This rich, delicious, and easy-to-make appetizer can be served warm or cool. I sometimes use grated low-fat cheese and find that it is just as tasty and less greasy. Dried parsley works, too.

1 (12 ounce) jar marinated artichoke hearts, drained and chopped (reserve marinade)
1 bunch green onions, chopped
9 eggs, beaten
1 pound sharp Cheddar cheese, grated
14 saltine crackers, crumbled
½ cup chopped fresh parsley
2 cloves garlic, minced
1 dash hot pepper sauce (such as Tabasco®)
salt and ground black pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat 3 tablespoons of the reserved marinade from the artichoke hearts in a large skillet. Cook and stir green onions in hot marinade until wilted, 2 to 3 minutes.
  • Stir cooked green onions, eggs, Cheddar cheese, saltine crackers, parsley, garlic, hot pepper sauce, salt, and black pepper together in a bowl; pour into a 9x13-inch baking dish.
  • Bake in the preheated oven until center is puffy and no longer moist, about 40 minutes; cool slightly before cutting into squares.

You can make this easy Italian frittata with the fresh, tiny artichokes that arrive with spring or, more quickly, with frozen artichoke hearts.

1 pound baby artichokes, trimmed, or one 12-ounce package frozen artichoke hearts
8 eggs
2 tablespoons low-fat milk
Salt, preferably kosher salt
freshly ground pepper
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
3 tablespoons minced Italian parsley, dill, fennel fronds or wild fennel
1 tablespoon freshly grated Parmesan or pecorino

Steps:

  • If using fresh artichokes, steam until tender or boil gently in a pot of generously salted water, 10 to 15 minutes. Drain, refresh with cold water and quarter the artichokes. Thaw frozen artichokes as directed, and drain off any liquid in the bowl.
  • Beat the eggs in a medium bowl. Whisk in the milk, about 1/2 teaspoon salt and freshly ground pepper to taste.
  • Heat the oil over medium-high heat in a 10-inch, heavy nonstick skillet, and add the artichokes. Cook, stirring often, until golden brown, about five to eight minutes. Add the garlic, and cook for another 30 seconds to a minute until fragrant. Stir in the herbs, and season with salt and pepper. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with a spatula in your other hand, so that the eggs run underneath during the few minutes of cooking.
  • Turn the heat down to low, cover (use a pizza pan if you don't have a lid that will fit your skillet) and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid and loosen the bottom of the omelet with a wooden spatula, tilting the pan so that the bottom doesn't burn. Instead it should turn a deep golden brown. Meanwhile, heat the broiler.
  • Finish the omelet under the broiler for one to two minutes, watching very carefully to make sure the top doesn't burn. (It should brown slightly, and it will puff under the broiler.) Remove from the heat and immediately sprinkle on the Parmesan or pecorino. Serve hot, warm or room temperature.

1/2 cup finely chopped red onion
1 garlic clove, minced
2 medium Yukon Gold potatoes (about 10 ounces), thinly sliced

1/4 cup 2% milk
2 medium tomatoes, chopped
1 can (14 ounces) water-packed artichoke hearts, drained and chopped
1/4 cup crumbled goat cheese, divided
2 tablespoons minced fresh basil or 2 teaspoons dried basil, divided
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a 10-in. ovenproof skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Remove onion mixture from pan., Add remaining oil to same pan; arrange potatoes on bottom of pan. Cook over medium-low heat until tender, 15-20 minutes, stirring occasionally., In a large bowl, whisk eggs and milk. Stir in tomatoes, artichokes, onion mixture, 2 tablespoons goat cheese, 1 tablespoon fresh basil, salt and pepper. Pour egg mixture over potatoes; sprinkle with remaining cheese. I copied down this recipe, many years ago; and, I resurrected it, recently, for a brunch. It is so easy, and so great; I'm glad I found it, again! It doesn't have a crust, so it is actually more like a frittata than a quiche; but, whatever you call it, it's good!

1/4 cup breadcrumbs or 2 slices bread
6 eggs or 1 1/2 cups egg substitute
2 cups grated cheddar cheese

salt and pepper

Steps:

  • Preheat oven to 325 degrees.

