ASIAN CUCUMBER AND SESAME SALAD

Asian Cucumber and Sesame Salad image

I am still trying to find a recipe that comes close to the Shanghai Cucumber dish at PF Chang's. I just found this on another website and here is what the chef had to say: "I am experimenting with cucumbers since I ate this cucumber thing at PF Chang's. This one is better than the first one and as close as I have gotten to PF Chang's cucumber appetizer. When you have drained the sauce that they are marinating in, try to pour some of the sauce over brown rice. It is really good!"

CUCUMBER AND ASIAN PEAR MARINATED SALAD

CUCUMBER AND ASIAN PEAR MARINATED SALAD image

Categories     Pear

Number Of Ingredients 7

2 large cucumber
1 medium to large nashi or Asian pear
1 teaspoon salt, divided
1/2 tablespoon light (usukuchi) soy sauce (see soy sauce basics) - or use any soy sauce you have instead
6 tablespoons rice vinegar or mild apple cider vinegar
1 tablespoon sugar or equivalent sugar substitute
1/3 teaspoon dried hot red chili pepper flakes, or to taste (or use ichimi togarashi instead)

Steps:

  • Slice the cucumbers in half lenghwise, and scoop out the seeds with a spoon. Slice the halves again into half, so you end up with quarters. Cut up the cucumber into chunks about 3/4 cm / 1/2 inch thick (no need to be too precise here; just chop away roughly). Peel, quarter and core the nashi pear. Slice fairly thinly. Combine the cucumber and pear in a large bowl and sprinkle with 1/2 teaspoon salt. Mix well and set aside. In a small bowl, combine the rest of the salt, soy sauce, vinegar, sugar and chili pepper flakes. Stir well but don't worry if the sugar and salt don't melt totally - they will melt once you mix this with the vegetables. Put the combined sauce in the large bowl with the cucumber and pear, scraping out any unmelted sugar and salt. Mix very well. Cover, and let rest for at least an hour or overnight in the refrigerator. It will keep tightly covered for a week. If using in a bento, you may want to put it in a leakproof container if you add some of the marinating sauce. This goes well with a Japanese-style or not-so-Japanese style bento.

Asian cuisine is known for its unique flavors, combinations, and textures that will give your taste buds a burst of excitement. One of the most popular salads in Asian cuisine is the cucumber salad which has numerous variations depending on the country and culture. Asian cucumber salads can be found in the menus of Japanese, Thai, Korean, Chinese, and Vietnamese cuisines.

What makes these cucumber salads distinct from the classic European cucumber salad is the use of different fruits, vegetables, herbs, and spices. In this article, we'll look at the different Asian cucumber salad recipes without the actual recipes. Keep on reading to explore more about these delicious and healthy salads.

Japanese Cucumber Salad

Japan is known for its attention to detail in every aspect of life – including cooking. The Japanese cucumber salad, also known as sunomono, is known for its delicate flavors and simple ingredients that enhance the refreshing taste of the cucumbers. The salad often includes sesame seeds, ginger, rice vinegar, and soy sauce, creating a light and healthy salad that is perfect for any meal.

Korean Cucumber Salad

Korean cuisine is famous for its spicy dishes, but their cucumber salad is quite different. The Korean cucumber salad usually has a sour taste that comes from vinegar or lemon juice. It also includes hot red pepper paste and garlic which gives it a spicy and pungent taste. The salad is usually served as a side dish (banchan) and is perfect for balancing the spiciness of other dishes in a meal.

Thai Cucumber Salad

Thai cuisine is one of the most flavorful and exotic cuisines in the world. Thai cucumber salad usually includes cilantro, peanuts, fish sauce, and lime juice which gives it a tangy taste with a hint of saltiness. The salad is often topped with thinly sliced red pepper or red onion. This sweet and sour salad is perfect for adding a refreshing touch to spicier Thai dishes.

