ASIAN LETTUCE WRAPS
Healthy Asian lettuce wraps with ground chicken or ground turkey, green onions, and fresh veggies. Easy to make and better than PF Chang's!

Steps:
- Lightly coat a 5-quart or larger slow cooker with nonstick spray. In a small bowl, stir together the hoisin, soy sauce, rice vinegar, and sesame oil. Set aside.
- Heat the olive oil in a large skillet over medium high. Add the chicken and brown the meat, breaking it into small pieces. Continue cooking until no longer pink, about 4 to 6 minutes. Stir in the white and light green parts of the green onions, ginger, and garlic. Cook 30 additional seconds.
- Transfer the meat mixture to the slow cooker. Stir in the chopped mushrooms, carrots, red pepper flakes, and sauce. Cover and cook on LOW for 2 to 3 hours until the mixture is thickened and the chicken is ultra tender. (Do not be tempted to cook on HIGH, as the chicken will become tough.) Stir in the water chestnuts and green parts of the green onions.
- To serve, separate the butter lettuce leaves and fill with the chicken mixture. Enjoy hot.

Steps:
- Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
- Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

You will love these!... The delicious filling is wrapped in a large piece of crispy lettuce. I have even made these with leftover cooked rice added into the meat filling.

Steps:
- In a skillet cook the ground chicken or turkey in 1 teaspoon oil with the chili flakes (if using) garlic, ginger and mushrooms until the meat is no longer pink (about 5 minutes).
- Add in the water chestnuts, teryaki sauce, peanut butter, sesame oil, rice vinegar and hoisin sauce; cook for about 3-4 minutes, stirring constantly.
- Add in the chopped green onions; cook for about 1 minute.
- Season the mixture with salt and pepper.
- Spoon the mixture between large lettuce leaves; roll up tighly.
- Serve with hoisin sauce on the side.

This one came from the back of a teriyaki sauce bottle. It's easy, a great low carb appetizer or main dish paired with a salad. And can be altered for a more filling dish by omitting the lettuce and using flour tortillas instead!

Steps:
- Whisk together water and cornstarch in large mixing bowl until smooth.
- Stir in teriyaki sauce.
- Add chicken and water chestnuts.
- Mix to coat.
- Marinate for 30 minutes.
- Cook and stir in small batches in hot oil in a wok or large skillet until no longer pink.
- Serve with rice noodles, shredded carrots and lettuce leaves or flour tortillas.

For the ground chicken or turkey filling:
- 1 pound ground chicken or turkey
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/2 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons water
For the lettuce wraps:
- 1 head of iceberg lettuce, washed and dried
- 1 cup carrots, grated
- 1 cup cucumber, finely chopped
- 1/2 cup green onions, sliced thinly
- 1/4 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- Lime wedges for serving
Instructions
For the ground chicken or turkey filling:
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the ground chicken or turkey and cook, stirring frequently, until browned and cooked through, around 8-10 minutes.
- Add the onion, garlic, and ginger to the skillet and sauté for 1-2 minutes or until fragrant.
- Add hoisin sauce, soy sauce, rice vinegar, sesame oil, red pepper flakes, salt, black pepper, and water to the skillet. Stir thoroughly.
- Let everything cook for another 3-4 minutes or until the sauce has thickened and coats the chicken or turkey completely.
- Remove from heat and let cool for 5-10 minutes before assembling the lettuce wraps.
For the lettuce wraps:
- Separate the leaves of the iceberg lettuce and place them in a bowl of cold water. Let soak for 5-10 minutes to allow the leaves to become more pliable.
- Drain the water and pat the leaves dry with a paper towel or clean kitchen towel.
- Place a spoonful of the ground chicken or turkey filling on the center of each lettuce leaf.
- Top the filling with grated carrots, chopped cucumber, sliced green onions, chopped cilantro, and chopped peanuts. You can adjust the ingredients according to your liking.
- Serve with a wedge of lime and enjoy!
