I couldn't find a recipe for it, but did find one that has some of the same type of ingredients so I tweaked it by adding some vegetables and putting a twist on it. Here is what I came up with. This is a pretty easy recipe and tastes very good. Top with shredded cheese.

ARTICHOKE AND SUN-DRIED TOMATO STUFFED CHICKEN BREAST

Artichoke and Sun-Dried Tomato Stuffed Chicken Breast image

Provided by Guy Fieri

Categories     main-dish

Time 1h

Yield 4 portions

Number Of Ingredients 12

3 tablespoons olive oil, divided
1/2 cup chopped red onion
3/4 cup chopped marinated artichoke hearts
1/2 cup chopped marinated sun-dried tomatoes
1/2 teaspoon salt
1/2 teaspoon fresh cracked black pepper
2 tablespoons minced garlic
1/2 cup white wine, divided
3 tablespoons butter, divided
1/4 cup grated Parmesan
1/2 tablespoon finely chopped Italian parsley leaves
4 boneless, skinless chicken breasts

Steps:

  • In a saute pan over medium heat, add 1 tablespoon of the oil. When the oil is hot add the onions and saute until translucent. Stir in the artichokes and sun-dried tomatoes. Saute for 3 to 5 minutes, then add the salt, pepper and garlic. When the garlic begins to lightly brown, deglaze with 1/4 cup of the white wine. Stir in 2 tablespoons of the butter, allow it to melt, then toss in the Parmesan and parsley.
  • Remove from the heat and allow to cool before stuffing the chicken breast.
  • Rinse, trim and pound out chicken breasts to about 1/4-inch thick. Do not over-pound as holes in the chicken will make it difficult for the chicken to retain the stuffing.
  • Put 1/4 of the stuffing mixture at 1 end of a chicken breast. Gentle roll the chicken breast folding the ends in to help keep the stuffing from coming out during the cooking process. Secure the chicken roll with 2 toothpicks. Repeat with remaining chicken breasts and stuffing.
  • Heat the 2 tablespoons of the remaining oil in a medium saute pan over high heat. Add the chicken breasts, with the secured side of the chicken first, to insure the roll with stay together. Brown the chicken on all sides, add remaining butter, and deglaze with remaining white wine.
  • Reduce the heat to low and cover the pan. Cook until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 10 minutes.
  • Remove the chicken to a cutting board and discard the toothpicks. Slice each breast on a bias into 5 pieces and transfer to a serving platter. Drizzle with remaining pan drippings, garnish with a sprinkle of Parmesan and serve.

CHICKEN, ARTICHOKE AND BROCCOLI BAKE WITH HERB BREAD CRUMBS

Chicken, Artichoke and Broccoli Bake With Herb Bread Crumbs image

This one-dish dinner is indeed a casserole - but it's bright and light, and nearly effortless. Toss canned artichokes with capers, garlic and chicken stock, pour over chicken breasts and broccoli florets, then let the oven do the work. Canned artichokes are the main flavor builder here so opt for the firmer water-packed variety, which hold their shape better during cooking. While the casserole bakes, toast the panko bread crumbs and season them with dill. Serve the chicken with a squeeze of lemon for brightness and a sprinkle of herby bread crumbs for crunch.

Time 45m

Yield 4 servings

Number Of Ingredients 12

4 boneless, skinless chicken breasts (1½ to 2 pounds total)

5 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 (14-ounce) cans quartered artichoke hearts in water, drained (about 4 cups)
1/2 cup low-sodium chicken broth
2 tablespoons drained capers
2 tablespoons unsalted butter, melted
5 garlic cloves, thinly sliced
1/2 cup panko bread crumbs
2 tablespoons chopped fresh dill
Lemon wedges, for serving

