1 (18 ounce) package spice cake mix (I use Duncan Hines or Betty Crocker)
2/3 cup milk
4 eggs
1/4 cup molasses
1 cup chopped walnuts (optional)
1 cup craisins or 1 cup dried fruit (optional)
1 (16 ounce) container prepared white frosting
2 tablespoons molasses

Steps:

  • Cake: Preheat oven to 350 degrees.
  • Grease and flour 13 x 9 pan.
  • I use Bakers Joy Spray.
  • In a large bowl combine cake mix, milk, eggs and molasses (and fruit or nuts if using).
  • Beat on low for 2 minutes.
  • Beat on high for 4 minutes.
  • Pour into prepared pan.
  • Bake for 35-40 minutes or until center of cake springs back when lightly pressed.
  • Cool in pan.
  • Frost when completely cool.
  • Frosting: In a medium bowl stir molasses into frosting until completely mixed.
  • Spread on cake.

1/4 cup cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon baking powder

1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 cup unsweetened applesauce
1/4 cup water
1/4 cup plain fat-free yogurt
2 egg whites, beaten
1/2 teaspoon almond extract
1/4 cup raisins
1/4 cup confectioners' sugar
1 teaspoon water

Steps:

  • In a large bowl, combine the first 8 ingredients. Combine applesauce, water, yogurt, egg whites, and almond extract. Stir into dry ingredients just until moistened. Fold in raisins.
  • Pour into a greased 8" square baking dish. Bake at 350 degrees for 25-30 minutes or until toothpick inserted near center comes out clean.

3/4 cup raisins
1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, cloves and nutmeg
1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.
