ARTICHOKE NIBBLES

ARTICHOKE NIBBLES image

Number Of Ingredients 10

2 jars (6 oz. each) marinated artichoke hearts*
1 onion, finely chopped
1 garlic clove, minced
4 large eggs
1/4 cup fine dried bread crumbs
1/2 teaspoon each pepper and dried oregano
1/4 teaspoon hot sauce, such as Tabasco
2 cups (8 oz.) shredded sharp cheddar cheese
2 tablespoons minced parsley
*Use artichokes in an oily marinade; we like Cara Mia brand. Using a skillet (our update on the original baking pan) gives the nibbles a golden crust.

Steps:

  • 1. Preheat oven to 350° and put a 10-in. cast-iron skillet* into oven to heat. 2. Drain marinade from 1 jar of artichokes into a frying pan. Drain remaining artichokes; reserve marinade for other uses. Chop all artichokes. 3. Heat marinade in frying pan over medium heat. Add onion and garlic and cook, stirring, until onion is soft, about 5 minutes. 4. Whisk eggs in a bowl to blend. Stir in bread crumbs, pepper, oregano, and hot sauce. Stir in cheese, parsley, artichokes, and onion mixture. 5. Remove skillet from oven. Protecting your hands, wipe it quickly with an oiled paper towel. Pour in custard and bake, uncovered, until custard feels set when lightly touched, about 30 minutes. Let sit at least 15 minutes before cutting into 1-in. squares. Make ahead: Up to 1 day, chilled. Reheat, uncovered, 12 minutes at 325°.

Choosing the artichokes The first step in making artichoke nibbles is to select quality artichokes. When buying artichokes, make sure that they are heavy for their size and have tight leaves. Ensure that the leaves are green, and the stem is fresh and not withered. Avoid those with brown spots or holes as they might be signs of pests. You can choose from fresh, canned, or frozen artichokes. However, if you're using canned ones, make sure to drain and rinse them thoroughly before you start cooking. Preparing the artichokes The next crucial step is preparing the artichokes. Firstly, rinse the artichokes under running water to clean them thoroughly. Secondly, trim the stem off the bottom, so that the artichokes can sit level in your baking dish. Thirdly, remove the tough outer leaves that are closest to the base of the artichoke. Fourthly, use a kitchen scissor to remove the sharp ends of the remaining leaves. Finally, cut the artichokes in half and scoop out any prickly choke and discard them. Cooking the artichokes The cooking method for artichoke nibbles can differ based on the recipe. However, there are a few cooking tips that apply universally. Firstly, use a baking dish that's just enough to fit the artichoke halves in a single layer. Secondly, add liquid, such as water or stock, to the pan to prevent the artichokes from drying out. Thirdly, cover the pan with foil to retain the moisture while cooking. Fourthly, preheat the oven to 350°F(180°C) and bake for 20-25 minutes until the artichokes are cooked through. Finally, allow them to cool completely before adding any toppings or dips. The garlic butter will seep in the leaves and add a rich, comforting flavor. Lemon and herbs - Drizzle some olive oil over the artichokes halves and season with salt, black pepper, and chopped herbs. Squeeze some fresh lemon juice over them and bake until they are golden brown. Breadcrumbs - Mix some breadcrumbs with grated parmesan cheese, garlic, chopped herbs, and melted butter. Sprinkle the mixture over the artichoke halves before baking, and you'll get crispy breadcrumb-coated artichokes. These dips add contrasting flavors that complement the mild taste of artichokes. Storage and Reheating Artichoke nibbles can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, preheat the oven to 350°F(180°C), and bake for around 10-15 minutes or until heated through. Ensure that the artichokes are fully reheated to avoid any foodborne illness.
