PANKO-CRUSTED SALMON

Panko-Crusted Salmon image

Provided by Ina Garten

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 9

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

Yield 4 serving(s)

Number Of Ingredients 22

1 large cucumber, peeled, seeded and thinly sliced
3 plum tomatoes, peeled, seeded, and cut in thin wedges
4 (6 -7 ounce) boneless skinless salmon fillets
2 -3 teaspoons vegetable oil
1 cup cooked drained chickpeas
1/2 medium russet potato, peeled and finely chopped (1/2 cup)
1/2 cup coarsely chopped flat leaf parsley
1/2 cup chopped leeks or 1/2 cup green onion
4 tablespoons butter, cut in pieces
1/2 cup dried breadcrumbs
1 teaspoon ground coriander
1 teaspoon ground cumin
salt and black pepper
1 cup cooked drained chickpeas
1/4 cup tahini (sesame seed paste)
1/2 cup fresh lemon juice
3 tablespoons olive oil
2 -3 garlic cloves, peeled
1/3 cup fresh lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon sugar
1/3 cup olive oil

Steps:

  • For the falafel crust, combine the chickpeas, potato, parsley, leek and/or green onions and butter in a food processor and pulse until the mixture is finely chopped and well mixed. Add the bread crumbs, coriander and cumin and pulse to mix. Add salt and pepper to taste. Transfer to a bowl and set aside.
  • For the hummus, wipe out the food processor bowl. Add the chickpeas, tahini, lemon juice, olive oil and garlic. Process until smooth, then season to taste with salt and pepper. Transfer the hummus to a bowl, cover and chill until needed.
  • Combine the vinaigrette ingredients in a large bowl and whisk to mix. Season to taste with salt and pepper. Add the cucumber and tomato and toss well. Chill until needed.
  • Preheat the broiler and set the oven rack 4 to 6 inches below the element. Season the salmon fillet pieces with salt and pepper. Heat the oil in a heavy ovenproof skillet, preferably nonstick. When hot, add the salmon and sear until browned, 1 to 2 minutes per side. Spread the top of each fillet piece with some of the falafel crust mixture, transfer the skillet to the oven and broil the salmon until the crust is bubbly and the salmon is cooked to taste, about 2 minutes for medium or 3 to 4 minutes for well done. (If the crust is browned before the salmon is cooked, turn off the broiler, close the oven door and let the salmon sit for a minute or two to continue cooking.).
  • To serve, spoon some of the hummus onto the center of individual plates and spoon the tomato and cucumber salad around. Set the salmon pieces on the hummus and serve right away.

Diets may come and go, but seafood remains one of the healthiest and most versatile sources of protein available. And when it comes to seafood, there's nothing quite like salmon. Not only is it leaner and lower in calories than other types of fish or meat, it’s also packed with essential vitamins and nutrients, including heart-healthy omega-3 fatty acids. If you’re looking to mix up your salmon routine and add some variety to your meals, you might want to try making Aquagrills Falafel Crusted Salmon Recipe. This recipe offers a tasty twist on a classic dish that is sure to impress your family and friends. But before you put on your apron, it’s important to know a few key tips and tricks to take your salmon recipe game to the next level.

Tip #1: Choose the right salmon cut

Not all salmon cuts are created equal, and different cuts can result in different cooking times and textures. When it comes to this particular recipe, it’s best to use salmon fillets that are of even thickness to ensure even cooking. You'll also want to pay attention to the type of salmon. For this recipe, it's recommended to use wild-caught salmon, which has a firmer texture and stronger taste than farm-raised salmon.

Tip #2: Spice up your falafel crust with herbs and seasonings

One of the keys to creating a successful falafel crusted salmon recipe is to season the crust well. A falafel crust is already seasoned, but you can take it up a notch with additional fresh herbs and spices. For example, you might try adding a pinch of cumin or coriander to the falafel crust mix for an added burst of flavor. Or, you could finely chop fresh herbs like parsley, dill, or cilantro and mix them into the falafel crust for a bright, herbaceous flavor.

Tip #3: Get your pan hot

One common mistake people make when cooking salmon is not getting the pan hot enough before adding the fish. Starting with a hot pan is key to creating a crispy skin on the salmon and ensuring that it cooks evenly all the way through. Before you add your salmon to the pan, heat it over medium-high heat until it’s hot enough to sizzle when you add a drop of water. Once the pan is hot, add the salmon and let it cook for a few minutes before flipping it over.

Tip #4: Don't overcook the salmon

Salmon is a delicate fish that can dry out quickly if it’s overcooked. The key to cooking salmon is to remove it from the heat before it’s fully cooked through, as it will continue cooking for a few minutes after you take it off the heat. For this recipe, the salmon should be cooked to an internal temperature of 145°F. Use a meat thermometer to check the temperature by inserting it into the thickest part of the fillet.

Tip #5: Serve with a squeeze of fresh lemon

One of the simplest and most delicious ways to enhance the flavors of this dish is by squeezing some fresh lemon juice over the salmon just before serving. The acidity of the lemon will help cut through the richness of the salmon and falafel crust, making for a balanced and flavorful meal. Other toppings or sauces like tzatziki or a favorite salsa can also be added for flavor and texture.
Conclusion
Making Aquagrills Falafel Crusted Salmon Recipe is a great way to add some variety to your salmon dinner routine. By keeping these tips in mind, you can ensure that your salmon turns out perfectly cooked and bursting with flavor. So why not give it a try next time you're craving a healthy and delicious meal?
