BLUE CORN-PINON PANCAKES WITH APRICOT-PINON COMPOTE

Blue Corn-Pinon Pancakes with Apricot-Pinon Compote image

Provided by Food Network

Categories     dessert

Time 40m

Yield 4 servings

Number Of Ingredients 18

1 tablespoon unsalted butter
1/3 cup pine nuts
1 cup chopped fresh or dried apricots
1 to 2 tablespoons light corn syrup
1/4 teaspoon ground Mexican cinnamon (canela) or other ground cinnamon
1 drop pure almond extract
1 cup water
1 1/4 cups pine nuts
3/4 cup unbleached all-purpose flour
1/2 cup blue or other cornmeal
1 tablespoon sugar
3/4 teaspoon baking powder
3/4 teaspoon salt
2 tablespoons unsalted butter, melted
2 large eggs
1 1/4 cups milk
2 drops pure almond extract
Vegetable oil, for pan frying

Steps:

  • Prepare the compote: Warm the butter in a small skillet over medium heat. Stir in the pine nuts and saute until lightly toasted, about 2 minutes. Watch the nuts carefully; they will continue cooking off of the heat and can burn easily. In a saucepan, combine the apricots, corn syrup, cinnamon, and almond extract with 1 cup of water. Bring to a simmer over medium heat, reduce the heat to low, and cook until the sauce is fairly thick and spoonable, about 10 minutes. Stir in the pine nuts. Keep the compote warm or let it cool to room temperature.
  • Start the pancake batter, placing 3/4 cup of the nuts in a food processor and pulsing briefly until ground. Avoid processing the nuts so long that they turn to butter. Add the flour, cornmeal, sugar, baking powder, and salt and pulse to combine just until a coarse meal forms. Spoon the mixture into a large bowl and stir in the butter until it disappears. Add the eggs, milk, almond extract, and remaining nuts. Warm a griddle or a large heavy skillet over medium heat. Pour a thin film of oil onto the griddle. Pour or spoon out the batter onto the hot griddle, where it should sizzle and hiss. A generous 3 tablespoons of batter will make a 4-inch pancake. Make as many cakes as you can fit without crowding. Cook the pancakes until their top surface is covered in tiny bubbles but before all the bubbles pop, 1 to 2 minutes. Flip the pancakes and cook until the second side is golden brown, 1 to 2 minutes longer. Repeat with the remaining batter, adding a bit more oil to the griddle as needed. Serve the pancakes immediately, accompanied with the warm compote.

A dairy-free panna cotta using soya milk. Perfect texture and a blend of flavours make this dish hard to fault

Provided by CJ Jackson

Categories     Dessert, Dinner, Treat

Time 40m

Number Of Ingredients 8

3 level tsp gelatine (or veggie gelatine or agar agar)
500ml soya milk (we used So Good)
zest 1 lemon
1 vanilla pod , split
splash of rum brandy
50g golden caster sugar
350g ripe apricot
50g caster sugar

Steps:

  • Sprinkle the gelatine onto 3 tbsp water and soak for 5 mins. Scrape the seeds out of the vanilla pod into the pan and put the pod into the milk. Put the soya milk, zest, vanilla pod, sugar and rum into a pan. Heat until the liquid just comes to the boil (if using veggie gelatine, you'll need to bring it to the boil - check pack instructions), then remove from the heat and stir in the gelatine. Cool for 10 mins. If the gelatine clumps together, whisk thoroughly. Strain the milk mixture, then divide between 4 ramekins. Cover and refrigerate until set (approximately 2 hrs).

BUCKWHEAT SHORTCAKES WITH EARL-GREY APRICOT COMPOTE AND WHIPPED CREAM

Buckwheat Shortcakes with Earl-Grey Apricot Compote and Whipped Cream image

Provided by Alice Medrich

Categories     Cake     Tea     Dessert     Kid-Friendly     Apricot     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher     Small Plates

