APRICOT GLAZED GRILLED CHICKEN

Apricot Glazed Grilled Chicken image

We really like Apricot Chicken. In the summer I hate to heat up the house. DH made this for a cookout. Absolutely delicious! **There is also a variation in the directions for Asian Glazed Chicken. *PLEASE NOTE!* For easier clean up I would suggest using a grill pan or aluminum to cook the chicken on. Found this recipe in Cooking Light.

APRICOT-BALSAMIC GLAZED AND GRILLED CHICKEN

Apricot-Balsamic Glazed and Grilled Chicken image

From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Her recipe called for apricot preserves, but I'm using up MIL's Peach Jam, and we loved it just fine. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly.

1/2 cup apple juice or 1/2 cup cider
1/4 cup apricot preserves or 1/4 cup peach preserves

4 chicken breast halves

Steps:

  • Preheat grill to medium-high, brush off the grates to remove crusty, gritty stuff.
  • While that's heating up, bring preserves and vinegar to a boil in a medium saucepan; lower the heat and simmer until thick and syrupy (7-8 minutes or longer).
  • While THAT's cooking, drizzle oil over the chicken (on a plate or in a bowl); season with S & P; grill until cooked through (about 6 minutes per side).
  • Remove chicken from grill to a serving platter, drizzle jam-vinegar mixture over the meat and serve!
  • We had this with potato wedges baked in foil on the grill.
  • PLANNED OVERS --
  • Use any leftovers to make sandwiches for lunch the next day, or cut into bite-size pieces and add to a "grilled chicken" salad. Delicimosio!

Apricot glazed grilled chicken recipes have become increasingly popular in recent years due to the sweet and tangy flavor combination. This dish is a perfect summer meal for backyard barbecues or even a quick weeknight dinner.

Ingredients

The ingredients needed for this recipe vary but typically include:
1. Chicken Breast
Chicken breast is the most commonly used protein in an apricot glazed grilled chicken recipe. Boneless, skinless chicken breasts are perfect for this dish as they cook quickly and absorb flavors well.
2. Apricot Jam or Preserve
Apricot jam or preserve is the star of this dish. It provides the sweetness and tanginess of the glaze.
3. Soy Sauce
Soy sauce is added to the glaze to provide saltiness and some depth of flavor.
4. Garlic
Garlic is used for a touch of spice and to balance out the sweetness of the apricot glaze.
5. Olive Oil
Olive oil is used to marinate the chicken and prevent it from sticking to the grill.

Method

The method for apricot glazed grilled chicken is simple and easy to follow.
1. Prepare the Chicken
Begin by preparing the chicken. Rinse and pat dry with a paper towel. Using a sharp knife, trim any visible fat or tendons.
2. Marinate the Chicken
Next, marinate the chicken. In a large bowl, combine olive oil, soy sauce, minced garlic, and black pepper. Mix well. Add the chicken breasts to the bowl and coat them with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
3. Make the Glaze
While the chicken is marinating, make the glaze. In a small saucepan, mix together the apricot jam and soy sauce. Heat the mixture over medium heat until it comes to a boil, stirring frequently. Lower the heat and let the mixture simmer for 5-10 minutes, or until it thickens.
4. Grill the Chicken
After the chicken has marinated, preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade. Place the chicken on the grill and cook for 5-6 minutes per side or until the internal temperature reaches 165°F.
5. Glaze the Chicken
Once the chicken is cooked, brush the apricot glaze generously on both sides of the chicken. Let the chicken cook for an additional 1-2 minutes on each side, or until the glaze has caramelized and the chicken is fully cooked.

Serving

Apricot glazed grilled chicken can be served with a variety of sides, including rice, vegetables, or a simple salad. Some people like to garnish the chicken with fresh herbs, such as parsley or cilantro.

Conclusion

Apricot glazed grilled chicken is a delicious and easy recipe that everyone will love. With the perfect combination of sweetness and tanginess, this dish is perfect for any occasion. Give it a try and discover why the world loves apricot glazed grilled chicken!

Grilled chicken is always a crowd-pleaser, but it can quickly become boring if you don't change up the flavor profile. One of the best ways to add some excitement to your grilled chicken is by creating a tantalizing apricot glaze that will elevate the dish to the next level. Below are some valuable tips to keep in mind when making apricot glazed grilled chicken recipes.

Choose the right type of chicken

To make delicious apricot glazed grilled chicken recipes, you'll need to start with quality chicken. The best cut of chicken to use is boneless, skinless chicken breasts as they cook evenly, quickly and won't overpower the apricot glaze. However, you could also use bone-in chicken, drumsticks, thighs or wings for a more rustic recipe.

Marinate the chicken with flavorful ingredients

For the chicken to absorb as many flavors as possible, it is advisable to marinate it for at least an hour or up to overnight in a mix of your preferred ingredients. Firstly, to ensure that the chicken is well seasoned, use salt and pepper or your preferred spices. Additionally, the marinade should contain an acid like vinegar or lemon juice, which can break down the fibers in the chicken to make it moist and tender.

Use ripe fresh apricots or aid with apricot jam

Fresh ripe apricots are the best option for creating a tangy and sweet apricot glaze. If you can't access ripe species, you can go for apricot jam, preferably homemade, to act as a base for the sauce. To make richer sauce, blend the apricot jam with white vinegar, soy sauce, garlic, ginger, and season accordingly. If you're using fresh apricots, remove the pits, chop them and blend them together with other ingredients.

Consider adding some heat

To add some depth of flavor to your apricot glaze, spice it up with hot peppers or chili flakes. The peppers could be grilled alongside the chicken breasts, and the added smoky flavor will intensify the dish. If you're not a fan of heat, you could replace them with smoked paprika or some warm spices like cinnamon or nutmeg.

Glaze during the final minutes of cooking

When grilling the chicken, you'll need to keep a close eye on it to avoid overcooking. It is essential to glaze during the last few minutes when the chicken is nearly ready to prevent the sauce from burning. Baste the sauce over both sides of the chicken before turning and flipping, every minute or so.

Keep an eye on the temperature of the grill

Ensure that your grill is pre-heated to 375-400 degrees Fahrenheit before placing the chicken on it. Additionally, keep an eye on the temperature of the grill to ensure that it remains the same throughout the cooking process. Any flare-ups should be contained as they can rapidly burn the chicken and the apricot glaze.

Let the chicken rest after grilling

It would be best if you let the chicken rest for at least five minutes after grilling. Allowing the meat to rest is crucial as it helps the chicken to retain the juices, locks in flavor, and makes it easier to cut without losing its shape or becoming messy.

In conclusion

Creating a delicious apricot glaze is a fantastic way to add flavor to grilled chicken to make it exciting and tantalizing. Observing the above tips while making apricot-glazed grilled chicken recipes will result in a perfectly seasoned, juicy and tender chicken dish that will leave everyone asking for seconds.
