Asian 5 Spice Barbecued Pork Tenderloins with Mango Citrus Salsa and Scallion Frankie Wraps image

2 to 2 1/2 pounds pork tenderloins, trimmed of fat
Steak seasoning blend or salt and freshly ground black pepper
1/4 cup dark brown sugar
1 1/2 teaspoons Chinese 5 spice powder (found in spice section or Asian foods section)
1 tablespoon vegetable oil
1/3 cup Hoisin prepared Chinese barbecue sauce
1 navel orange, zested and juiced
1 teaspoon dark sesame oil
2 teaspoons toasted sesame seeds, for garnish
2 tablespoons chopped cilantro or chives, for garnish
2 ripe mangoes, peeled and pitted, diced
1 red bell pepper, seeded and chopped
1 jalapeno, seeded and chopped
1/2 red onion, chopped
1 ripe lime, juiced
20 leaves basil, shredded
Coarse salt
3 eggs, beaten
1/4 cup water, eyeball it
2 scallions, thinly sliced
Vegetable oil, 1 teaspoon per wrap
10 flour tortillas, 8 inches

Steps:

  • Preheat oven to 450 degrees F.
  • Coat tenderloins in steak seasoning or season with salt and pepper. Combine brown sugar and 5 spice powder. Rub sugar and spice over pork. Brush baking dish or broiler pan with oil. Place pork in oven and bake 10 minutes. Combine barbecue sauce with orange zest and juice and sesame oil. Baste meat liberally with sauce and roast meat 15 minutes longer. Remove meat from oven and transfer to a serving platter. Coat meat with sesame and cilantro or chives for color.
  • Combine mangoes, bell pepper, jalapeno, onion, lime and basil in a bowl. Season with salt, to your taste.
  • To make Frankie wraps, heat a nonstick skillet over medium high heat. Beat eggs with water and scallions. Drizzle 1 teaspoon oil into hot skillet and pour in a little of the egg mixture. Add 1 tortilla, cook 30 seconds, then flip. Cook 15 seconds, then flip tortilla back and cook 15 seconds longer. Remove Frankie wrap from the pan and repeat with remaining ingredients. Pile tortillas in foil to keep warm.
  • To assemble, thinly slice tenderloins and pile meat and salsa at the edge of a Frankie wrap. Tuck up bottoms and edges and roll.

crisco original nonstick cooking spray
3 tablespoons crisco vegetable oil
2 (1 lb) pork tenderloin
salt and pepper
1/2 cup chicken broth
1/2 cup jif creamy peanut butter
1/2 cup hoisin sauce
2 teaspoons fresh ginger, minced
2 teaspoons garlic, minced
chives (for garnish) or scallion top, sliced (for garnish)

Steps:

  • Preheat oven to 375°F.
  • Spray a shallow roasting pan with no-stick cooking spray. Heat oil in a large skillet over medium-high heat. Season tenderloins liberally with salt and pepper. Brown each tenderloin on all sides in skillet.
  • Transfer meat to prepared roasting pan. Roast tenderloins for 15 minutes, or until instant-read thermometer reaches 160°F
  • Transfer roasted meat to cutting board. Tent with foil. Allow meat to rest 10 minutes. Slice into medallions and serve with Asian Peanut Sauce and garnished with sliced chives or scallions.
  • For Peanut Sauce: Whisk chicken broth, peanut butter, and hoisin sauce together in a small saucepan over medium heat, until smooth. Stir in ginger and garlic. Remove from heat.

1/2 cup olive oil
1/3 cup lime juice
2 tablespoons minced garlic
2 tablespoons minced fresh gingerroot
2 tablespoons soy sauce
2 teaspoons Dijon mustard
Dash cayenne pepper
4 pork tenderloins (3/4 pound each)

Steps:

  • For marinade, in a blender, combine the first seven ingredients; cover and process until blended. Divide marinade between two large resealable plastic bags; add two tenderloins to each bag. Seal bags and turn to coat; refrigerate for at least 4 hours or overnight., Prepare grill for indirect heat. Drain pork, discarding marinade in bags. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack., Grill pork, covered, over indirect medium heat for 20-30 minutes or until a thermometer reads 145°. Let stand 10 minutes before slicing. Freeze option: Freeze uncooked pork in bag with marinade. To use, completely thaw in refrigerator. Grill as directed.

Traeger Sweet Rub
2 pork tenderloins, each 12 to 14 ounces - silverskin removed
Traeger Mandarin Glaze
1/2 to a whole chipotle in adobo sauce
SLAW:
1/2 head of cabbage, slivered (I used purple but savoy would also work great)
Kosher salt
1 English cucumber, diced
2 thinly sliced scallions
1 red bell pepper
1 carrot, grated
2 tablespoons freshly chopped cilantro
1 tablespoon grated ginger
1/4 c. seasoned rice vinegar
1 tablespoon honey (more or less to taste)
1 tablespoon sesame oil
Juice of 1 lime
1/4-1/2 cup canola oil
Toasted sesame seeds

Steps:

  • Combine about half of the bottle of Mandarin Glaze with the diced chipotle and about 1/2 teaspoon of the adobo sauce in the can. The Mandarin Glaze already has a healthy spice to it so you may want to start by adding 1/2 of a diced chipotle and then taste and add more chipotle or adobo sauce to achieve that perfect heat and smoky flavor. Brush the glaze on the pork tenderloins for the last 2-5 minutes of cooking. SLAW This spicy-sweet pork pairs perfectly with a tangy asian slaw, which is easy to whip up while that pork is grillin' away to tender perfection. Start by degorging the slivered cabbage. Degorging is the process of drawing moisture from vegetables. This will make the cabbage softer and help remove any bitterness. Simply put the cabbage slivers in a colander with a generous few pinches of kosher salt. Let it sit in the sink or over a bowl (it will release a good amount of water) for about 15 minutes. Rinse and drain the cabbage and squeeze out any excess water. Put the rinsed cabbage in a bowl along with the diced English cucumber (English cucumbers are great because the skin is soft enough that you don't have to bother with peeling them), grated carrot, sliced scallions, diced red bell pepper and chopped fresh cilantro. Toss the vegetables together. Make the dressing by whisking together the seasoned rice vinegar, grated ginger, honey, sesame oil, and lime juice. If you don't have a juicer, a hand held juicer like this one (below) is a hand-saver! Especially when it comes to juicing smaller fruits like limes. They're also easier to juice if you heat them in the microwave for a few seconds and put pressure on them with your palm as you roll them on the counter before slicing them. Pour the dressing over the top of the vegetables and gently toss. Top with some toasted sesame seeds.