1/2 cup mascarpone
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh tarragon
1 teaspoon Calabrian chile paste
1 teaspoon lemon zest (from 1 lemon)
1 teaspoon kosher salt
2 tablespoons olive oil
6 ounces marinated artichoke hearts, chopped
One 5-ounce container baby spinach, roughly chopped
1 cup jumbo lump crab meat (about 8 ounces)

Steps:

  • Heat the broiler to high and place a rack in the center of the oven.
  • Whisk together the eggs, mascarpone, basil, tarragon, chile paste, lemon zest and 1/2 teaspoon salt in a medium bowl. Set aside.
  • Heat a medium (10-inch) nonstick ovenproof saute pan over medium heat. Add the oil and heat another minute. Add the artichoke hearts and cook, stirring often, until warmed through, about 2 minutes. Add the spinach and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until the spinach is wilted, about 2 minutes longer. Add the crab and stir to combine. Add the egg mixture and allow to sit for 1 minute. Using a rubber spatula, stir the cooked egg mixture up from the bottom and sides, allowing the raw mixture to begin to cook. Continue to do this until the mixture is beginning to look like a soft scramble, about 4 minutes. Spread the mixture evenly on top and place under the broiler until the mixture is completely set and the top is golden brown, 3 to 4 minutes. 1 medium onion, chopped
1 tablespoon olive oil

1/4 teaspoon oregano

3/4 cup parmesan cheese
6 large eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon white pepper

1 cup monterey jack cheese

Steps:

What I love about frittatas is that they are one of the few egg dishes that are delicious at room temperature and can be stored in the refrigerator (or even frozen) for days. This one is not just for breakfast - Try it for lunch or dinner with a salad or steamed veggies. Eat hot or at room temperature - Leftovers can be heated in toaster oven or microwave. I designed this recipe to be gluten-free, using my homemade fresh gluten-free Italian breadcrumbs - But you can use any type of breadcrumbs you like.

1/2 cup milk
1 (6 ounce) jar marinated artichoke hearts, drained
2 cups small fresh broccoli florets

Steps:

  • Following directions on package, cook artichoke hearts until tender.
  • Cut in half and set aside.
  • Preheat broiler.
  • In medium-sized iron skillet, saute the garlic and onion in 2 tablespoons of olive oil until golden brown.

BAKED ARTICHOKE FRITTATA



Baked Artichoke Frittata image

Couldn't be easier. This is baked in a shallow casserole dish or 4 small 1 1/2 cup sized shallow individual pans. It gets nice and puffy almost like a souffle which makes a beautiful presentation. I found this recipe in an old Sunset cook book. This is Florentine sytle cooking. Makes a great dinner or breakfast. You can sub jack cheese for the fontina also.

1 (9 ounce) package frozen artichoke hearts
6 eggs
1/2 cup half-and-half
1/4 teaspoon salt

1 medium onion, peeled and chopped
1 small garlic clove, minced
1 medium potato, cooked, peeled and sliced 1/4-inch thick

1 cup roasted red pepper, coarsely chopped
3/4 teaspoon dried oregano
1/4 teaspoon salt

Steps:

1 medium onion, chopped
6 single wheat saltine crackers
2 (6 ounce) jars marinated artichoke hearts, drained and chopped

8 ounces grated mozzarella cheese
5 ounces fresh spinach, chopped and dried
red pepper flakes or hot sauce

This is a simple and delicious breakfast or brunch dish, and looks delightful on the buffet table. Also good with diced cooked bacon and sliced mushrooms added. Note: due to the salt in the cheeses, no additional salt should be necessary in the cooking process. My picky DH and I created this for RSC #11.

2 tablespoons butter, divided (or use Pam cooking spray)
1 (14 ounce) can water-packed artichoke hearts
1/2 cup asiago cheese, grated
1/2 cup gouda cheese, grated
1 large shallot, thinly sliced
1/2 cup milk
6 eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 1 quart shallow casserole pan or quiche pan with 1 tablespoon of the butter (or use the cooking spray).
  • Drain and quarter artichokes and place in the prepared pan.
  • Cover artichokes with the grated cheeses.
  • In small pan, sauté shallots with a tablespoon of the butter until the shallots become tender, about 5 minutes over medium heat.
  • In medium bowl, beat milk and eggs together with a fork. Add in the sautéed shallots and stir to combine.
  • Pour milk, egg, and shallot mixture over the artichokes and cheeses.
  • Bake in 350 degree F oven for 30 minutes, or until set.

