1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup fat-free milk
3 tablespoons canola oil
1 egg white
TOPPING:
1/4 cup quick-cooking oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Fill muffin cups coated with cooking spray three-fourths full., Combine topping ingredients; sprinkle over batter. Bake at 400° for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.

1 1/4 c oat bran
1 c whole wheat flour
2 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 Tbsp brown sugar
3/4 c unsweetened applesauce
3/4 c apple juice, frozen concentrate
1/4 c vegetable oil
2 large egg, whites
1 tsp vanilla extract
1/4 c chopped walnuts or pecans
1/4 c chopped apple

Steps:

  • 1. Preheat oven to 350.
  • 2. In a medium bowl, combine oat bran, whole wheat flour, cinnamon, baking powder, baking soda, and salt.
  • 3. In a large mixing bowl, whisk together brown sugar, applesauce, apple juice concentrate, oil, egg whites, and vanilla. Mix until combined well.
  • 4. Stir dry ingredients into wet ingredients. Mix well until no flour remains.
  • 5. Fold in finely diced apples and nuts of choice.

3/4 cup whole wheat flour
1 1/2 tsp baking powder (aluminum free)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp sea salt
2 tbsp finely ground flax seed mixed with 6 Tbsp water (or 2 eggs)
1/2 cup raw sugar
5 tbsp melted butter or shortening
1 cup chunky applesauce
1 chopped apple
Topping:
3 tbsp raw sugar
1/4 tsp cinnamon

Steps:

  • Preheat oven to 400 degrees. First put the flax seed in a coffee grinder or food processor and grind until fine. Mix with water and let sit about 5 minutes in a medium mixing bowl until thick. This replaces 2 eggs in this recipe. You can use preground flax seed meal, but fresh is so much better for you! Mix dry ingredients in bowl and set aside. Add sugar and applesauce to melted butter and let sit a minute if using raw sugar to partially dissolve. Add this to the flax seed (or eggs) and mix well. Stir in flour mixture until moist then add chopped apples. Fill paper lined muffin pan 3/4 full. Sprinkle 1/4 tsp of topping on each muffin. Bake 400 degrees 20 min. If using stoneware, bake 24 minutes.
