GRILLED ARTICHOKE, GREEN GARLIC, AND GOAT CHEESE BRUSCHETTA

Grilled Artichoke, Green Garlic, and Goat Cheese Bruschetta image

Green garlic bulbs look like scallions-they're available at many farmers' markets in the spring. If you can't find them to make this Italian appetizer, substitute the peeled cloves from a head of regular garlic and the green top of a scallion.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 1h45m

Yield Makes 8

Number Of Ingredients 9

3/4 cup extra-virgin olive oil
5 bulbs green garlic, bottoms trimmed, and 1/4 cup thinly sliced tender green tops, plus more tops for serving
3 sprigs fresh rosemary (each 6 inches long)
2 lemons, halved
4 large artichokes, such as globe
Coarse salt
8 ounces soft goat cheese
1/4 teaspoon red-pepper flakes, plus more for serving
8 slices (1/2 inch thick) country bread, preferably sourdough

Steps:

  • Combine oil, garlic bulbs, and rosemary in a small saucepan; bring to a simmer over medium. Reduce heat to low; simmer until garlic is golden, about 15 minutes. Remove from heat; let cool.
  • Squeeze 2 lemon halves into a large bowl of water; add rinds. Working with 1 artichoke at a time, remove tough outer leaves closest to stem end, then trim pointy tips of remaining outer leaves with kitchen shears. With a serrated knife, cut off top 1 inch; with a paring knife, trim and peel stem. (Transfer to lemon water as you work to prevent discoloration.)
  • Set a steamer basket in a large pot; add enough water to reach just below basket and bring to a boil. Squeeze remaining 2 lemon halves into pot. Add artichokes, season with salt, and cover. Steam until hearts are easily pierced with the tip of a knife, 30 to 35 minutes. Transfer to a plate; let stand until cool enough to handle, then cut in half lengthwise and scoop out and discard fuzzy chokes.
  • Strain infused oil; discard rosemary. Mash garlic bulbs into a paste and stir into goat cheese with 1/4 cup infused oil, green garlic tops, and red-pepper flakes. Season with salt.
  • Heat grill to high. Brush artichokes with infused oil; season with salt. Grill, brushing with more oil and turning a few times, until charred in places, 8 to 10 minutes. Grill bread, turning once, until charred in places, 1 to 2 minutes. Lightly brush bread with infused oil.
  • Remove artichoke leaves from bottoms; cut bottoms into slices and reserve leaves for eating separately. Slather grilled bread with goat-cheese mixture and top with sliced artichokes. Drizzle with more infused oil, sprinkle with more red-pepper flakes and green garlic tops, and serve.

WHITE BEAN-ARTICHOKE SPREAD WITH BRUSCHETTA

White Bean-Artichoke Spread with Bruschetta image

Provided by Food Network

Categories     appetizer

Time 1h5m

Yield 4 servings

Number Of Ingredients 15

2 medium size artichokes
2 tablespoons olive oil
1 tablespoon chopped shallots
1 tablespoon chopped thyme
1 1/2 cups cooked white beans, cannelini, or navy beans
2 ounces goat cheese
1 head garlic, separated into cloves and peeled
1 lemon, juiced
4 artichokes
1 cup all-purpose flour
1 cup vegetable oil
2 cups balsamic vinegar
4 slices sour dough bread
2 tablespoons olive oil
Arugula leaves

Steps:

  • Preheat a grill.
  • Begin by peeling 2 of the artichokes until you get to the hearts. Saute the artichokes in a medium size skillet with olive oil, shallots, thyme, and the white beans on medium high heat for 10 minutes or until softened. Place mixture into a blender and add remaining ingredients, and pulse until all ingredients are blended.
  • Heat the vegetable oil in a large pot.
  • To make the crisp artichokes, simply cut the tough leaves around the artichokes until you reach the heart, keeping part of the stem. Cut into quarters, toss lightly in flour, and fry until crisp in the oil. Remove from pan, and drain on paper towels.
  • To make the balsamic reduction, simply put the balsamic vinegar in a small saucepan on high heat, and reduce down to almost a syrup consistency. Remove from heat, and let cool to room temperature.
  • To serve, grill 4 slices of sourdough bread rubbed with olive oil. Place on a serving plate. Top each slice with a few arugula leaves. Lightly spread a spoonful of the pureed artichoke mixture on the bread, and then top with crisp artichoke pieces. Drizzle a little balsamic reduction around bruschetta, and season with salt and pepper.

