Extra-virgin olive oil
12 to 14 ounces boneless, skinless chicken breast
Kosher salt and freshly ground black pepper

1/4 cup pearl barley
4 cups reduced-sodium chicken broth
1 bay leaf
1 carrot, finely chopped
1 rib celery, finely chopped
1 small zucchini, finely chopped

Steps:

  • Heat a grill pan over high heat for 5 minutes.
  • Rub a little olive oil all over the chicken breast and sprinkle all over with salt and pepper. Reduce the heat to medium-high and grill the chicken until cooked through, turning once, about 12 minutes. Set aside and keep warm.
  • Fill a small saucepan with 1/2 cup water, bring to a boil, add some salt, and cook the barley according to package instructions, until tender. Drain and rinse.
  • Bring the chicken broth and bay leaf to a simmer in a medium saucepan. Add the carrot, celery and zucchini. Cook until just tender, about 5 minutes. Discard the bay leaf.
  • Place the chicken breast on a cutting board and slice crosswise into thin slices. Spoon the vegetables and barley into serving bowls, then add the hot broth. Lay several slices of chicken over the surface of each bowl.

1 tablespoon canola oil
4 ounces cremini mushrooms, sliced
1 teaspoon kosher salt
2 carrots, peeled and thinly sliced
1 small yellow onion, thinly sliced
6 cups chicken broth
2 tablespoons fish sauce
One 5-ounce jar tamarind paste
4 heads baby bok choy, chopped
1 grilled chicken breast, thinly sliced
2 scallions, sliced, for garnish

Steps:

  • Heat the oil in a large stockpot over medium-high heat. Add the mushroom, salt, carrot and onion and saute until the vegetables begin to soften, about 3 minutes. Add the broth, fish sauce and tamarind, bring to a boil and then reduce the heat and simmer until the vegetables are fully cooked, about 10 minutes. Add the bok choy and chicken and continue to simmer until the bok choy is cooked and the chicken is heated through, about 5 minutes. Ladle the soup into bowls and serve with a sprinkling of scallions.

SOUTHWESTERN GRILLED CHICKEN SOUP
12 TO 14 oz grilled chicken
1/2 green pepper, diced
1/2 red pepper, diced
1 whole onion, diced
1 c corn
2 can(s) diced tomatoes
1 c cooked rice
1- 48 oz can tomato juice
1 can(s) black beans
3 Tbsp chili powder
salt pepper & garlic to taste

Steps:

  • 1. Season chicken with salt, pepper, and garlic then grill until chicken is completely cooked, dice into cubes
  • 2. Simmer tomato juice, add onions, peppers, tomatoes, corn, seasonings simmer for approximately 35 to 45 minutes.
  • 3. Add already cooked rice and chicken during the last 10 minutes of cooking.
  • 4. Serve with cornbread , jalapeno peppers and sour cream.

2 tablespoons canola or vegetable oil
1 cup diced sweet yellow onion
1 red bell pepper (seeded and diced)
1 jalapeno pepper (seeded and diced)
1 teaspoon minced garlic
2 tablespoons all-purpose flour
5 cups low-sodium chicken broth
14 ounces canned fire roasted diced tomatoes (undrained)
14 ounces canned small white beans (navy beans) (rinsed and drained)
14 ounces canned black beans (rinsed and drained)
2 cups chopped fully cooked chicken (rotisserie chicken works great)
1 tablespoon smoked paprika
2 teaspoons chili powder
2 teaspoons cumin
2 teaspoons oregano

Steps:

  • Heat the oil in a Dutch oven over MEDIUM heat. Add the onion, bell pepper, and jalapeno pepper and cook, stirring occasionally, for 4 to 5 minutes, or until softened. Add the garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle the flour over the mixture and cook, stirring for another minute or two. Slowly pour in the chicken broth, stirring as you add it until smooth and just slightly thickened. Add the diced tomatoes (with juice), beans, chicken, and all the seasonings. Increase the heat and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for 15 minutes.
  • Remove the lid and add the pieces of cream cheese. Stir until completely melted and the soup is smooth. Add the frozen corn and cook, uncovered, for 2 or 3 minutes. Squeeze in the juice from the lime and remove from the heat. Taste and season with additional salt and freshly ground black pepper, if desired.
  • Spoon into bowls and add the toppings of your choice.

4 -5 carrots
1 sweet onion
4 -5 fingerling potatoes
1 stalk celery
2 -3 chicken breasts
3 cups chicken stock
1/4 cup hot sauce
1 1/2 cups cream
1 cup beer (Rickard's Red)
salt and pepper
crumbled blue cheese, for topping

Steps:

  • Coat grill with olive oil and pre-grill carrots, sweet onion, fingerling potatoes and chicken breasts. Cook through three quarters of the way to allow final cook in the soup. Cool and chop all into hearty sized cubes.
  • In a large pot combine chicken stock, hot sauce, cream and beer. Stir well.
  • Add chopped ingredients and simmer soup for 1 hour.
  • To thicken soup so consistency is more like a stew, stir in a little flour.
  • Serve in bowls topped with crumbled blue cheese.
  • Pair with a beer and enjoy.

