SWEET AND SPICY APRICOT BBQ CHICKEN THIGHS

- For the apricot BBQ sauce: Heat 1 tablespoon canola oil in a medium saucepan over medium heat. Add the onions and cook until soft, 3 to 4 minutes. Add the chile and garlic; cook an additional 2 minutes. Stir in the apricot jam; cook until the jam melts, 3 to 4 minutes more. Pour in the orange juice and cider vinegar, bring to a simmer, and then add the ketchup, honey, Dijon and Worcestershire. Adjust the heat to medium-low and simmer, stirring often, until thickened, 15 minutes. Remove from the heat and let cool for 5 minutes.
- Transfer the sauce to a blender and puree until smooth. Add salt to taste. Remove 1 cup for basting the chicken; reserve the rest for serving.
- For the chicken thighs: Preheat the oven to 375 degrees F. In a small bowl, stir together the smoked paprika, 1 tablespoon salt and 1 teaspoon pepper.
- Place the chicken thighs on two foil-lined baking sheets. Lightly coat the thighs with canola oil and sprinkle liberally with the spice mixture on both sides.
- Bake until the chicken is cooked through, 35 minutes. Turn the oven to broil. Baste the chicken with BBQ sauce and broil until the sauce has caramelized and an instant-read thermometer inserted into the chicken reads 160 degrees F, about 2 minutes. Remove to a platter, let rest for 5 minutes
- Sprinkle the chicken with parsley, and serve with the reserved BBQ sauce.

- Preheat the oven to 400 degrees F (200 degrees C). Arrange chicken thighs in an 8x12-inch baking dish.
- Combine apricot preserves, soy sauce, sherry, garlic, and ginger in a small bowl. Brush mixture over the thighs.
- Bake in the preheated oven, basting chicken with the preserve mixture 3 to 4 times, until juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the thickest part of the thighs should read at least 165 degrees F (74 degrees C).

- In a small bowl, combine the first five ingredients; rub over chicken. Place chicken, skin side up, on a rack in a shallow roasting pan. - Combine all but chicken and dried apricots.
- Mix well, set aside.
- Trim excess fat from chicken.
- Rinse chicken with cold water, pat dry.
- Place chicken in a 12 x 8 x 2" baking dish.
- Pour reserved apricot nectar mixture over chicken.

CHIPOTLE & APRICOT GLAZED CHICKEN THIGHS
I recently tried this at a restaurant and attempted to duplicate tonight. It came out really good! You can really taste all of the flavors of both the glaze and the marinade. I like to make it healthier with boneless, skinless chicken thighs, but regular thighs make a nicer presentation. I am making this tomorrow night (1/15/10) for a birthday dinner....so I will post a picture :)

- Mix together the marinade and place in a resealable bag with the chicken. Marinate for a few hours or up to over night (which I did on accident as our plans changed).
- Blend together all of the glaze ingredients.
- Heat a grill to medium high and place chicken on the grill (after you discard the remaining marinade). Brush the glaze on the chicken liberally each time you flip the chicken.
- Serve with your favorite side dish. I made a very basic green bean & carrot side with a mashed sweet potato dish.

- 1. Preheat oven to 375 degrees. Mix the apricot preserves, ginger paste, and soy sauce together in a small bowl and set aside.
- 2. Rinse chicken thighs and pat dry. Trim any excess skin. Season well with salt and pepper.
- 3. In a large, nonstick oven-proof skillet, melt 1 tablespoon butter over medium-high heat. Place chicken thighs skin side down and brown. Flip over and turn off burner.

- Line a 13x9 baking pan with foil. Arrange chicken in a single layer. Pour apricot glaze over chicken (not all of it; will need enough to baste twice). Arrange pieces skin side up. Bake, uncovered, 40-45 minutes or until done (175 in thickest part) and tops are browned, brushing with glaze two times during baking. Skim fat from pan juices; serve juices over chicken.
- Place oven rack in bottom third of oven. Preheat oven to 400. For glaze, combine spreadable fruit, honey, soy sauce, garlic, ginger, and cayenne. Heat over medium-low heat until spreadable fruit is melted. Remove from heat and stir in vinegar; cool.
CHICKEN THIGHS (OR PORK) W/SPICY APRICOT GLAZE
Steps:
- Preheat the grill to medium-high for direct heat. Coat the grill rack with a flavorless oil, such as canola. Place the chicken thighs in a large bowl and season with salt and pepper. In a small saucepan, stir apricot preserves, red wine vinegar, olive oil, jalapeño, garlic and red pepper flakes. Heat until melted. Remove 2 tablespoons of the apricot glaze and add to chicken thighs in the bowl. Toss to coat thighs. Set remaining glaze aside. Sprinkle the chicken with salt and pepper and place on the grill, skin-side down. Grill until you get nice grill marks on the skin side. Turn over and brush with some of the glaze. Close the lid on the grill and grill until the thighs are cooked through, about 25 to 30 minutes depending on how big the thighs are. Baste occasionally with more of the glaze if desired. The thighs are done when the internal temperature of the thickest part is 165-170 degrees. Remove the chicken thighs from the grill and transfer to a serving platter. Pour remaining glaze over the chicken and sprinkle with green onions and garnish with cilantro sprigs.