Yield 8 servings

Number Of Ingredients 18

For the cake:
1 cup plus 2 tablespoons (5 ounces) all-purpose flour
1/4 cup plus 2 tablespoons (1.75 ounces) buckwheat flour
1/4 cup granulated sugar
1 3/4 teaspoons baking powder, sifted if lumpy
1/2 teaspoon salt
1 cup heavy cream, plus extra for brushing
2 tablespoons unsalted butter, frozen at least 1 hour and grated on a box grater
Turbinado sugar, for sprinkling
For the filling:
1 cup (6 ounces) dried apricots, sliced in half lengthwise
2 Earl Grey teabags
1 vanilla bean, slit lengthwise
3 tablespoons honey
1 1/4 cups heavy cream
1 tablespoon granulated sugar
Special Equipment:
Stand mixer with whisk attachment, electric hand mixer, or whisk (for whipped cream), 2 1/4-inch round biscuit cutter or equally sized straight-sided glass

Steps:

  • Make the shortcakes:
  • Position a rack in the center of the oven and preheat the oven to 425°F. Line a baking sheet with two layers of parchment paper.
  • In a large bowl, thoroughly whisk the flours, sugar, baking powder, and salt. Make a well in the center and pour the cream into it (set the measuring cup aside) and add the grated frozen butter. Use a rubber spatula to push the dry ingredients from the sides of the bowl into the well, cutting and turning the mixture just until the dry ingredients are almost entirely moistened and the dough looks rough and shaggy. Gather the dough into a ball and knead it gently against the sides of the bowl five or so times, pressing loose pieces into the dough, until it just holds together (it should not be smooth) and the bowl is fairly clean.
  • Turn the dough out onto a lightly floured board and pat into a circle about 3/4-inch thick. Using the biscuit cutter or an overturned glass, and re-patting the dough as needed, cut the dough into 8 even rounds. Place them at least 1 inch apart on the baking sheet. Brush the tops with the cream left in the bottom of the measuring cup or with a little milk, and sprinkle generously with turbinado sugar.
  • Bake the shortcakes until the tops are just barely golden brown, 10 to 12 minutes. Immediately transfer to a wire rack to cool.
  • Make the filling:
  • Set a medium saucepan with 2 cups water over high heat and bring to a boil. Remove from heat, add tea bags, and let steep 3 minutes. Remove tea bags and add apricots, honey, and vanilla bean. Return to stove and bring to a simmer over medium-low heat; cook until the apricots are soft and the liquid has reduced to a thick syrup, 15 to 20 minutes. Remove vanilla bean.
  • Meanwhile, in the chilled bowl of a stand mixer fitted with the whisk attachment, or using a medium mixing bowl and a handheld electric mixer or a whisk, whip the cream, adding the sugar as it begins to thicken. Continue beating until it holds a soft shape-not too stiff. (The cream can be covered and refrigerated for up to several hours. If liquid separates from the cream, whisk briefly before using.)
  • Assemble the Dessert:
  • To assemble the shortcakes, gently pull each shortcake apart horizontally into two equal halves. Place the bottom halves on serving plates. Top each with a generous scoop of apricot compote (about 2 tablespoons) and a dollop of whipped cream. Cover with the tops of the biscuits and serve.

The compote can be made in a variety of ways, with or without additional ingredients, creating a custom flavor for the dessert. In this article, we’ll take a closer look at apricot compote recipes and discuss some of the ways in which you can customize the dish.

Ingredients

The primary ingredient in apricot compote is apricots. However, there are other ingredients that you can add to the recipe to create a unique flavor. Some of these ingredients include:
Sugar:
Adding sugar to the recipe will help to enhance the sweetness of the apricots. However, the amount of sugar needed will vary based on the tartness of the apricots you use.
Lemon Juice:
Lemon juice is commonly added to apricot compote recipes since its tangy flavor marries well with the sweetness of the apricots. Additionally, the acidity in the lemon juice helps to preserve the compote for longer.
Vanilla Extract:
Adding vanilla extract to the recipe can enhance the natural sweetness of the apricots and provide an extra layer of flavor.
Spices:
Adding spices such as cinnamon or nutmeg can create a more complex flavor profile for the compote.

Instructions

To prepare apricot compote, you’ll need to follow several steps:
Step 1: Wash the apricots
Start by washing the apricots in cold water. Use a clean towel to dry the apricots before proceeding.
Step 2: Cut the apricots
Use a sharp knife to cut the apricots in half. Remove the seed from the center of the apricot.
Step 3: Add the ingredients
Place the apricots in a pot, then add the remaining ingredients. Stir well to combine.
Step 4: Cook the mixture
Cook the mixture over medium heat, stirring occasionally, until the apricots have softened and the liquid has thickened.
Step 5: Serve
Serve the apricot compote warm or at room temperature. You can also chill the compote in the refrigerator and serve it cold.

