3 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice, ground
2 stick butter, softened
1 c brown sugar
1 c sugar
1 egg
2 c applesauce
1 c chopped nuts (i used pecans, toasted if desired)
1 c raisins
RUM GLAZE
2 Tbsp butter
1 c powdered sugar
1/2 tsp rum flavoring
3-4 tsp milk

Steps:

  • 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
  • 2. Combine flour, soda, cinnamon, and allspice. Set aside.
  • 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
  • 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
  • 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.

If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

1/2 cup shortening
1 cup sugar
2 eggs
1 cup raisins
1/3 cup walnuts
2 cups pastry flour
1 teaspoon baking soda

Steps:

  • First sift flour, spices and soda.
  • Then cream the shortening, add sugar gradually and eggs well beaten.
  • Add flour and spices alternately with the applesauce and beat throughly until smooth.
  • Dust raisins and nuts lightly with flour and stir in last.
  • Bake in a shallow, well greased pan about an hour in a 325 degree oven.
  • Ice with your choice or icing or frosting.
