Italian rolls spread with artichokes,sun-dried tomaaotes, parmigiano cheese and fresh basil, topped with salami and fresh mozzarella and green Olivada. Sandwiches need to be refrigerated at least 4 hrs. or up to 1 day before serving. This recipe comes from Adriana's Italian Cooking website. Added here for ZWT7, Italy. Food.com wouldn't let me list Green Olivada, so I listed Olive Spread instead; see my recipe #456032 #456032 for Green Olivida.

ARTICHOKE, PROVOLONE CHEESE AND SALAMI SANDWICHES
This is a yummy sandwich! I like to use foccacia bread instead of the rolls. Also, I just use the oil from the artichokes and sun-dried tomatoes instead of adding the EVOO. Sometimtes I add mayo on 1 side of the bread, as I am a mayo addict. LOL Prep time does not include refrigeration time. Adapted from Bon Appétit, August 2003. Hope you enjoy!

Artichoke fresh mozzarella and salami sandwiches are a delicious way to enjoy a flavorful meal. The combination of the tangy artichokes, creamy mozzarella, and savory salami is a treat for your taste buds. These sandwiches are perfect for lunch or a quick snack, and they can be made in minutes.
The Ingredients
To make the artichoke fresh mozzarella and salami sandwiches, you will need the following ingredients:
1. Artichokes
Artichokes are a great source of fiber, antioxidants, and vitamins. They have a distinct flavor and add a unique texture to the sandwiches. You can use fresh or canned artichokes, depending on your preference.
2. Fresh Mozzarella
Fresh mozzarella is a soft, creamy cheese that adds depth and richness to the sandwiches. It has a mild, slightly tangy flavor that complements the other ingredients perfectly. You can use sliced or shredded mozzarella, depending on your preference.
3. Salami
Salami is a type of cured meat that adds a savory, salty flavor to the sandwiches. It comes in many different varieties, but for this recipe, you can use any type of salami that you prefer. Sliced or diced salami work well in these sandwiches.
4. Bread
You will need a good quality bread to make the sandwiches. You can use any type of bread that you prefer, but ciabatta, focaccia, or sourdough work well. Make sure the bread is fresh and sturdy enough to hold the filling.
5. Condiments
There are many condiments you can use to boost the flavor of the sandwiches. Some popular options include pesto, mayonnaise, mustard, or balsamic glaze. Choose the condiments that you like best and spread them on the bread before adding the other ingredients.
The Preparation
To make the artichoke fresh mozzarella and salami sandwiches, follow these simple steps:
1. Prepare the ingredients
Start by draining and chopping the artichokes into small pieces. Slice or shred the mozzarella cheese, and dice the salami into small pieces. Prepare the bread by toasting it or grilling it to your desired level of crispness.
2. Assemble the sandwiches
Slice the bread in half and spread your preferred condiments on the inside. Add a layer of sliced or shredded mozzarella cheese, followed by a layer of chopped artichokes and diced salami. Top with the other half of the bread.
3. Press the sandwiches
If you have a panini press or a grill, you can press the sandwiches to give them a crispy exterior and to melt the cheese. If you don't have a press or a grill, you can place the sandwiches on a baking sheet and broil them for a few minutes to melt the cheese.
4. Serve and enjoy
Serve the sandwiches hot, garnished with fresh herbs or grated Parmesan cheese, if desired. You can also cut them into smaller pieces to serve as appetizers or snacks.
Variations
You can customize the artichoke fresh mozzarella and salami sandwiches to suit your taste by adding or subtracting ingredients. Here are some variations you can try:
1. Vegetarian version
If you don't eat meat, you can substitute the salami with sliced mushrooms or roasted red peppers. You can also add sun-dried tomatoes or olives for extra flavor.
2. Grilled version
If you have a grill or a grill pan, you can grill the sandwiches instead of pressing them. This will give them a smoky flavor and a charred exterior.
3. Balsamic version
You can drizzle balsamic glaze on the sandwiches before serving to add a sweet and tangy flavor. You can also add fresh basil or arugula for a peppery kick.
Conclusion
Artichoke fresh mozzarella and salami sandwiches are a delicious and easy meal that you can make in minutes. With the right combination of ingredients and condiments, you can create a flavorful sandwich that will satisfy your hunger and your taste buds.