Variations

There are many ways in which you can customize your apricot compote recipe. Below are a few ideas to get you started:
Add other fruits:
You can add other fruits such as strawberries or peaches to the recipe to create a mixed fruit compote.
Serve with ice cream:
Apricot compote tastes great over vanilla ice cream.
Serve with pancakes:

Apricots are a versatile fruit, often used in many recipes like jams, muffins, pies, and even as a compote. Apricot compote is a simple, yet delicious, dessert that can be enjoyed on its own or as a topping on ice cream or cake. The recipe involves cooking apricots with sugar and spices to create a thick, jam-like texture. Though the recipe may seem easy, there are a few essential tips that one must follow to make a perfect apricot compote.

Tip 1: Choose the right apricots

When making apricot compote, it is essential to choose the right type of apricots. The fruit should be ripe but not overripe. Overripe apricots tend to become mushy and do not hold their shape when cooked, resulting in a runny compote. Similarly, unripe apricots can taste sour and require additional sugar to sweeten the compote.
How to choose the right apricots?
  • Choose apricots that are firm but yield to gentle pressure.
  • Look for apricots that have a slight orange blush on the skin.
  • Avoid apricots with bruises, blemishes or soft spots.

Tip 2: Cut the apricots uniformly

Uniformly cut apricots ensure even cooking and a consistent texture. When cutting the apricots, make sure the slices are of the same thickness. If the pieces are too thick, they will take longer to cook, resulting in a firmer texture. Similarly, slices that are too thin can turn into a paste-like texture while cooking.
How to cut apricots uniformly?
  • Start by cutting the apricot in half, removing the stone.
  • Place the halves flat on a cutting board with the skin side down.
  • Proceed to cut the halves into slices of the same thickness.

Tip 3: Use the right amount of sugar and spices

Sugar and spices play a significant role in apricot compote recipes. They help to balance the tartness of the apricots, add flavor, and create a thick syrup. Using too much sugar can overpower the natural taste of the fruit, while using too little can result in a compote that is too tart. Similarly, adding too many spices can result in a strong, overpowering taste.
How much sugar and spices to use?
  • Use 1 to 1.5 cups of sugar per 4 cups of sliced apricots.
  • Add a pinch of salt to enhance the flavor.
  • Use 1 to 2 tablespoons of lemon juice to add a fresh, tangy flavor.
  • Add spices like cinnamon or nutmeg according to taste. Start with a small amount and adjust as needed.

Tip 4: Cook the apricots slowly

To make a perfect apricot compote, it is important to cook the fruit slowly. Cooking the fruit on high heat can cause it to break down too quickly, resulting in a mushy compote. Slow cooking allows the fruit to break down gradually, resulting in a thick, syrupy texture.
How to cook apricots slowly?
  • Place the sliced apricots in a heavy-bottomed pot.
  • Add sugar, spices, and lemon juice to the pot.
  • Stir the mixture until the sugar dissolves.
  • Cover the pot with a lid and cook on low heat, stirring occasionally.
  • Cook for approximately 30 minutes or until the mixture thickens and turns syrupy.

Tip 5: Store the compote correctly

After making a batch of apricot compote, it is important to store it properly to maintain its freshness and flavor. The compote should be stored in a well-sealed container in the refrigerator. The compote will last for up to two weeks when stored properly.
How to store apricot compote?
  • Allow the compote to cool completely before storing it.
  • Transfer the compote to an airtight container.
  • Label the container with the date.
  • Refrigerate the compote for up to two weeks.

Conclusion

Apricot compote is a delicious and versatile dessert that requires a few essential tips to create a perfect batch. Choosing the right apricots, cutting them uniformly, using the right amount of sugar and spices, cooking the fruit slowly, and storing the compote correctly are all essential steps to ensure a delicious batch of apricot compote. These tips will undoubtedly help you to create a perfect batch of apricot compote that will impress your family and friends.
