Slow-roasted Honey Glazed Pork Recipe by Tasty image

Here's what you need: soy sauce, granulated sugar, garlic, scallions, boneless, skin-on pork shoulder, asparagus, yukon potatoes, olive oil, kosher salt, freshly ground black pepper, dark brown sugar, honey

Provided by Tasty

Categories     Dinner

Yield 4 servings

Number Of Ingredients 12

1 cup soy sauce, plus 2 tbsp, divided
¼ cup granulated sugar
3 tablespoons garlic, chopped
¼ cup scallions, chopped
2 lb boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 yukon potatoes, diced
2 tablespoons olive oil
kosher salt, to taste
freshly ground black pepper, to taste
1 cup dark brown sugar
½ cup honey

Steps:

  • In a large bowl, combine 1 cup (240 ml) of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.
  • Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.
  • Place the pork in the marinade and toss to coat evenly. Marinate for one hour.
  • Preheat the oven to 275ºF (140°C).
  • On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet.
  • Bake 1 to 1 ½ hours, depending on the weight of the pork.
  • Raise the heat of the oven to 500ºF (260ºC).
  • In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth.
  • Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top.
  • Bake for 20 minutes until sugar is dark brown and caramelized, and the top of the pork is crispy.
  • Remove the vegetables and pork from the tray, making sure to save all the juices.
  • Slice the pork into ½-inch (2 ½ cm) slices, and plate with the roasted vegetables. Spoon the reserved pan juices on top of the pork.
  • Enjoy!

Yield Makes 8 servings

Number Of Ingredients 10

4 slices firm white sandwich bread
1/2 cup chopped shallots (3 large)
2 tablespoons unsalted butter
1/2 lb firm-ripe apricots (3 large), cut into 1/3-inch pieces
2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (3- to 3 1/2-lb) center-cut boneless pork loin roast (3 1/2 inches in diameter), not tied
2 tablespoons vegetable oil
1/2 cup water

Steps:

  • Preheat oven to 375°F.
  • Make stuffing:
  • Cut just enough bread into 1/3-inch pieces to measure 1 cup and spread evenly in a shallow baking pan. Toast bread in middle of oven, stirring occasionally, until golden, about 10 minutes, then transfer to a bowl. Leave oven on (for pork).

  • Stuff and roast pork:
  • Make a hole for stuffing that runs lengthwise through pork loin: Beginning in middle of 1 end of roast, insert a sharp long thin knife lengthwise toward center of loin, then repeat at opposite end of loin to complete incision running through middle.
  • Open up incision with your fingers, working from both ends, to create a 1 1/2-inch-wide opening, then pack with all of stuffing, pushing from both ends toward center.
  • Pat pork dry and and season well with salt and pepper.
  • Heat oil in a 12-inch heavy skillet over high heat until very hot and just smoking, then brown pork on all sides, about 2 minutes. Transfer to a roasting pan and roast in middle of oven until a meat thermometer inserted diagonally 2 inches into meat (avoid stuffing) registers 160°F, 45 to 50 minutes. Transfer to a cutting board and let stand 20 minutes.
  • While loin is standing, straddle roasting pan across 2 burners. Add 1/2 cup water and deglaze pan by boiling over moderate heat, scraping up brown bits.
  • Slice meat and serve with sauce.

Apricot stuffed pork shoulder with soy honey glaze is a delicious dish that blends the sweetness of apricots with the savory flavor of pork. This dish is perfect for a weekend dinner or a special occasion meal. However, making this dish can be challenging if you are not familiar with the cooking techniques and ingredients required. In this article, we will be discussing some valuable tips that can help you create a perfect apricot stuffed pork shoulder with soy honey glaze recipe.

Tip 1: Choose the Right Pork Shoulder Cut

The first tip for making a perfect apricot stuffed pork shoulder is to choose the right cut of pork. Pork shoulder is the best cut for this recipe as it has the right amount of fat and connective tissue, which makes it tender and flavorful when cooked slowly. Look for pork shoulder with a good layer of fat, which will help keep the meat moist while cooking.

Tip 2: Prepare the Apricot Filling

The filling is what makes this dish special. To prepare the apricot filling, you will need to chop dried apricots and mix them with breadcrumbs, chopped onions, garlic, and herbs. You can also add some grated cheese for extra flavor. The filling should have a moist consistency, so you may need to add some water or chicken stock to it. Once you have prepared the filling, let it cool down before stuffing it into the pork shoulder.

Tip 3: Tie the Pork Shoulder Properly

Tying the pork shoulder is an essential step to ensure that the filling does not fall out during cooking. To tie the pork shoulder, you will need kitchen twine. Lay the pork shoulder on a flat surface and stuff the apricot filling into the cavity. Use the twine to tie the pork shoulder tightly, making sure that the filling is secured inside. You can also use toothpicks or skewers to hold the filling in place. A properly tied pork shoulder will cook evenly and retain its shape.

Tip 4: Slow Cook the Pork Shoulder

Slow cooking is the key to achieving a tender and succulent pork shoulder. You can cook the pork shoulder in the oven or on a grill. To cook in the oven, preheat it to 350°F. Place the pork shoulder in a roasting pan and cover it with foil. Cook the pork shoulder for about 3 hours, or until the internal temperature reaches 160°F. Remove the foil and cook for an additional 30 minutes to allow the glaze to caramelize. If you are using a grill, set it to medium heat. Place the pork shoulder on the grill and close the lid. Cook for about 2 hours, turning the pork shoulder occasionally. Brush the glaze over the pork shoulder during the last 30 minutes of cooking.

Tip 5: Make the Soy Honey Glaze

The soy honey glaze is what gives this dish its unique flavor. To make the glaze, you will need soy sauce, honey, brown sugar, ginger, garlic, and rice vinegar. Combine all the ingredients in a saucepan and bring to a boil. Reduce the heat and simmer for about 10-15 minutes, or until the glaze thickens.

Tip 6: Let the Pork Shoulder Rest

After cooking, let the pork shoulder rest for about 10 minutes before carving. This will allow the juices to redistribute and ensure that the meat is moist and tender. If you cut into the pork shoulder too soon, the juices will escape, leaving the meat dry and tough.

Conclusion

Making apricot stuffed pork shoulder with soy honey glaze is a perfect way to impress your guests and create a memorable meal. By following these valuable tips, you can ensure that your dish is flavorful, tender, and succulent. Remember to choose the right pork shoulder cut, prepare the apricot filling, tie the pork shoulder properly, slow cook it, and make the soy honey glaze. These tips will make your cooking experience effortless and your meal unforgettable.
