Time 35m

Number Of Ingredients 11

1 tablespoon grated orange zest plus 1/4 cup fresh orange juice plus orange wedges for serving
1 garlic clove, minced
1/2 teaspoon red-pepper flakes
1/4 cup vegetable oil
1 1/4 pounds skirt steak, cut into 4 pieces
Coarse salt and ground pepper
4 cups cooked long-grain white rice
2/3 cup low-sodium chicken broth
1/2 cup dried apricots, chopped
1 teaspoon white-wine vinegar
2 cups arugula, trimmed, washed, dried, and roughly chopped

Steps:

  • In a zip-top bag, combine orange zest, garlic, red-pepper flakes, vegetable oil, and steak pieces. Seal and shake bag to evenly coat steak. Marinate at least 8 hours (or up to 4 days).
  • Heat a large skillet over medium-high. Remove steak from marinade and shake to remove excess; season with salt and pepper and cook until medium, about 4 minutes per side (work in batches, if necessary). Add juice and swirl pan to pick up browned bits from bottom. Transfer steak and juice to a plate and tent with foil. Let rest 10 minutes; thinly slice against the grain.
  • Wipe pan clean and add rice, broth, apricots, and vinegar. Cook over medium-high until rice is warmed through and liquid is absorbed. Season with salt and pepper, remove from heat, and stir in arugula. Divide among four bowls, top with steak, and serve with orange wedges.

Categories     Main Dish Recipes     Roast Recipes

Time 3h45m

Yield 6

Number Of Ingredients 6

2 tablespoons vegetable oil
6 pounds beef brisket
1 onion, chopped
2 cloves crushed garlic
1 (1 ounce) package dry onion soup mix
1 pound dried apricots

Steps:

  • In a large heavy skillet, heat oil over medium high heat. When the oil is hot, brown the beef on all sides. If the brisket is too large, cut it in half first, and brown in two stages. Place the meat in a large Dutch oven with a lid.
  • Add onions to the drippings in the skillet. Saute over medium heat until the onions are beginning to brown. Stir in garlic, and cook for 2 or 3 more minutes. Pour over the brisket in the Dutch oven.
  • Empty one package of dry, instant onion soup mix over the browned onions and meat. Arrange all of the apricots on top of the soup mix. Pour enough water around outside of meat, not on top, to cover the sides of brisket. Cover.
  • Bake at 325 degrees F (160 degrees C) for 1 hour. Check liquid; if dish is starting to look dry, add a bit more water around meat. Cover, and cook another hour. Remove lid, and stir apricots into gravy. Leave uncovered, and cook for another hour. Stir gravy again, and add more water if the gravy is too thick. Meat should be very tender; if necessary, bake for an additional 1/2 hour. Cut across grain to serve.

Apricot round steak recipes are a great way to add some variety to your regular meals. Round steak is a leaner meat cut that can be tough, but by following some valuable tips, you can create a savory, juicy and tender apricot round steak dish.

What is Round Steak?

Round steak comes from the rear end of a cow, which is a well-exercised muscle group. The meat cut is lean and contains very little marbling, making it a healthier option. Round steak is usually a cheap cut because of its toughness and requires cooking techniques that help tenderize it.

Tips for Tenderizing Round Steak

  1. Marinating: Marinating the round steak with acidic liquids such as lemon, vinegar or wine can help tenderize the meat. The acidity breaks down the tough fibers and helps absorb the flavors of the marinade.
  2. Pounding: Using a meat mallet or a rolling pin to pound the round steak can break down the muscle fibers, making it more tender. However, it’s important to cover the meat with plastic wrap or parchment paper to avoid tearing the steak.
  3. Braising: Braising, which involves cooking the meat in liquid over low heat for an extended time, helps break down the collagen in the meat, resulting in a juicy and tender texture.
  4. Cutting Against the Grain: Cutting the meat against the grain, which means perpendicular to the muscle fibers, makes the steak tender as it cuts through the muscle fibers.

Choosing the Right Apricots

When choosing apricots for your recipe, it’s essential to select ripe ones that are in season and have a rich flavor. Ripe apricots have a fragrant smell and are slightly soft when pressed, but not mushy. If fresh apricots are not in season or not available, you can use canned apricots, but make sure that they are preserved in their natural juice and not in syrup.

Flavor Combinations

Apricot is a versatile fruit that goes well with different flavors. Here are some flavorful combinations that you can use when preparing your apricot round steak recipe:
  • Apricot and Rosemary: The woody and fragrant flavor of rosemary pairs well with sweet and tart apricots.
  • Apricot and Thyme: Thyme adds a sweet and herbal flavor that complements the sweet taste of apricots.
  • Apricot and Garlic: Garlic adds a pungent and savory taste to the sweet and fruity flavor of apricots.
  • Apricot and Soy Sauce: Soy sauce adds a salty and umami taste that complements the sweet and tangy flavor of apricots.
  • Apricot and Ginger: Ginger adds a fresh and spicy taste that complements the sweet and tangy flavor of apricots.

Cooking Methods

Here are some cooking methods that you can use when preparing your apricot round steak recipe:
  1. Grilling: Grilling the steak can add a smoky flavor and a charred exterior while keeping the inside of the steak juicy and tender. Brush the apricot glaze during the last few minutes of grilling.
  2. Baking: Baking the steak in the oven can create a crispy exterior and juicy interior. Brush the apricot glaze before baking and baste the meat with the glaze every 10-15 minutes.
  3. Sautéing: Sautéing the steak can create a crispy exterior while keeping the inside of the meat tender. Brown the steak on both sides and reduce heat, add apricot glaze, cover and simmer until the meat is fully cooked.
  4. Slow-Cooking: Slow-cooking the steak can create a melt-in-your-mouth texture that is juicy and tender. Brown the steak on both sides, add apricot glaze and other ingredients, and cook on low for 6-8 hours.

Side Dishes

When serving apricot round steak, you can complement the dish with some side dishes that will enhance the flavor profile. Here are some side dishes that you can add to your meal:
  • Rice Pilaf: The nutty and flavorful rice pilaf pairs well with the sweet and tangy taste of apricot round steak.
  • Roasted Vegetables: Roasting vegetables such as potatoes, carrots or broccoli can add a savory and hearty dimension to the meal.
  • Salad: A fresh and crispy salad with a light dressing can balance the sweetness of the apricot round steak.
  • Grilled Peaches: Grilling peaches can enhance their sweetness and pair well with the apricot flavor of the steak.

Conclusion

Creating a delicious and tender apricot round steak recipe requires some valuable tips such as marinating, pounding, braising and cutting against the grain to tenderize the meat. Choosing ripe and in-season apricots and combining them with different flavors such as rosemary, thyme, garlic, soy sauce or ginger can add a unique taste to your dish. Selecting the right cooking method such as grilling, baking, sautéing or slow-cooking can also affect the texture and flavor of the meat. Finally, complementing the dish with some flavorful side dishes such as rice pilaf, roasted vegetables, salad or grilled peaches can enhance the overall meal experience.
