1 (8 ounce) can artichoke hearts in water
1 cup mayonnaise
salt and ground black pepper to taste
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix 1 1/2 cups Parmesan cheese, cream cheese, artichoke hearts, mayonnaise, salt, and pepper together in a stand mixer; pour into an 8-inch square baking dish. Sprinkle 1 tablespoon Parmesan cheese over the top of the mixture.

1 (10-ounce) package frozen spinach, thawed, drained
2 tablespoons unsalted butter
1 medium shallot, finely chopped
3/4 teaspoon paprika
14 ounces canned or frozen artichoke hearts (about 2 cups), thawed, drained, coarsely chopped
8 ounces cream cheese
1 cup (or more) heavy cream
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup grated mozzarella
1/4 cup grated Parmesan
1 tablespoon fresh lemon juice

Steps:

  • Squeeze as much liquid out of the spinach as possible with a a clean dishtowel or paper towels. Melt butter in a large pan over medium-high heat. Sauté shallot until soft, 3-5 minutes. Stir in paprika and cook until fragrant, about 30 seconds. Add spinach, artichoke hearts, cream cheese, cream, salt, and pepper and cook, stirring, until warmed through and slightly reduced, 8-10 minutes. Fold in mozzarella and Parmesan and cook until melted; add more cream if needed to reach desired consistency. Remove from heat and stir in lemon juice.

  • Dip can be made 1 day ahead. Store in an airtight container and chill. Warm before serving.

1 cup parmesan cheese
1 cup mayonnaise

Wheatables crackers

Steps:

  • Preheat oven to 350°F.
  • Drain artichoke hearts and puree them in your food processor.
  • Mix pureed artichoke hearts, one cup of mayonnaise, one cup of parmesan cheese and garlic to taste in an oven safe bowl or small casserole dish.

  • Drain the artichoke hearts. Cut them into halves.
  • Combine Mayo, Cheese, Garlic Powder, Salt, and Pepper in a large bowl until thoroughly mixed together. (When adding the garlic powder you might want to do it "to taste").

  • Transfer to a desired dish or bowl and garnish with Parsley if desired.

6 1/2 oz quartered & marinated artichoke hearts
8 oz cream cheese
8 oz mayonnaise
8 oz can of diced green chilies. divided.
1 c grated parmesan cheese. divided.

Steps:

  • 1. In large bowl, pour in artichoke hearts, with juice. Add 1 package of cream cheese, softened and broken into parts, to make it easier to mix.
  • 2. Add 8 oz of mayonnaise (one small jar) to bowl and stir. Add one can of green chilies. Mild or hot depending on your tastes.
  • 3. Add one half cup of grated Parmesan cheese to mixture, then with large spatula, stir well. Scrape bottom as you go along to get all ingredients mixed in well.
  • 4. Set oven to 350 degrees. Pour mixture into medium sized , oven proof casserole dish. If you have chunks of cream cheese in mixture, don't worry, it will melt during baking. Then take the rest 1/2 cup of Parmesan cheese and spread it on top of mixture.
  • 5. Bake in oven for 35 minutes until it comes out gold and bubbly. It will be too hot to eat at first, so let it cool for 10 minutes or so. Serve it warm with your favorite chips (Tortilla works best. Especially if their just out of the oven), Bread or vegetables.

I had this dip at my dad's house during Christmas. It was really delicious, and normally I don't even like mayo based dips! We ate it with crackers, bread, and tortilla chips. This is made in the microwave, but if you like all the crusty stuff on top, stick it under the broiler for a minute or two afterwards to brown it. Since I have not made this myself yet and the recipe as written does not have cooking times, the cooking time is a guess, but I would just cook it a minute or two at a time and keep a close watch on it. I did a search and looked through all the relevant matches here for artichoke dip, and did not find this one.

6 tablespoons unsalted butter, room temperature
1/4 cup all-purpose flour
2 cups whole milk, warmed

2 tsp minced garlic
14 ounces can(s) artichoke hearts
3/4 jar(s) mayonnaise
