Time 3h20m

Yield 8 to 10 servings

Number Of Ingredients 16

4 pounds mixed apples (such as Granny Smith, Gala and McIntosh)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter
2 tablespoons all-purpose flour, plus more for dusting
1 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
2 disks Pie Dough, recipe follows
1 large egg, beaten
Coarse sugar, for sprinkling (optional)
2 1/2 cups all-purpose flour
4 tablespoons cold vegetable shortening
2 teaspoons sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces

Steps:

  • Peel and core the apples; slice 1/4 inch thick. Transfer to a bowl and toss with the granulated sugar and lemon juice. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until softened, 12 to 15 minutes. Add the flour, cinnamon and salt and stir until the juices thicken, about 2 minutes. Remove from the heat and let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Add the cooled filling and dot with the remaining 2 tablespoons butter.
  • Roll out the remaining disk of dough into a 12-inch round. Lay the dough over the filling and press the two crusts together around the edges. Fold the overhanging dough under itself and crimp with your fingers. Brush the top crust with the beaten egg and sprinkle with coarse sugar. Cut a few slits in the top crust to let steam escape. Chill 1 hour.
  • Put a baking sheet on the bottom oven rack and preheat to 425 degrees F for at least 30 minutes. Put the pie directly on the hot baking sheet and reduce the oven temperature to 375 degrees F; bake until the pie is golden and the filling is bubbly, 1 hour to 1 hour, 10 minutes, rotating the pie as needed. (Cover the edges with foil if they are browning too quickly.) Transfer to a rack and let cool until the filling is set, about 3 hours.
  • Pulse the flour, shortening, sugar, vinegar and salt in a food processor until it looks like fine meal. Add the butter and pulse until it is in pea-size pieces. Sprinkle in 1/4 cup ice water and pulse until the dough begins to come together. Pinch the dough with your fingers; if it doesn't hold together, add up to 4 more tablespoons ice water, 1 tablespoon at a time, and pulse again.
  • Divide the dough between 2 sheets of plastic wrap and pat each into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or preferably overnight, or freeze up to 2 months.

The History of Apple Tosca Pie

The origin of Apple Tosca Pie is uncertain, but many believe it can be traced back to Scandinavia. The name "tosca" refers to the crispy, caramelized topping made from almonds and sugar. The pie itself consists of a flaky crust filled with thinly sliced apples that are baked until tender. The tosca topping is added near the end of the baking process and is broiled until golden brown.

Ingredients

The ingredients for Apple Tosca Pie are simple and easy to find. They include:

  • 6-7 Granny Smith apples, peeled and thinly sliced
  • 1 pre-made pie crust
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup sliced almonds

Here are the steps to make Apple Tosca Pie:

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Place the pre-made pie crust in a 9-inch pie dish and crimp the edges.
  3. In a saucepan, melt the butter over medium heat. Add the sugar and flour, and cook for 2-3 minutes or until the mixture begins to thicken.
  4. Add the sliced almonds to the butter mixture and stir until combined.
  5. Arrange the sliced apples in the pie crust in any design you like, making sure to pack them tightly.
  6. Spoon the tosca mixture over the top of the apples, covering them completely.
  7. Bake for 45-50 minutes, or until the apples are tender and the tosca topping is golden brown.
  8. Remove the pie from the oven and let it cool for at least 15 minutes before serving.
Variations

Apple Tosca Pie is a versatile dessert that you can customize to your liking. Here are a few variations you can try:

  • Use different types of apples – try using a mix of sweet and tart apples for a more complex flavor.
  • Add spices – cinnamon, nutmeg, and allspice are all great choices.
  • Swap out the almonds – pecans or hazelnuts would also work well in the tosca topping.
  • Add a glaze – a simple powdered sugar glaze would add extra sweetness to the pie.
  • Make it vegan – use a vegan pie crust and swap out the butter for vegan butter or coconut oil.
Serving Suggestions

Apple Tosca Pie is delicious on its own, but you can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream. If you're feeling fancy, you can even drizzle some caramel sauce over the top. This pie pairs well with a cup of hot coffee or tea, or a glass of cold milk.

Apple tosca pie is a classic dessert, and it’s perfect for fall when apples are in season. This pie combines the sweetness and tartness of apples with the buttery and crunchy flavor of a tosca topping. The tosca topping, which is made from butter, sugar, and almonds, creates a delicious crust that adds texture and flavor to the pie. Making an apple tosca pie is not difficult, but there are some tips that you should keep in mind to ensure that your pie comes out perfectly. In this article, we will provide you with valuable tips that you can use when making apple tosca pie. Tip 1: Choose the Right Apples The first and most important tip when making apple tosca pie is to choose the right apples. Apples are the key ingredient in this pie, and selecting the right type of apple can make a huge difference in the flavor and texture of the pie. The ideal apples for this pie are tart apples that hold their shape when baked. Some of the best options for apple tosca pie include Granny Smith, Honeycrisp, Braeburn, and Jonathan apples. These apples have a firm texture and a tangy taste that pairs well with the sweetness of the tosca topping. Avoid using apples that are too soft or too sweet, as they can turn mushy when baked and create a texture that’s not ideal for this pie. Tip 2: Use a Pre-made Pie Crust Making a pie crust from scratch can be time-consuming, and it requires some level of skill. If you’re not confident in your pie crust making skills, don’t worry, as you can use a pre-made pie crust. Pre-made pie crusts are widely available at grocery stores, and they’re usually very easy to use. All you need to do is thaw the crust, roll it out, and press it into the pie dish. Using a pre-made pie crust saves you time and effort, and it doesn’t compromise the flavor or texture of the pie. Tip 3: Add Lemon Juice to the Apples When preparing the apples for the pie filling, add a squeeze of lemon juice to them. The lemon juice helps to prevent the apples from turning brown and adds a bright, tangy flavor to the filling. To add the lemon juice, simply toss the sliced apples with a tablespoon of lemon juice before adding them to the pie crust. Make sure to mix the apples well, so the lemon juice is evenly distributed. Tip 4: Add Spices to the Filling To enhance the flavor of the apple tosca pie filling, add some spices to it. Cinnamon, nutmeg, and cardamom are all great options that go well with the flavor of apples. To add the spices, mix them with the sliced apples before arranging them in the pie crust. Adding spices to the filling gives the pie a warm, comforting flavor that’s perfect for fall. Tip 5: Make the Tosca Topping Crunchy The tosca topping is one of the key elements of apple tosca pie, and it’s important to get it right. The ideal tosca topping is crunchy and buttery, with a delicious almond flavor. To achieve a crunchy tosca topping, use sliced almonds and make sure to spread the tosca mixture evenly over the pie. You can also add more sliced almonds on top of the tosca mixture to create an extra crunchy texture. Tip 6: Chill the Pie before Serving After the apple tosca pie is baked, let it cool for at least an hour before serving. Once the pie is cool, chill it in the refrigerator for a few hours before serving. Chilling the pie helps to set the filling and the tosca topping, making it easier to slice and serve. Before serving, you can top the pie with whipped cream, ice cream, or a sprinkle of powdered sugar. Conclusion Apple tosca pie is a classic dessert that’s perfect for fall. By following these valuable tips, you can make a delicious and perfectly baked apple tosca pie that will impress your family and friends. Remember to choose the right apples, use a pre-made pie crust, add lemon juice and spices to the filling, make the tosca topping crunchy, and chill the pie before serving. With these tips, you’re sure to make a tasty apple tosca pie that everyone will love.
