready to pop in the oven.
  • NOTE: Although you can use canned asparagus, I really don't recommend it. It's mushy and an unappetizing color. I like to buy bacon crumbles because it's cheaper for me than buying bacon, cooking it and crumbling it (also a time saver!)

8 boneless skinless chicken breast halves, pounded thin
1 lb fresh asparagus, trimmed and washed
1/8 cup flour
2 garlic cloves, minced
1 teaspoon salt, divided
1 teaspoon leaves thyme, divided
1 teaspoon paprika
2 cups white onions, sliced 1/4 thick
1 (15 ounce) can diced tomatoes, drained
1 large tomatoes, sliced 1/2 thick
1/2 cup chicken broth

Steps:

  • Season pounded chicken breasts lightly with salt and freshly ground pepper.
  • Place 2-3 asparagus spears on each chicken breast half.
  • Roll up tightly; secure with toothpicks, if necessary.
  • Set aside.
  • Combine flour, garlic, 1/2 tsp salt, 1/2 tsp thyme and paprika.
  • Roll chicken in flour mixture.
  • Place onions and diced tomatoes on bottom of 13x9" pan, reserving 8 slices of onion for top.
  • Place chicken breasts over vegetables; top with reserved onion and tomato slices.
  • Combine broth with remaining salt and thyme; pour around chicken.
  • Cover pan loosely with foil and bake at 350 degrees for 30 minutes.
  • Uncover and bake until tender, about 10-15 minutes.
