Time 40m

Number Of Ingredients 19

12 ounces flank steak ((sliced ⅛-inch thick into 2- to 3-inch pieces))
1 teaspoon water
¼ teaspoon baking soda
1 teaspoon cornstarch
2 teaspoons vegetable oil
4 cups bok choy ((250g, cut into 1x3-inch pieces, washed and drained))
¾ cup Bunashimeji or Beech mushrooms, washed and drained ((50g))
¾ cup sugar snap peas or snow peas ((65g, washed and drained))
½ cup warm water or beef stock
¼ teaspoon sesame oil
2 teaspoons light soy sauce
1 teaspoon dark soy sauce ((or mushroom flavored dark soy sauce if you have it))
1 tablespoon oyster sauce
¼ teaspoon sugar
3 tablespoons canola oil ((divided))
½ teaspoon minced ginger
2 cloves garlic ((finely minced))
1 tablespoon Shaoxing wine
2 teaspoons cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Mix together the marinade ingredients with the beef until well-coated, and set aside for 30 minutes or overnight. Next, prepare your veggies and set aside.
  • In a small bowl, mix the water (or beef stock, if using), sesame oil, soy sauces, oyster sauce and sugar, and set aside.
  • Heat your wok on high heat and spread 2 tablespoons of oil around the perimeter to coat. Once the wok and oil start to smoke, add the beef, and use your metal wok spatula to spread the beef in one even layer. Sear for 30 seconds. Turn the beef to sear the uncooked sides for another 30 seconds. At this point, the beef should be about 80% done. Turn off the heat and transfer the beef back to the marinade bowl.
  • Next, with the heat back on high, add the ginger and 1 tablespoon of oil to the wok. Cook for 10 seconds, and add the garlic. After 5 seconds, add the mushrooms and stir fry for another 15 seconds, giving them a good sear. Add the Shaoxing wine.
  • Next, add the snap peas and the bok choy, and stir fry on the highest heat for another 20 seconds until the bok choy begins to wilt. Stir in the beef and your prepared sauce mixture. Gather everything in the center of the wok.
  • When everything comes back up to a simmer, and the sides of the wok begin to super-heat, Stir fry everything in a circular motion so the beef and vegetables hit the sides of the wok--this gets you that wok hay flavor!
  • Pour the cornstarch slurry in the center of the wok while stirring. The sauce will immediately thicken, so work fast to stir everything together for another 20 seconds to evenly coat the beef and vegetables in the sauce. There should not be any standing sauce - everything should be clinging to the beef and vegetable stir fry. This is the classic restaurant-style preparation, but you can add more stock and salt or soy sauce to taste if you like a saucier stir-fry.
  • Turn off the heat and transfer your beef vegetable stir-fry to a serving plate; you can also dish it out individually on a bed of rice for a great one-plate meal. Enjoy immediately. Though you probably don't need us to tell you that.

ASIAN BEEF WITH MUSHROOMS & SNOW PEAS

Asian Beef with Mushrooms & Snow Peas image

Asian Beef with Mushrooms and Snow Peas - simple dinner that uses basic ingredients! Tender mushrooms, crisp snow peas, and thinly sliced sirloin steak are sautéed with garlic. Your family will love this easy weeknight dinner!

Provided by Julia

Categories     Main Course

Time 50m

Number Of Ingredients 9

1/2 cup tamari (or low-sodium soy sauce)
5 tablespoons brown sugar
6 garlic cloves (minced)
1/2 teaspoon ginger
2 teaspoons rice vinegar
10 oz snow peas
4 tablespoons olive oil
10 oz mushrooms (sliced thinly)
1 pound beef (thinly sliced (sirloin steak strips, flank steak, or any other steak))

Steps:

  • Combine all the sauce ingredients in a bowl - whisk to combine. Set aside.
  • Bring water in a medium pan to boil. Add snow peas, boil them for 5 minutes, drain. Set aside.
  • Heat a large skillet until hot, add 2 tablespoons olive oil - it should sizzle.
  • Immediately add thinly sliced mushrooms - cook them on high heat, turning occasionally, until they brown nicely. Salt them midway, just a little bit. Do not add too much salt, as you will be adding tamari sauce later.
  • Remove mushrooms to a bowl.
  • To the same skillet, on high heat, add 2 tablespoons of olive oil, which will sizzle right away. Immediately add thinly sliced meat.
  • Note: You might want to do this in 2 batches. You will want each slice of beef to touch the bottom of the skillet and for meat slices not to be crowded. This will ensure that beef will brown on high heat.
  • Cook beef on one side until it browns nicely.
  • Turn over all beef slices to the opposite side, and cook more, on high heat, until all slices brown nicely. Remove this batch to a bowl.
  • Add the second batch of beef, and repeat.
  • Return all of the cooked beef slices back to the skillet.
  • Add the snow peas and cooked mushrooms, then the Asian sauce.
  • Stir everything to combine on high heat, for about 1 minute. Turn off heat. Cover the skillet with a lid.

