APPLE YEAST BREAD

Apple Yeast Bread image

This is one of the recipes I included in a cookbook I put together after my grown children kept calling home to ask how to make some of their favorite dishes. What a wonderful experience that was, gathering my mother's and my own recipes plus those from friends and family. My daughters and some of their friends did some artwork for it, and we now have a book we are proud to share!

APPLE BUTTER YEAST ROLLS (A CROCKPOT BREAD RECIPE) RECIPE - (4.7/5)

Apple Butter Yeast Rolls (A crockpot bread recipe) Recipe - (4.7/5) image

Provided by Mother_Daniel

Number Of Ingredients 9

2 1/2 t. dry active yeast (1 packet)
1/2 C. warm water
3 Tb. sugar
1/2 C. apple butter
1 egg
1 1/2 t. salt
4 C. bread flour
4 T. melted butter
2 T. brown sugar (optional)

Steps:

  • Using an electric mixer with a bread hook, place the warm water (just barely over luke-warm, too hot will kill the yeast) and sugar in the mixing bowl. Sprinkle the yeast over the water and let it foam for 10 minutes. Then turn on the mixer and add the apple butter, egg and salt. Slowly add the flour. Once all the flour is in the bowl, add the melted butter. "Knead" the dough with the bread hook for 5-8 minutes. The dough will be smooth, but very tacky. Dump it out onto a floured work surface. Using a floured knife, cut the dough into 4 quarters. Then cut each quarter into 6 equal pieces, to make 24 small dough segments. Turn the ends of each dough segment under to create little balls. Then place a large piece of parchment paper in a 6 quart slow cooker, and press down. Arrange 12 dough balls in the slow cooker. Then carefully lift the parchment paper out, and repeat with the remaining dough balls and another piece of parchment, creating two separate batches. Place the lid on the crockpot and cover the additional dough balls on the counter, with plastic wrap. Allow them to rise for 1 hour at room temperature. *At this point the dough balls could be put in the fridge for up to a week, until ready to bake. Sprinkle the rolls with a little brown sugar. Turn the slow cooker on high and "bake" for 60-90 minutes, depending on your crockpot. To test, touch the top of the rolls. If they feel slightly firm and are no longer tacky, the rolls are ready. Repeat with the second batch of dough balls. Each batch will cook for 60-90 minutes, 3 hrs total.

SWEDISH APPLE YEAST BREAD-BETTY CROCKER RECIPE CARDS

Swedish Apple Yeast Bread-Betty Crocker Recipe Cards image

Betty Crocker Recipe Cards: Recipes Children Can Make/Card #15 It actually took a recipe that CHILDREN can make for me to achieve 100% success with the elusive yeast!!! I followed the recipe with a few exceptions (subbed cardamom for the cinnamon & bumped up the raisins). I held my breath while it was in the 'rising stage', popped it in the oven with a prayer...and out came the most beautiful, amazing, wonderful yeast bread!! This is NOT a quick bread taste and not overly sweet. However, it is cerainly sweet enough to satisfy oneself, especially with a hot cup of coffee. But wait! There's more! If you think it's good the 1st day, it is OUT OF THIS WORLD the second day!!! The yeast bread softens and the spices really are more pronounced; it was sublime heated at Medium in the microwave for a minute and then liberal amounts of fresh butter slathered on the cut edges. I plan to serve this for years to come: as an afternoon snack, for a delicious but not too sweet Brunch addition...or just because! But, I will intentionally make it the day before since the bread is one of those recipes that improves with age.

Time 1h30m

Yield 6 slices

Number Of Ingredients 14

2 tablespoons butter
1/2 cup sugar
1 teaspoon cinnamon (I used cardamom instead)
1 apple (I used a medium-sized Rome)
1/2 cup raisins (recipe called for "a few". Ha! )
1 (1/4 ounce) package active dry yeast
3/4 cup water (Warm at 105-115 degrees)
1/4 cup sugar
1 teaspoon salt
1 cup flour
1 egg, beaten
1/4 cup shortening (I used very soft butter)
1 1/4 cups flour
1 teaspoon cinnamon (This was NOT in the original recipe. If you're using cinnamon above, then add this to the dough for )

Steps:

  • Heat oven to 375 degrees.
  • Plump 1/2 cup of raisins in either water or apple juice. Set aside.
  • Melt 2 tablespoons of butter in a 9 x 9" or 8 x 8" pan. (I used 8 x 8" with perfect results.).
  • Mix sugar and preferred spice with a fork in a small bowl. Sprinkle sugar mixture over melted butter in pan.
  • Take a medium to large apple and cut into very thin slices. The original photo showed the apple with it's peel left on; I preferred to remove it.
  • Arrange apple slices in rows, over the sugar mixture.
  • Drain raisins and sprinkle over the sliced apples.
  • In a large bowl, stir together the package of yeast and the 3/4 cup of warm water. Stir until completely dissolved.
  • To the yeast, add 1/4 cup sugar, 1 teaspoon salt and 1 cup of flour. Beat by hand 2 minutes or until batter drops from spoon in sheets.
  • Add and beat until smooth 1 egg, 1/4 cup of shortening (I used very soft butter), 1 1/4 cup of flour, and the extra teaspoon of spice, if you prefer.
  • Drop batter by small spoonfuls over the apples and raisins in pan, keeping dough close to each other. Cover pan and allow to rise in warm place until double; 50-60 minutes.
  • Bake in a 375 degree oven for 30-35 minutes or until top is lightly browned.
  • IMMEDIATELY remove the bread from pan by turning it upside down over serving plate. The sugar/butter mixture provides a glaze.
  • Allow to cool. This is nice the first day and spectacular the second!