This soup has all the classic flavors (celery, carrot, parsley) but has been updated for today's cooks, who can't easily buy the stewing hen and packet of soup vegetables that old-fashioned recipes used to call for. A whole bird provides the right combination of fat, salt and flavor. Don't be tempted to use all white meat, as the flavor won't be as round. Because making soup involves the bones and deep tissues of the bird, it is particularly reassuring here to use the highest-quality poultry you can find. This method produces a fragrant, golden, savory soup you want to eat all winter long; it's a perfect backdrop for noodles, rice or matzo balls.

1 chicken, 3 to 3 1/2 pounds, with skin, cut up
3 stalks celery, with leaves, cut into chunks
2 large carrots, cut into chunks
2 yellow onions, peeled and halved
1 parsnip or parsley root (optional)
About 1 dozen large sprigs parsley
About 1 dozen black peppercorns
2 bay leaves
2 teaspoons kosher salt, more to taste
3 tablespoons reserved chicken fat, more if needed
3 leeks, trimmed, halved lengthwise, rinsed and sliced crosswise into thin half-moons
3 large carrots, peeled and cut into small dice
Kosher salt and ground black or white pepper
Egg noodles (fresh or dried), such as packaged wide noodles, spaetzle, fettuccine or pappardelle cut into short lengths (see note)
Finely chopped herbs, such as parsley, scallions, dill or a combination

Steps:

  • Place the chicken, celery, carrots, onions, parsnip (if using), parsley, peppercorns, bay leaves and salt in a large soup pot and cover with cold water by 1 inch.
  • Bring to a boil over high heat, then immediately reduce the heat to very low. Adjust the heat until the soup is "smiling": barely moving on the surface, with an occasional bubble breaking through. Cook uncovered, until the chicken is very tender and falling off the bone, 1 to 1 1/2 hours.
  • When cool enough to handle, use tongs to transfer chicken from the pot to a container. Taste the broth and continue to simmer it until it is concentrated and tasty. Strain broth through a fine sieve (or a colander lined with cheesecloth) into a separate container. Discard all the solids from the strainer (or reserve the vegetables, chill and serve with vinaigrette, if you wish).
  • Refrigerate chicken pieces and broth separately for at least 8 hours (or up to 3 days), until a thick layer of yellow fat has risen to the top of the broth.
  • When ready to finish the soup, use your fingers to separate chicken breast meat from bones and skin. Discard bones and skin. Use two forks to pull the breast meat apart into soft chunks, or use a knife and cut into bite-size pieces. (Reserve dark meat for another use.)
  • Skim chicken fat from top of broth and set aside. Place 3 tablespoons of the fat in a soup pot with a lid. Add leeks, stir to coat, and heat over medium heat until leeks begin to fry. Then reduce the heat to a gentle sizzle and cook, stirring often, until slightly softened, about 3 minutes.
  • Add carrots, sprinkle with salt, stir, and cover the pot. Cook until vegetables are just tender, about 5 minutes more. (Keep in mind that vegetables will continue to cook in the soup.) Do not brown.
  • Pour broth into pot with vegetables and heat to a simmer. Add noodles and simmer until heated through, soft and plumped with chicken broth. Add the breast meat, then taste broth and add salt and pepper to taste. For best flavor, soup should have some golden droplets of fat on top; if needed, add more chicken fat one teaspoon at a time.
  • Serve immediately, in a tureen or from the pot, sprinkling each serving with herbs.

I really prefer the taste of grilled chicken and thought it would work well and give a new twist to an old favorite. When I am not cooking for just my husband I use the marinade for the chicken for sliced mushrooms and then grill the mushrooms.

2 eggs
1 pinch salt
1/2 teaspoon baking soda
2 cups baby carrots, sliced
3 garlic cloves, minced

6 cups chicken stock (homemade or store bought)
3 tablespoons olive oil
4 boneless skinless chicken pieces
salt and pepper

Steps:

  • Noodles: Combine all ingredients in a medium bowl until they form a dough.
  • Roll dough thinly out on a lightly flour coated surface.
  • Cut dough into thin 2 inch pieces.
  • Set to the side and let dry.
  • Chicken: Combine salt, pepper, olive oil, garlic and chicken in a medium bowl and marinade for 2 hours.
  • Place chicken on a hot grill cooking all the way through and creating a nice char.
  • Soup: In a large pot bring olive oil to medium heat.
  • Add garlic, sweet yellow onion, celery and baby carrots and saute for about 10 minute.
  • Add 6 cups chicken stock.
  • Bring to a slow boil.
  • Add noodles.
  • Reduce heat to a simmer.
  • Simmer for 35-40 minute.
  • Add chicken.
  • Simmer for another 10-15 minute.
  • Serve and enjoy!
