BANANA - APPLESAUCE - BLUEBERRY AND WALNUT FAT-FREE QUICK BREAD

Banana - Applesauce - Blueberry and Walnut Fat-Free Quick Bread image

I was looking for something more healthy for a quick breakfast or snack. This is a great moist quick bread that comes together quickly and husband thinks is good too. It's good plain or with a "touch" of peanut butter (a favorite of my husband) across the top. I divide this into two 8 x 4 loaf pans instead of one 9 x 5 pan. It bakes quicker, stays moist, and goes a bit farther without my husband thinking he's not getting enough too.

Provided by Linda Marie

Categories     Quick Breads

Time 45m

Yield 16 slices (from two loaves), 8-10 serving(s)

Number Of Ingredients 11

3 over-ripe bananas
2 tablespoons lemon juice
1/2 cup unsweetened applesauce (I've used up to a total of 1 cup of applesauce if the mixture seems too stiff or dry)
1/2 cup packed brown sugar
2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/8-1/4 teaspoon cardamom
1 cup fresh blueberries
1/2 chopped walnuts

Steps:

  • Pre-heat oven to 350.
  • Spray two 8 x 4 loaf pans with non-stick spray.
  • In large bowl, blend together bananas, lemon juice, applesauce and brown sugar. I use a hand-held blender, which purres everything quickly and evenly.
  • In another large bowl, wisk together dry ingredients.
  • Add to dry mixture blueberries and nuts and toss until flour coated. This helps to prevent the berries and nuts from settling to the bottom during baking.
  • Add flour-berry/nut mixture to the moist-banana mixture. Mix together by hand folding contents until all is moistened being careful not to overmix.
  • Divide final mixture into the two loaf pans, spreading contents evenly. Place in oven center for about 35 to 40 minutes, until tooth pick comes out clean and the tops are lightly golden brown. I've found the tooth pick test happens first but wait about 5 or so more minutes for the tops to brown.
  • Remove from oven and cool. Even better when served the next day. I cut the loaves into 1 inch thick slices, serving 2 per person.
  • I've also substitued coarsely chopped sweet cherries (1 cup) and cinnamon (1 tsp) for the blueberries and cardamom. Very, Very good too, for all those cherry lovers out there!

What is Applesauce Bread?

Applesauce bread is a type of quick bread that is made with applesauce as the main ingredient. It is a healthier alternative to traditional bread recipes, as it uses less oil and sugar. This bread is moist, flavorful, and perfect for snacking or breakfast.

History of Applesauce Bread

The use of applesauce in baking can be traced back to the early 1900s when sugar was a scarce commodity during World War I. Home cooks started using applesauce as a natural sweetener and binder in their baked goods. Applesauce bread became popular in the 1920s and 30s as a way to use up surplus applesauce and provide a quick, nutritious snack for families.

Benefits of Applesauce Bread

There are several benefits to making and eating applesauce bread:

  • Lower in fat: Applesauce can be used as a substitute for oil or butter in recipes, making the bread lower in fat and calories.
  • Nutritious: Applesauce is high in fiber and vitamin C, making this bread a healthier alternative to traditional baked goods.
  • Economical: Applesauce is often inexpensive, making this bread a budget-friendly option.
  • Easy to make: Applesauce bread is a quick bread that does not require yeast or rising time, making it a simple and convenient recipe to make.
Ingredients in Applesauce Bread

The ingredients in applesauce bread may vary slightly depending on the recipe, but some of the most common ingredients include:

  • All-purpose flour
  • Baking soda

Valuable Tips when Making Applesauce Bread Recipes

Applesauce bread recipes are a delicious option for breakfast, brunch or as a snack. The delightful blend of applesauce, spices and other ingredients give this bread a delicious taste and texture. Here are some valuable tips to keep in mind when making applesauce bread recipes.
1. Choose the Right Applesauce
The key ingredient in applesauce bread is, of course, applesauce! When choosing applesauce, be sure to select unsweetened or lightly sweetened applesauce. This will give the bread a pure and natural sweetness, without an overwhelming sugary flavor. Additionally, homemade applesauce can be used to add a personal touch and unique flavor.
2. Use Proper Measuring Techniques
Measuring ingredients accurately is crucial in ensuring the success of any bread recipe. Use measuring cups and spoons for both dry and liquid ingredients. Be sure to level off measurements and do not pack ingredients into the measuring cups. This will help to ensure the bread has the proper texture and flavor.
3. Consider Adding Spices
Applesauce bread tastes delicious on its own, but adding spices can enhance the flavor and make it even more delightful. Cinnamon and nutmeg are popular spices to add to applesauce bread. Other spices like ginger, cardamom or allspice can also be used to add a unique twist to the recipe.
4. Do Not Overmix
Bread dough should never be overmixed or kneaded. Overmixing can cause the bread to become tough and dense. When making applesauce bread, mix the ingredients until just combined. A few lumps in the batter are fine, as this will help to create a light and tender crumb.
5. Adjust the Sweetness
While most recipes call for a certain amount of sugar or honey, the sweetness can be adjusted to your personal preference. If you prefer a sweeter bread, add an extra tablespoon or two of sugar or honey. Conversely, if you prefer a less sweet bread, reduce the amount of sugar or honey called for in the recipe.
6. Use the Right Sized Loaf Pan
The size of the loaf pan can impact the texture and appearance of your applesauce bread. If the loaf pan is too small, the bread will spill over and become dense and undercooked in the middle. If the pan is too large, the bread will spread out and become dry and flat. Choose the right sized bread pan for your recipe to ensure the best results.
7. Allow the Bread to Cool Completely
After baking, allow the bread to cool completely before slicing. Cutting into the bread while it is still warm will cause it to crumble and fall apart. Additionally, allowing the bread to cool will help develop the flavor and texture of the bread.
8. Store Properly
To keep your applesauce bread fresh and delicious for longer, store it properly. Wrap the bread tightly in plastic wrap or aluminum foil and store at room temperature. Alternatively, freeze the bread for long term storage. When ready to enjoy, simply thaw the bread at room temperature and serve.
9. Experiment with Add-ins
Applesauce bread is a versatile recipe that can be customized with a wide variety of add-ins. Nuts, raisins, chopped apples, or even chocolate chips can be added to the bread for a unique flavor and texture. Be creative and experiment with different add-ins to create a delicious and unique loaf of bread.
10. Enjoy with a Variety of Toppings
Applesauce bread can be enjoyed on its own, but toppings can add another layer of flavor and texture. Butter, honey, jam, or even cream cheese can be spread on top of the bread for added flavor. Toasting the bread can also add a crunchy texture that pairs perfectly with the soft and fluffy bread. In conclusion, applesauce bread is a delicious and versatile recipe that can be customized to your personal taste preference. Following these valuable tips when making your next batch of applesauce bread can help ensure the best results every time.