Yield 6

Number Of Ingredients 13

1 (12 ounce) package uncooked penne pasta
2 tablespoons olive oil
2 cups cooked, shredded chicken
salt and black pepper to taste
1 pinch garlic salt, or to taste
2 tablespoons minced garlic
1 small onion, diced
1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
3 ounces chopped sun-dried tomatoes (not oil-packed)
⅔ cup reduced-sodium beef broth
1 (14 ounce) can artichoke hearts, drained and quartered
2 tablespoons butter
1 tablespoon grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the penne pasta uncovered in the boiling water, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain, set aside, and keep warm.
  • Heat the olive oil in a large skillet over medium-high heat; add the chicken to the skillet and season with salt, pepper, and garlic salt. Cook and stir for about 2 minutes; remove the chicken and set aside. Cook and the garlic and onion in the oil remaining in the skillet until the onion becomes translucent, about 3 minutes. Stir in the asparagus, sun-dried tomatoes, and beef broth; reduce heat to medium-low. Cook until the asparagus is bright green and starting to become tender, about 5 minutes. Return the chicken to the skillet and stir in the artichoke hearts. Cook and stir until hot, about 3 minutes.
  • Gently fold the pasta into the chicken and vegetables, cover the skillet, and turn off the heat. Allow the mixture to sit until the pasta has absorbed any excess broth, about 5 minutes. Mix butter into the pasta mixture until butter melts and coats the pasta; sprinkle with Parmesan cheese to serve.

Artichoke chicken is a delicious and nutritious meal that can be prepared in various ways. Artichokes are low in calories and rich in nutrients, while chicken provides a good source of protein. Combining the two creates an amazing dish that is perfect for health-conscious individuals. In this article, we provide valuable tips when making artichoke chicken recipes.

Choose the right chicken

When preparing artichoke chicken, it is essential to use the right chicken cut. Chicken breasts are the most common choice, but you can also use thighs or drumsticks. Boneless and skinless chicken is preferred for this recipe because it cooks faster and absorbs more of the flavors. However, you can also use a whole chicken, cut into pieces.

Trim the artichokes

Artichokes are the star of this recipe, and it is crucial to prepare them correctly. Begin by trimming the leaves from the bottom of the artichoke until you expose the yellowish core. Cut the top of the artichoke only to expose the leaves' prickly ends. Scoop out the fuzzy choke with a spoon and cut the artichoke in half or quarters, depending on the size.

Marinate the chicken

Before cooking, marinating the chicken is crucial to infuse it with flavor. Use your favorite marinade or combine olive oil, garlic, salt, pepper, and lemon juice. Place the chicken in a plastic bag and pour the marinade over it. Let the chicken rest in the fridge for an hour or more, and it will become more flavorful.

Saute the vegetables

Artichoke chicken is best served with cooked vegetables. You can saute onions, garlic, peppers, and mushrooms in olive oil for a flavor-packed side dish. Add a sprinkle of salt and pepper to taste.

Use the right cookware

When cooking artichoke chicken, use a pan that heats evenly and is oven-safe. A cast iron skillet or Dutch oven is preferred because they can transfer heat from the stove to the oven. Avoid using a non-stick pan because it cannot withstand high heat.

Sear the chicken before baking

Searing the chicken before baking locks in the juices, creating a crispy outer layer. Heat your pan on high and add a tablespoon of oil. Place the chicken in the pan and let it cook for 2-3 minutes on each side, or until golden brown. This step is crucial to create a flavorful dish.

Add artichokes and broth

Artichokes should be added during the last 15-20 minutes of cooking. Arrange them around the chicken and add chicken broth to the pan. Cover the pan with foil or a lid, and let it bake at 375°F for approximately 30 minutes, or until the chicken is cooked through.

Check temperature

Checking the chicken's temperature is vital to ensure it is cooked through correctly. The internal temperature should be 165°F. This temperature ensures that the chicken is safe to consume and has the best taste and texture.

Garnish and Serve

Before serving, add some chopped parsley or lemon zest for an extra pop of flavor. You can also add some grated Parmesan cheese for a cheesy taste. Artichoke chicken is best served with pasta, rice, or roasted potatoes.
Conclusion
In conclusion, artichoke chicken is a delicious and nutritious meal full of flavor and easy to prepare. Follow these tips, and you'll be able to create a mouthwatering dish that will impress your guests. Remember to choose the right chicken cut, trim the artichokes, marinate the chicken, saute the vegetables, use the right cookware, sear the chicken before baking, add the artichokes and broth, check the temperature, and garnish before serving. With these tips, you will be able to make the perfect artichoke chicken recipe.