1 tablespoon olive oil
1 small brown onion, halved, thinly sliced crossways
1 (170 g) jar marinated artichoke hearts, drained
6 eggs
1 garlic clove, crushed
salt & freshly ground black pepper
2 tablespoons fresh continental fresh parsley leaves

Steps:

  • Preheat grill on medium-high. Heat oil in a 20cm-diameter (base measurement) non-stick frying pan over medium heat. Add onion and cook, stirring occasionally, for 5-6 minutes or until golden brown. Add artichokes and cook for 2 minutes or until heated through.
  • Kids' task: Meanwhile, place the eggs in a jug. Add the garlic and whisk until combined. Season with salt and pepper.
  • Pour the egg mixture over the artichoke mixture. Reduce heat to low and cook for 6-7 minutes or until frittata is set around the edge but still runny in the centre. Cook under preheated grill for a further 2 minutes or until golden brown and just set. Remove from grill. Turn onto a chopping board.
  • Cut frittata into 8 wedges. Place on a serving platter and sprinkle with parsley to serve.

2 teaspoons olive oil
1/4 cup chopped pancetta
1 large shallot, minced
2 cups fresh spinach, chopped
8 eggs or 1 cup Egg Beaters egg substitute
6 artichoke hearts, quarters
1/2 cup asiago cheese, grated
1/4 cup white wine
1/4 cup sun-dried tomato, chopped
1 tablespoon chopped fresh basil
1 tablespoon fresh rosemary, chopped
2 tablespoons pine nuts
sea salt
white pepper

Steps:

  • Preheat oven to 500 degreed F.
  • Put sun dried tomatoes in wine and allow to partially rehydrate for 15 minutes.
  • Whisk eggs together with a pinch of sea salt and white pepper.
  • In an all-metal pan, heat olive oil.
  • Begin frying the pancetta, stirring constantly, for 1 minute.
  • Add shallots and cook until soft.
  • Add spinach and cook for 2 minutes, stirring.
  • Add sun dried tomatoes, basil and rosemary.
  • Add egg mixture to the pan.
  • Agitate the eggs into the other ingredients and add in the cheese bit by bit. Hold about a tablespoon back.
  • Remove the pan from the heat and arrange the artichoke quarters evenly around the pan.
  • Sprinkle the pine nuts over the mixture
  • Finish with the last tablespoon of cheese.
  • Put the pan in the oven's center rack and bake for 10 minutes or until firm in the center.
  • Slide out of the pan and cut into 6 slices.

  • You'll need an all-metal pan to take this dish from the stove to the oven in the true frittata style. (Alternatively, the portions could be baked in individual ramekins, just mix all the the ingredients into the eggs, then pour into the ramekins and bake). Made with egg substitute, this is a more healthful and low fat brunch item, great accompanied by fresh fruit and mimosas made with prosecco.

In a large ovenproof nonstick skillet, heat oil over medium heat. Add onion and cook, stirring occasionally, until softened, 2 to 3 minutes. 1 small paper, cooked and cubed.
1 t fresh rosemary leaves

3 eggs
1/4 t salt
2 T shredded fresh mozzerella cheese
1 T freshly grated Parmesan cheese
Chopped frish Italian parsley, for garnish.

Steps:

  • 1. Bring a small saucepan of lightly salted water to a boil, and add the artichoke hearts. Lower the heat and simmer for 3 minutes; then rinse, drain and pat dry. Set them aside. 2. Heat 1 T of the oil in a 10-inch flameproof skillet (preferably nonstick). Add the potato and rosemary and saute until golden and crisp - about 3 minutes. Add the artichoke hearts and saute until golden, about 2 minutes. Sprinkle with a pinch of salt and pepper and set aside. 3. Preheat the boiler. 4. Lighly beat the eggs with the 1/4 t salt and pepper to taste. Heat the remaining 1 T oil in the same skillet. Pour in the eggs and cook over medium-low heat stirring lighly just until the bottom is set, 3 to 4 minutes. The top shuld still be wet. Add the artichokes and potatoes; sprinkle wih the cheeses. Place the skillet under the broiler and cook until the frittata is golden and sizzling, about 2 minutes. Sprinkle with parsely and serve immeidately.
