ASIAN CILANTRO TILAPIA #RSC
Ready, Set, Cook! Reynolds Wrap Contest Entry. I'm of a Korean background so the asian flavors of salty, sweet, sesame, ginger, garlic is present. My kids love it and I don't think they realize they're eating 'fish'. They don't need to know as long as they like it and eat it. lol. Using the tilapia is the best cuz of the lightness of the fish. The distinctiveness of the cilantro will give it a great fresh herb taste.

Steps:
- Preheat oven 375.
- Make the marinade. Make sure to only use 3Tbsp of the sesame oil. This should make a little over 3/4cup of sauce but out of that put aside 1/4 cup for the veggies and the rest is needed for the fish.
- Add in all the veggies and a handful of cilantro in a mixing bowl. Sprinkle in Salt/pepper, LEMON ZEST, 1/4 cup of the marinade and toss. Put to the side.
- Lay down the REYNOLDS FOIL in the baking dish.
- Pour the other part of the sesame oil (3Tbsp).
- Lay the TILAPIA and you can overlap the thinner sides.
- Pour the remaining part of the marinade over the fish.
- Spread the veggie mixture covering the fish.
- Cover the foil but leave a small air pocket.
- Bake 12--15 minutes.
- ENJOY by itself or on some rice.

Steps:
- Heat the oven to 475 degrees.
- Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
- Place in a small food processor the jalapeno, garlic and ginger along with the soy sauce, white wine, sesame oil and cilantro. Process until blended.
- Pour the sauce over the fish, spreading and slightly pressing the solid ingredients down into the fish. Bake for about 8 minutes or until the fish flakes easily and is cooked through.
- Remove the tilapia with a spatula and divide between two plates. Drizzle the fish with the marinade juices left in the pan. Serve with jasmine or brown rice.

ASIAN TILAPIA IN FOIL
Tilapia is popular in many Asian cuisines. Use low-sodium soy sauce to cut back on the sodium, if desired. I wasn't crazy about it, but so far I haven't liked any tilapia recipes--I just don't like the taste of the fish, I guess! The topping is good, though, and I will probably use it with other kinds of fish I do like--like snapper or cod. I did find that it took a lot longer to cook than the recipe originally called for (10-12 minutes at 425* F), so I've updated it. If you are using thin fillets in single layers, you may want to cut back on the heat and time a bit. You can always cook it longer if needed, but you can't un-cook it!

- Preheat oven to 450* F. Wash fillets and pat dry. Tuck thin ends under so the whole fillets will be of equal thickness.
- Place each fillet on 12x15" pieces of foil.
- Combine soy sauce, sesame oil, ginger, and pepper and spoon over fillets. Sprinkle scallions on top of each fillet. Fold the foil over fish and crimp edges to seal.
- Place packets on baking sheet in a single layer.
- Bake at 450* F for 12 to 15 minutes, until foil is puffed and fish flakes easily when tested with a fork.

I love tilapia fish because it's mild. I'm always trying to come up with new things to cook for my boyfriend. He's not into baked fish, but he and my family really enjoyed this dish. I served it with white rice and a side salad.

- Coat the bottom of a baking dish with olive oil.
- Place the tilapia fillets in the pan.

- Cook the rice (stove top or rice maker), add the tumeric and salt to the cooking water, the rice will turn a beautiful yellow color. When cooked, let it cool off, can be made ahead.
- Mix the marinade for the tilapia filets: oil, citrus juices and a dash of mexican oregano, marinate fish filets for up to one hour, not more or the fish will "cook" in the juice.
- Lay out 4 12 X 12 squares of heavy duty reynolds wrap, put 3-4 slices of lemons on one side of each and top with the fish filets. Season with salt and lemon pepper and spoon the marinade over. Fold the second half over and crimp the sides tightly, tuck the ends under.
- Lay the packages on a baking sheet and bake @ 375 for 12 - 15 minutes. Let the package rest for a few minutes, then open carefully, watch out for steam escaping.
- In the meantime, heat a tbsp of oil in a heavy skillet and saute the onions until golden. Add the peppers, corn and jalapeno and cook until soft, Add the rice and black beans and heat through. Season with salt and cumin.
- To serve, spoon a portion of rice on each plate, lay the fish on top, spoon the accumulated sauce over the fish and rice, garnish with the lemon slices and sprinkle some chopped cilantro over. Enjoy!

- 1/4 cup Soy Sauce
- 2 tbsp. Honey
- 2 tbsp. Rice Vinegar
- 1 tbsp. Sesame Oil
- 1 tbsp. Fresh Ginger (finely grated)

Preparation:
Marinade:
- Combine all marinade ingredients in a bowl and mix well.
- Place tilapia fillets into a large ziplock bag and pour marinade over them.
- Seal the bag, turn it over several times, and refrigerate for 30 minutes.
Fish:
- Preheat oven to 375°F.
- In a shallow dish, mix flour, cornstarch, Panko bread crumbs, and salt together.
- Remove tilapia fillets from the marinade and discard the leftover marinade.
- Coat the fillets in the flour mixture and shake off any excess.
- In a large skillet, heat vegetable oil over medium-high heat.
- Place the coated fillets in the skillet and cook for 2-3 minutes on each side or until golden brown.
- Transfer the fillets to a baking dish and bake in the oven for 5-7 minutes or until cooked thoroughly.
- Garnish with cilantro leaves and serve with fresh lime wedges.