BEEF WITH SNOW PEAS

Beef with Snow Peas image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 16m

Yield 8 servings

Number Of Ingredients 12

1/2 cup low-sodium soy sauce
3 tablespoons sherry or cooking sherry
2 tablespoons cornstarch
2 tablespoons brown sugar
1 tablespoon peeled and minced fresh ginger
1 1/2 pounds flank steak, trimmed of fat and sliced very thin against the grain
3 tablespoons peanut or olive oil
8 ounces fresh snow peas, trimmed
5 whole scallions, cut into 1/2-inch pieces on the diagonal
Crushed red pepper
Salt, as needed (use sparingly!)
Jasmine or long-grain rice, cooked according to package directions

Steps:

  • In a bowl, mix together the soy sauce, sherry, cornstarch, brown sugar and ginger. Add the beef to a separate bowl and pour one-third of the liquid over the top. Save the rest of the liquid. Toss the beef and set aside.
  • Heat the oil in a heavy skillet (iron is best) over high heat. Add the snow peas and stir for 45 seconds, getting as much color on them as possible. Remove to a plate.
  • Allow the skillet to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Spread out the meat as you add it to skillet, but do not stir for a good minute. (You want the meat to get as brown as possible as quickly as possible.) Sprinkle half the scallions over the meat. Flip the meat to the other side and cook for another 30 seconds. Remove to a clean plate.
  • Repeat with the other half of the meat, allowing the skillet to get very hot again first. After flipping, add the first plateful of meat, the reserved liquid, the crushed red pepper and snow peas. Stir over high heat for 30 seconds, and then turn off the heat. Check the seasonings and add salt only if it needs it. The mixture will thicken as it sits. Serve immediately over rice.

STIR-FRIED BEEF AND SUGAR SNAP PEAS

Stir-Fried Beef and Sugar Snap Peas image

Here's a stir-fry far better than most take-out Chinese, and you can make it with any lean cut of meat - flank steak, London broil, tenderloin, sirloin or skirt steak - so long as it is cut thin against the grain. Most takeout joints use snow peas, but sugar snaps are juicier and more succulent, and just as crunchy. (Their downside is that they are slightly more work: they need to be thinly sliced.) As for the sauce, it's simple: thick dark soy sauce (tamari works well), sesame oil, chicken broth and Madeira.

Asian cuisine is known for its rich flavors and unique spicy & sweet combinations. When it comes to Asian beef with snow peas recipes, there are plenty of dishes to try from. If you are planning to make beef with snow peas recipe at home, there are some tips that you should keep in mind to ensure that your dish turns out great.

Tips for preparing beef

When making Asian beef with snow peas recipes, the type of beef you use and how you prepare it can make a big difference in the taste and texture of your dish. Here are some tips for preparing beef:
1. Choose the right cut of beef
The type of beef you use in your dish can affect the overall quality of your dish. In general, lean cuts of beef like sirloin, flank, or tenderloin, work best in stir-fries. These cuts cook quickly and are tender, making them ideal for stir-fries.
2. Marinate the beef
Marinating the beef can add flavor and tenderize it, making it easier to cook. When marinating beef, use acidic ingredients like vinegar, lime, or lemon juice to break down the fibers and make it more tender.
3. Use high heat
When cooking beef for stir-fries, it's important to use high heat to sear the meat quickly and keep it tender. Use a wok or a large skillet and turn up the heat to high before adding the beef.

Tips for selecting and preparing snow peas

Snow peas are a common vegetable used in Asian stir-fries, and they can add a sweet and crunchy texture to your dish. Here are some tips for selecting and preparing snow peas:
1. Choose fresh snow peas
When selecting snow peas, look for fresh, bright green pods that are crisp and plump. Avoid any snow peas that look yellow or have brown spots.
2. Trim the ends
Before using snow peas in your dish, you should trim the ends off. This helps to remove any tough and woody parts of the pod that are not pleasant to eat.
3. Blanch the snow peas
Blanching snow peas can help to preserve their bright green color and can also help to keep them crunchy when added to your dish. To blanch snow peas, bring a pot of water to a boil and add the snow peas for a few seconds. Then, remove them from the boiling water and plunge them into ice water to stop the cooking process.

Tips for creating a flavorful stir-fry sauce

A good stir-fry sauce can make or break your Asian beef with snow peas recipe. Here are some tips for creating a flavorful sauce:
1. Balance the flavors
When creating a stir-fry sauce, you should aim to balance the flavors of sweet, salty, sour, and spicy. This can be achieved by using ingredients like soy sauce, rice vinegar, sugar, and chili paste.
2. Use cornstarch to thicken the sauce
Cornstarch is often used to thicken stir-fry sauces, giving them a nice consistency that coats the meat and vegetables. To thicken your sauce, mix cornstarch with water in a separate bowl before adding it to your sauce.
3. Add sauce to the pan towards the end of cooking
To avoid overcooking the sauce or making it too watery, add it to the pan towards the end of cooking. This will ensure that it coats the meat and vegetables and stays nice and thick.

Tips for cooking and serving

When it comes to cooking Asian beef with snow peas recipes, there are some tips you should keep in mind for the best results. Here are some tips:
1. Cook in small batches
When stir-frying, it's important not to overcrowd the pan. Cook your beef and snow peas in small batches, so they have enough space to cook properly and don't steam.
2. Serve with steamed rice
Asian beef with snow peas recipes are typically served with steamed rice. Rice is a great way to soak up the sauce and add some bulk to your meal.
3. Top with sesame seeds and green onions
To add some extra flavor and texture to your dish, consider topping it with sesame seeds and chopped green onions. These ingredients add a nice crunch and an extra layer of flavor to the dish.

Conclusion

Asian beef with snow peas recipes can be a great way to add some variety to your meal plan. By following these tips and choosing high-quality ingredients, you can create a dish that is flavorful, healthy, and satisfying. With a little practice, you'll be able to make delicious Asian beef with snow peas recipes that your family will love.