3 INGREDIENT APPLE BREAD (NO YEAST, EGGS, BUTTER OR OIL)

3 Ingredient Apple Bread (No Yeast, Eggs, Butter or Oil) image

This apple bread is an easy, one-bowl recipe. It is just 3 ingredients and doesn't contain any yeast, eggs, butter or oil. The bread comes out tender and soft. It can be enjoyed plain or toasted and with your favorite spread.

Provided by @MakeItYours

Number Of Ingredients 3

2 cups (250 g) self-rising flour
1 cup (250 g) applesauce
1/2 cup (4 oz) milk or sweetened condensed milk

Steps:

  • Preheat oven to 350°F. Line an 8 x 4 inch baking loaf pan with parchment paper.
  • In a large mixing bowl, add flour, applesauce and milk. Whisk until all ingredients fully combined and no flour pockets remain in the mixture.
  • Pour mixture into your prepared loaf pan. Place into the middle of your oven and bake for about 45-50 minutes or until bread is done. When bread is done, it should be golden brown on top, when you apply pressure to the surface it should bounce back and a toothpick inserted should come out clean.
  • Let bread cool before slicing and eating. Bread can be enjoyed as is or toasted. You can also add your favorite spread. Bread can be stored in an airtight container at room temperature for 1-2 days or in the fridge or freezer for longer.

FALL APPLE YEAST BREAD

Fall Apple Yeast Bread image

The bread was outstanding! This is not a recipe to be filed for later--this BEGS to be baked, right away! For Halloween, or a fall party, possibly for Thanksgiving, but really...don't wait that long. You'll smack yourself after tasting it, for not baking it sooner!

Time 4h55m

Yield 10-12 serving(s)

Number Of Ingredients 16

1/2 cup water, lukewarm
7 tablespoons vegetable oil
1/4 cup runny honey
1 tablespoon dry active yeast
2 large eggs
17 ounces all-purpose flour (about 4 cups, but it's best to weigh it)
1 1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1 teaspoon orange zest
2 large apples, peeled cored and diced in 3/4-inch chunks
1 teaspoon ground cinnamon
1/4 cup sugar
1 tablespoon dark rum (optional)
1 1/2 tablespoons apple cider
1 cup powdered sugar

Steps:

  • Mix the warm (not hot) water with the oil, honey and yeast. Allow it to foam for 10 minutes. Then add the rest of the ingredients for the dough. Mix and then knead them, using a mixer with a bread hook, or by hand, until you have a soft, smooth and elastic dough (about 8-10 minutes).
  • Put the dough in a oiled bowl and let it rise, covered, for 2 hours or until it's puffy and nearly doubled in size.
  • Lightly grease/butter a 9inch round cake pan that's at least 2inch deep (or grease a 9inch or 10inch springform pan).
  • Toss the apple chunks with the sugar, cinnamon and rum.
  • Gently deflate the dough, transfer it to a lightly greased work surface, and flatte n it into a rough rectangle, about 8 x 10 inches.
  • Spread half the apple chunks in the center of the dough (see remarks for details).
  • Fold a short edge of the dough over the apple in order to cover it, patting firmly to seal the apples and spread the dough a bit.
  • Spread the remaining apple atop the folded-over dough.
  • Cover the apples with the other side of the dough, again patting firmly (Basically, you've folded the dough like a letter, enclosing the apples inside.).
  • Take a long knife and cut the apple-filled dough into 16 pieces. Cut in half, then each half in halves, etc -- (This will be very, VERY messy; the dough is slippery, apples will fall out, sugar syrup will ooze -- it's not pretty. Don't worry, and don't stress about making all the pieces the same size).
  • Lay the dough chunks into the pan (Crowd them so that they all fit in a single tight layer - barely. Lots of apple chunks will fall out during this process; just tuck them in among the dough pieces, or simply spread them on top.).
  • Cover the challah gently with lightly greased plastic wrap or a damp towel and let it rise for about 1- 1 1/2 hours, until it's a generous 2inches high (It should just crest the rim of a 9inch round cake pan). Twenty minutes before the end of the rising time, preheat the oven to 325°F.
  • Place the bread in the lower third of the oven. Bake it for 55 minutes, or until the top is at least light golden brown all over and has no white spots.
  • Remove the challah from the oven, and after 5 minutes loosen the edges and carefully transfer it to a rack.
  • Let cool completely. Then whisk together the cider and powdered sugar and brush it over the top--allowing it to drizzle down the sides.
