Titanic (Shipwreck) Casserole image

An old timey recipe (that dates back to the 1940's - yes I know that is way after the Titanic sank) I just found & it sounds good!

Number Of Ingredients 12

2 large yellow onions, sliced
4 large baking potatoes, scrubbed & sliced (skin still on)
1 - 6 oz. can(s) tomato paste
- tomato paste can filled with water
1 - 8 oz can(s) tomato sauce
2 stalks - celery, chopped
1 teaspoon(s) garlic salt
1/4 teaspoon(s) pepper
2 cup(s) brown rice, cooked
3/4 pound(s) ground beef, browned
1 - 15 oz can(s) light red kidney beans, drained
2 cup(s) cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F. Place the sliced onions into a 9 x 13" baking dish. Top with potato slices.
  • In a mixing bowl, stir together the tomato sauce & the tomato paste + 1 paste cans worth of water. Pour half of the tomato sauce over the potatoes & onions.
  • Sprinkle the chopped celery over the top. Season with garlic salt & pepper.
  • Spread the cooked rice over the top of the celery & seasonings.
  • Combine the browned ground beef & kidney beans in a mixing bowl, top with the remainder of the tomato sauce. Spread the sauce over the entire dish with a pastry brush. Top with shredded cheese. Cover tightly with foil.
  • Bake for 40 - 45 minutes or until potatoes are done.
  • Serve as is or with side of corn or green beans.
