APPLE-RAISIN CINNAMON BUN PIE

Apple-Raisin Cinnamon Bun Pie image

There's more than meets the eye in this tricky pie. At first glance, it looks like a pan full of cinnamon buns, but cut into it and there's apple pie filling underneath! Big and little kids can help with measuring ingredients and even rolling out the dough (though parents should be nearby in case they need help).

Categories     dessert

Time 3h35m

Yield 6 to 8 servings

Number Of Ingredients 15

One 14-ounce package refrigerated rolled pie dough
3 tablespoons all-purpose flour, plus more for dusting
6 tablespoons unsalted butter, at room temperature
3/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/3 cup dark raisins
1/3 cup golden raisins
4 pounds mixed apples, such as Granny Smith, Golden Delicious and McIntosh
4 pounds mixed apples, such as Granny Smith, Golden Delicious and McIntosh
Juice of 1 lemon
1/2 teaspoon freshly grated nutmeg
Pinch kosher salt
1 large egg, lightly beaten
2/3 cup confectioners' sugar, optional
2 tablespoons milk, plus more if needed, optional

Steps:

  • Line a 9-inch pie plate with 1 piece of dough, and refrigerate until ready to assemble the pie.
  • Make the cinnamon-roll crust: Lay the remaining piece of dough on a lightly floured surface, and spread 2 tablespoons of the butter evenly on top. Combine 1/4 cup of the granulated sugar and 1 teaspoon of the cinnamon in a small bowl, and sprinkle evenly over the butter; gently press with your fingers to help the mixture adhere. Roll the dough up into a tight log. Trim and discard about 1 1/2 inches from each end, and cut the remaining log crosswise into 1/2-inch-thick pieces. Arrange the pieces, cut-side down, in a snug circle on floured parchment paper. Lightly dust the pieces with flour, then gently roll out into a 10-inch round. Slide the parchment onto a baking sheet, and refrigerate until ready to assemble the pie.
  • Put the dark and golden raisins in a medium bowl with hot water to cover. Let them soak until tender, about 5 minutes, then strain.
  • Make the filling: Peel and core the apples, cut them into 1/2-inch-thick slices and toss with the remaining 1/2 cup sugar and the lemon juice in a large bowl. Melt the remaining 4 tablespoons butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but hold their shape, 15 to 18 minutes. (The softer apples, like McIntosh, will get very soft and saucy.) Add the flour, the remaining 1/2 teaspoon cinnamon, and the nutmeg and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, stir in the raisins and let the filling cool completely. (The filling can be refrigerated, covered, for up to 2 days.)
  • Fill the dough-lined pie plate with the filling in an even layer. Invert the cinnamon-roll crust on top, and peel off the parchment. (It's OK if the individual rounds separate a bit in the process.) Pinch the crusts together. Fold the overhanging dough under itself, and crimp as desired. Brush with the egg, and refrigerate for 30 minutes.
  • Bake the pie: Place a baking sheet in the oven, and preheat to 400 degrees F. Set the pie on the hot baking sheet, and bake until the crust is golden brown and the filling is bubbling, about 50 minutes. (Tent loosely with foil if the top browns too quickly.) Transfer to a rack to cool slightly.
  • If using a glaze, whisk together the confectioners' sugar and milk in a bowl until smooth. (Add more milk if the glaze is too thick.) Drizzle over the pie.

Apple raisin pie recipes can be a great way to enjoy a sweet dessert that is perfect for any occasion. This pie offers a combination of sweet, tart, and crunchy flavors that will satisfy your taste buds. However, preparing this dessert requires some knowledge and tips to make it perfect. In this article, we will provide some valuable tips for making an apple raisin pie recipe that will be a hit with your friends and family.

Tip #1 - Choose the Right Apples

The type of apples you choose is extremely important when it comes to making an apple raisin pie recipe. You want apples that are firm, not too sweet, and not too tart. Some of the best apples for pie recipes include Honeycrisp, Granny Smith, and Jonagold.

Tip #2 - Use Fresh Ingredients

Using fresh ingredients is essential when making an apple raisin pie recipe. The fresher your ingredients, the better the pie will taste. This includes fresh apples, raisins, and spices. Avoid using canned or processed ingredients as they may alter the taste and texture of the pie.

Tip #3 - Properly Prep Your Apples

Preparing your apples is another crucial step in making an apple raisin pie recipe. Peel, core, and slice your apples into thin, uniform pieces. This ensures that they will cook evenly and not be overpowering in the pie. Additionally, don't overstuff your pie with too many apples as this can lead to a soggy crust.

Tip #4 - Incorporate Spices

Spices are an essential part of any apple raisin pie recipe as they enhance the flavor of the fruit filling. Cinnamon, nutmeg, and allspice are just a few options that taste great in this dessert. Remember, a little goes a long way, so be careful not to add too much.

Tip #5 - Add a Thickener

Adding a thickener to your apple raisin pie recipe is key to creating a pie with a perfect consistency. You can use flour, cornstarch, or tapioca as a thickener to absorb any excess liquid that may be released while baking. This leads to a firmer and less runny pie filling.

Tip #6 - Make a Crispy Crust

The crust is just as important as the filling when it comes to making an apple raisin pie recipe. To ensure that your crust is crispy and flaky, use cold butter and water when making the dough. Additionally, avoid overworking the dough and make sure to refrigerate it for at least 30 minutes before rolling it out.

Tip #7 - Place Your Pie in the Right Area of the Oven

To bake an apple raisin pie recipe evenly, place the pie in the center of the oven. This ensures that the heat distributes evenly and doesn't overcook or burn the edges of the pie.

Tip #8 - Protect Your Pie Edges

As the pie bakes, the edges can become too brown before the middle is fully cooked. To prevent this, you can cover the edges with foil or a pie shield while the middle continues to bake.

Tip #9 - Let Your Pie Cool

Allowing your apple raisin pie to cool before serving is crucial to keep it from falling apart. Give it at least an hour to cool down so that the filling can set, and the crust can firm up. Cutting it too soon can cause the filling to run, and the crust to crumble.

Tip #10 - Get Creative

Don't be afraid to try new things when making an apple raisin pie recipe. You can experiment by adding different fruits or nuts to the filling, or even try incorporating a crumbly or lattice top crust for a new twist. The sky's the limit with this dessert, so have fun and get creative.

Conclusion

Making an apple raisin pie recipe can be a fun and rewarding experience. By following these valuable tips, you will have a dessert that is perfect for any occasion. Be adventurous and try new things while experimenting with your recipe, and you're sure to impress your friends and family with your newfound baking skills.
