3/4 c whole wheat pancake mix
1 c all purpose flour
NOTE: FOR MUFFINS WITH RAISIN BRAN CEREAL, USE 1 & 1/2 CUPS ALL-PURPOSE FLOUR ONLY.
1 Tbsp oil for muffins; 1/3 cup for bread recipe
1 small container applesauce for muffins.
1 egg for muffins; 2 eggs for bread.
1 c fat free milk for muffins; 1/4 cup milk for bread.
1 Tbsp baking powder for muffins; only 1 & 1/2 tsp. for bread.
1/3 c light brown sugar for muffins; 1/2 cup gran.sugar for bread.
1 tsp cinnamon for either recipe.
1 c chopped granny smith apple
1 c coarsely chopped walnuts
or two mashed ripe bananas, and optional 1/2 cup chopped walnuts for bread.

Steps:

  • 1. Full directions are on the box of whole wheat pancake mix, by A.J. THESE ARE WONDERFUL RECIPES, WHICH I WILL USE MANY TIMES. THEY ARE QUICK, EASY AND PERFECT.
  • 2. The Apple-Walnut Muffins are made in several steps: First you measure the dry ingredients into a large bowl, and set aside.
  • 3. In a medium sized bowl, mix one egg, one cup milk, one tablespoon oil, one small or individual-size serving of "Natural" apple sauce (unsweetened); and blend together.
  • 4. Measure out one and one/half cups of POST Raisin Bran Cereal, and stir into the liquid ingredients.
  • 5. The Granny Smith apple needs to be cored, peeled and shredded. I prefer to use one large G.S. Apple. I also use 1 cup of chopped walnuts, coarsely chopped.
  • 6. Combine the wet ingredients with the dry ingredients in the large bowl and stir in the apple and walnuts.
  • 7. Have a twelve-cup Medium-size muffin pan sprayed with oil, and an ice-cream scoop also sprayed with oil ready. The oven should be preheated to 425 degrees.
  • 8. Scoop the batter into the muffin tin and bake for at least 25 minutes. Remove tin and let rest on the counter on a cake rack for a few minutes, then loosen muffins. Enjoy one (or two) while warm with a nice hot cup of coffee for breakfast each morning! We do!

0.5 (14 ounce) package tofu
1/2 cup soymilk or 1/2 cup almond milk, unsweetened
2 teaspoons vanilla extract
3/4 cup Splenda sugar substitute
3/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup white whole wheat flour
2 1/2 cups wheat bran
1/2 cup raisins

Steps:

  • In food processor: dump the first five ingredients and blend until the ingredients are 'liquified'.
  • Add the salt and baking powder and pulse to mix.
  • Add the cinnamon, flour, wheat germ and raisins and pulse just until mixed.
  • Spray an ice cream scoop with non-stick spray and use that to form the muffins.
  • Bake 350 for about 23 minutes if you make 16 muffins, longer if you make 12 larger muffins.
  • These freeze well.

These are moist, dark, and delicious muffins from the King Arthur Flour Company. They keep well, are made of 1/2 whole wheat flour, and have brown sugar sprinkled on top for a crunchy texture. If you don't have buttermilk, you can use regular milk + 1 tbsp. of lemon juice or white vinegar. The recipe says it makes 12 muffins, but I usually get about 18. It's a very adaptable recipe and also works well with applesauce and oil rather than butter. You can also throw in 1/4 cup of walnuts, if you like.

  • Preheat the oven to 375°F Grease and flour a 12-cup muffin tin, or line with papers and grease the insides of the papers.
  • Mix together the flours, baking powder, baking soda, salt, and cinnamon, and set aside. In a separate bowl, cream the butter and add the granulated sugar and 1/4 cup of the brown sugar Beat until fluffy. Add the egg and mix well; stop once to scrape the sides and bottom of the bowl. 1/2 stick of butter (softened or melted)
1 cup brown sugar
1/4 cup of apple butter (or more if you like)
1/2 cup of milk (I used 2% and added a splash of cream)
1/2 tsp vanilla extract
Dry mix:
1 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup flax meal (I think you should grind your own in your food processor or coffee grinder - I use a magic bullet, don't buy it ground or grind too much in advance as it goes rancid quickly)
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Mix in:
1 1/2 cup of blueberries (frozen or fresh)

Steps:

  • Position your oven rack to the middle notch and preheat to 400 degrees. Spray or line your muffin tins. Mix butter and brown sugar together. Add remaining wet ingrediants and mix well. In a separate bowl, combine dry ingrediants and mix well. Add wet mix to the dry mix and hand-mix, just until combined. Fold in the blueberries. Spoon into muffin tins. I like to toss a little bit of something on the tops- nine grain cereal, or steel cut oats (you might soak them in apple juice or something first so they're not so crunchy), even some plain old oats would look nice. Bake for 25 minutes (or until toothpick comes out clean) at 400 degrees on middle rack.

1/3 cup(s) light brown sugar (adjust to suit your taste)

4 tablespoons corn or safflower oil
1/2 cup honey (preferably fruit honey like blackberry)
2 cups fresh apple cider
2 eggs
2 1/2 cups stone-ground whole-wheat flour
1 cup unprocessed bran
1 cup stone-ground yellow cornmeal
1/2 cup soy flour
1 tablespoon baking powder
2 cups fresh or frozen blackberries

Steps:

  • Blend together oil, honey, cider and eggs. Set aside.
  • In medium-size mixing bowl combine remaining ingredients except blackberries. Pour liquid mixture over dry ingredients. Blend briefly. Do not overmix. Stir in blackberries. If blackberries are frozen, do not thaw. If using fresh blackberries, dry after rinsing.
  • Preheat oven to 375 degrees.
