Provided by Valerie Bertinelli

Time 1h35m

Yield 8 servings, 2 cups sauce

Number Of Ingredients 16

Canola oil
1 cup finely chopped yellow onion (1 small onion)
1 tablespoon minced Fresno chile, seeds removed (1 chile)
1 tablespoon minced garlic (4 cloves)
One 13-ounce jar apricot jam
1/2 cup fresh orange juice (1 large orange)
1/4 cup apple cider vinegar
1/2 cup ketchup
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
16 bone-in, skin-on chicken thighs
Canola oil
Chopped fresh parsley, for garnish

Steps:

Pour in the orange juice and cider vinegar, bring to a simmer, and then add the ketchup, honey, Dijon and Worcestershire. Adjust the heat to medium-low and simmer, stirring often, until thickened, 15 minutes. Remove from the heat and let cool for 5 minutes.

Leftovers are great the next day, too! Just turn oven on 375° and heat chicken for 10-15 minutes. -Marcy Gallinger, Deer Park, Washington

CHIPOTLE & APRICOT GLAZED CHICKEN THIGHS

Chipotle & Apricot Glazed Chicken Thighs image

I recently tried this at a restaurant and attempted to duplicate tonight. It came out really good! You can really taste all of the flavors of both the glaze and the marinade. I like to make it healthier with boneless, skinless chicken thighs, but regular thighs make a nicer presentation. I am making this tomorrow night (1/15/10) for a birthday dinner....so I will post a picture :)

Apricot chicken thighs recipes are a popular and delicious way to cook chicken, combining sweet and savory flavors for a perfect balance. The recipe is usually made by marinating chicken thighs in a mixture of apricot jam, soy sauce, garlic, and other ingredients before grilling, baking or broiling them. The result is a tender, juicy, and flavorful chicken with a sticky glaze on which can be served with various sides.

The Ingredients

The key ingredient of apricot chicken thighs recipe is apricot jam or preserves. The sweetness of the jam complements the savory flavors of the spices and herbs used to flavor the marinade. Along with apricot jam, garlic, soy sauce or Worcestershire sauce, Dijon mustard, and honey or brown sugar may also be added to give additional flavor to the chicken's marinade. Some variations may include ginger, hot sauce, or red pepper flakes to make it a bit spicy. The chicken thighs used in the recipe are bone-in or boneless, skin-on or skinless, depending on the preference of the cook. Bone-in chicken is more flavorful because it adds extra depth to the sauce due to the marrow that seeps out.

The Preparation

The preparation of apricot chicken thighs recipe is relatively easy and straightforward. The first step is to mix the marinade ingredients in a bowl or ziplock bag. The next step involves marinating the chicken thighs for several hours to overnight in the refrigerator so that the flavors get infused into the meat. Once the marinating time is over, the chicken can be grilled, baked, or broiled according to the recipe instructions. Grilling and broiling give the chicken a slightly charred and crisp exterior, while baking produces a moister chicken with a slightly softer texture.

The Serving Suggestions

Apricot chicken thighs recipe is often served with a side of steamed rice or roasted potatoes that can help soak up the sweet and tangy sauce. Roasted vegetables, such as carrots, green beans or broccoli, can also be served as a side dish, or a fresh salad can also be offered to bring a refreshing contrast to the sweet chicken. A glass of white wine or a fruity cocktail can complement the dish and bring a perfect finish to the meal.

Variations

There are various ways to modify apricot chicken thighs recipes to your liking. For instance, pineapple, peach or mango preserves can be used in place of apricot jam to make the sauce tastier. You may also remove the sweetener, such as honey or brown sugar, and rely on using only the fruit preserves for a healthier option. In contrast, adding some vegetables to the marinade, such as red bell peppers or zucchini, can bring a bit more freshness to the dish.

Conclusion

In conclusion, apricot chicken thighs recipe is quick, easy, flavorful, and ideal for a family dinner or a party with friends. It's a perfect blend of sweet and savory flavors that can satisfy even the pickiest eater. By using variations in the ingredient ratios and the choice of herbs and spices, a cook can achieve a diverse range of textures and flavors that keep the dish exciting and fresh.
Apricot chicken thighs are a delicious and healthy dish that can be easily prepared at home. This dish is perfect for special occasions, family dinners, and friendly get-togethers. By learning how to make apricot chicken thigh recipes, you can impress your friends and family with your culinary skills. In this article, we will provide you with valuable tips on how to make the perfect apricot chicken thighs recipe. Tip 1: Choosing the Right Ingredients The key to making a delicious apricot chicken thigh recipe is selecting the right ingredients. You will need about 4-6 bone-in chicken thighs, 1 cup of apricot preserves, 1/4 cup of soy sauce, 2 cloves of minced garlic, 1 tablespoon of Dijon mustard, and 1 tablespoon of red wine vinegar. It is important to choose high-quality ingredients, as this will determine the taste and flavor of the dish. Tip 2: Choosing the Right Cooking Method There are several ways to cook apricot chicken thighs - baking, grilling, sauteing or slow cooking. Baking is the most common method and is ideal for busy weeknights or when cooking for a large group of people. To bake apricot chicken thighs, preheat your oven to 375°F. Place the chicken thighs in a large baking dish and mix the apricot preserves, soy sauce, garlic, Dijon mustard, and red wine vinegar in a bowl. Pour the mixture over the chicken thighs and bake for about 30-45 minutes, or until the chicken is cooked through. Grilling is another great method for apricot chicken thighs, especially during summer months. Preheat your grill to medium-high heat and grill the chicken thighs for about 10-15 minutes on each side. While the chicken is cooking, brush it occasionally with the apricot glaze to add more flavor. Sauteing is a quick and easy method that is ideal when you are short on time. Heat a large skillet over medium-high heat and add some oil. Once the oil is hot, add the chicken thighs and cook for about 5-7 minutes on each side, or until the chicken is cooked through. In a separate bowl, mix the apricot preserves, soy sauce, garlic, Dijon mustard, and red wine vinegar, and pour it over the chicken in the skillet. Cook for another 2-3 minutes until the sauce is heated through. Slow cooking is another method that brings out the flavors in this dish. Cut up onions and carrots and place them at the bottom of the slow cooker. Place the chicken thighs on top and season with salt and pepper. In a separate bowl, mix the apricot preserves, soy sauce, garlic, Dijon mustard, and red wine vinegar and pour it over the chicken in the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours. Tip 3: Seasoning the Chicken To add flavor to the chicken, it is important to season it with the right ingredients. You can season the chicken with salt and pepper, garlic powder or paprika, depending on your preference. Before cooking the chicken, allow it to marinate in the apricot glaze for at least 30 minutes, or overnight in the refrigerator. Tip 4: Preparing the Apricot Glaze The apricot glaze is what makes this dish unique and flavorful. To make the apricot glaze, mix the apricot preserves, soy sauce, minced garlic, Dijon mustard, and red wine vinegar in a small bowl. You can add a pinch of salt and pepper to taste, if needed. The glaze should be smooth and well-combined. Tip 5: Adjusting the Sweetness Apricot preserves can be quite sweet, which might not be suitable for some people's taste. To adjust the sweetness, you can add some honey, brown sugar, or maple syrup to the apricot glaze. This will add some depth and balance of flavor to the dish. Tip 6: Serving Suggestions Apricot chicken thighs can be served with a variety of side dishes, depending on your preference. You can serve it with roasted vegetables, mashed potatoes, rice pilaf, green beans, or a side salad.
