1 cup shredded coconut
1 cup chopped nuts (I prefer pecans)

Steps:

  • Cream the flour, butter, and cream cheese into a ball and chill it.
  • Divide dough into 4 parts.
  • Roll each into a rectangle.
  • Spread mixture of apricot preserves, shredded coconut, and chopped nuts.
  • Roll up as a jellyroll.
  • Put on ungreased cookie sheet and bake 40 minutes at 350 degrees.

1 cup apricot jam, melted (melt just enough to make spreading easy)
1/2 cup confectioners' sugar
2 tablespoons whipping cream (unwhipped)
1 tablespoon fresh lemon juice

Steps:

  • Set oven to 400 degrees.
  • Line a baking sheet with parchment paper (you will most likely need two baking sheets for 16 pastries).

3 tablespoons sugar
1/2 cup butter, softened

1/4 teaspoon salt

FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 large egg yolks
2 teaspoons vanilla extract
1/4 cup apricot preserves
Confectioners' sugar

Steps:

1/4 cup powdered sugar
1 egg
1/2 teaspoon vanilla
2 cups apricots, chopped
1 cup water
1 cup white sugar

1 1/2 cups rolled oats
1 cup brown sugar
1 1/2 cups flour