Chinese Cucumber Salad

Chinese cuisine is known for its complexity, and their cucumber salad is no exception. The Chinese cucumber salad often includes soy sauce, rice vinegar, garlic, sesame oil, and chili paste. It usually has a strong umami (savory) taste with a hint of spiciness. The salad is perfect for balancing heavier Chinese dishes and adding a refreshing taste to any meal.

Vietnamese Cucumber Salad

Vietnamese cuisine is another cuisine that is known for its healthy and fresh ingredients, and their cucumber salad is no exception. The Vietnamese cucumber salad usually includes rice vinegar, fish sauce, sugar, garlic, and cilantro. It has a sweet, salty, and sour taste that is perfect for adding freshness to any dish. The salad is usually topped with peanuts or fried shallots which adds a crunch to the dish.

Conclusion

In conclusion, Asian cucumber salad recipes are a great way to add freshness, crunch, and a burst of flavors to any meal. Each country and culture has its unique take on the classic cucumber salad, and they all have something in common – they're healthy, delicious, and easy to make. Whether you're a fan of Japanese delicate flavors, Korean pungent tastes, Thai sweet and sour dishes, Chinese umami flavors, or Vietnamese freshness, there's a cucumber salad for you.

Asian cuisine has a wide range of dishes that are not only healthy but also extremely delicious. One such dish is the Asian Cucumber Salad. This refreshing salad is perfect for a hot summer day and will complement any meal. Whether it's a BBQ, potluck, or a family dinner, the Asian Cucumber Salad is sure to be a hit. If you're looking to make this dish, here are some valuable tips to keep in mind:

1. Choose the Right Cucumbers:

The first thing to keep in mind when making an Asian Cucumber Salad is to choose the right cucumbers. You will want to choose English cucumbers or Persian cucumbers. These cucumbers are firm, thin-skinned, and have fewer seeds compared to other cucumber varieties. The skin is also tender, making them perfect for salads. It's important to note that you should always taste your cucumbers before using them in your salad. Some cucumbers can be bitter, especially if they are unripe.

2. Don't Overdo the Dressing:

Asian Cucumber Salad is traditionally dressed with a simple combination of vinegar, sesame oil, and soy sauce. It's important not to overdo the dressing as it can overpower the salad. A good rule of thumb is to use a 2:1 ratio of vinegar to oil. This will give your salad a good balance of acidity and sweetness. If you prefer a spicier salad, you can add some chili flakes or sriracha sauce.

3. Add Texture:

A good Asian Cucumber Salad should have a good mix of textures. This means you should incorporate some crunchy ingredients like carrots, radishes, or peanuts. The addition of sesame seeds can also add some great texture to your salad. You can also mix in some cooked soba noodles or rice noodles for an extra dimension of flavor and texture.

4. Experiment with Different Herbs:

You don't have to stick to the traditional herbs like cilantro or mint. Experiment with different herbs like Thai basil or shiso leaves to give your salad a unique flavor. You can also add some chopped scallions for a subtle onion flavor. Just be sure not to overdo it on the herbs as they can overpower the salad.

5. Let the Salad Marinate:

An Asian Cucumber Salad tastes better when it's had time to marinate. This allows the cucumbers and other ingredients to soak up the dressing and become more flavorful. You should let your salad marinate for at least 30 minutes before serving. If you're making this salad ahead of time, you can refrigerate it for a few hours or even overnight.

6. Keep it Healthy:

One of the great things about an Asian Cucumber Salad is that it's healthy. However, you should keep in mind that the dressing can add a lot of calories. To keep your salad healthy, use less dressing and skip the peanuts. You can also swap the regular soy sauce for low-sodium soy sauce to reduce the amount of salt in your salad.
Conclusion:
In conclusion, making an Asian Cucumber Salad is easy and can be a fun way to experiment with different flavors and textures. Keep these valuable tips in mind when making your salad to ensure that it's a hit every time. With the right ingredients and a little bit of creativity, you can make a delicious and healthy salad that everyone will love.