Valuable Tips When Making Artichoke Bruschetta Recipes

Artichoke bruschetta is the perfect appetizer or snack to serve when entertaining guests. This dish is flavorful, easy to prepare, and visually appealing. However, making artichoke bruschetta can be a challenge, especially for novice home cooks. Here are some valuable tips to help you create the perfect artichoke bruschetta recipe:
1. Use Fresh Artichokes
When making artichoke bruschetta recipes, it is crucial to use fresh artichokes. Frozen or canned artichokes can be used but won't provide the same flavor and texture as fresh ones. You can tell if an artichoke is fresh by looking at the leaves. Fresh artichokes should have tightly packed leaves that are green and vibrant. The stems should be firm, and the artichoke should feel heavy for its size.
2. Prep the Artichokes Properly
Prepping your artichokes is essential to get the most out of their flavor and texture. Start by trimming the edges of the artichoke stem and cutting the top off the artichoke. Remove the outer leaves that are tough or discolored. Cut the artichoke in half lengthwise and remove the choke, which is the fuzzy portion that covers the heart. Afterward, slice the artichoke thinly and place it in a bowl of cold water with lemon juice to prevent discoloration.
3. Choose the Right Bread
The bread you use for your artichoke bruschetta should be fresh, crusty, and have a good texture. Italian or French bread is an excellent choice since it has a chewy, spongy texture that soaks up the toppings well. Cut the bread into slices and brush them with olive oil before grilling or toasting.
4. Use High-Quality Olive Oil
The olive oil you use in your artichoke bruschetta recipe should be extra virgin, high-quality, and fruity. The oil is a critical ingredient that ties all the flavors together. High-quality olive oil adds a subtle richness and depth to the toppings, so it is worth investing in a quality bottle.
5. Experiment with Different Toppings
Artichoke bruschetta recipes can be adapted to suit your tastes and preferences. Experiment with different toppings to find your perfect combination. Some popular toppings include sundried tomatoes, feta cheese, olives, garlic, and herbs such as basil or oregano. You can also add some acidity to the mix with a sprinkle of lemon zest or a few drops of balsamic vinegar.
6. Don't Overload the Bread
One common mistake when making artichoke bruschetta is to overload the bread with toppings. It's important to balance the flavors and ensure that each slice has a good ratio of bread to toppings. Spread the toppings thinly and evenly over the bread so that they melt into each bite.
7. Pay Attention to Cooking Time
The cooking time for your artichoke bruschetta will depend on the toppings you use and the bread. To avoid undercooked or burnt toppings, keep a close eye on the oven or grill. When the toppings are bubbling and the bread is crisp, it's time to take it out. Remove from the oven or grill and let it cool for a few minutes before serving.
8. Serve at the Right Temperature
Artichoke bruschetta should be served at the right temperature to maximize the flavors. The toppings should be hot and bubbly, while the bread should be warm and slightly crispy. Serve immediately after cooking or keep warm until ready to serve.
9. Use Garnishes
Garnishes can make your artichoke bruschetta look even more appetizing and delicious. Some garnish ideas include chopped parsley, shaved Parmesan cheese, or a drizzle of olive oil. These small touches add color, texture, and flavor to your dish.
10. Don't Be Afraid to Experiment
Finally, don't be afraid to experiment with different recipes and flavors. There is no "right" way to make artichoke bruschetta. Try new ingredients, use different bread, and experiment with flavors to find your favorite combination. With these tips, you will be able to make a delicious and appetizing artichoke bruschetta every time.
