Time 2h10m

Yield 8 to 10 servings

Number Of Ingredients 18

Basic Sweet Piecrust, recipe follows
2 pounds fresh rhubarb, trimmed and cut into 1-inch thick pieces
2 pounds McIntosh apples (6 to 8 apples), cored, peeled, and each cut into 12 equal slices
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cornstarch
2 tablespoons fresh lemon juice
2 tablespoons apple, cherry, or grape brandy
1 cup bleached all-purpose flour
1 cup chopped walnuts
4 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
3/4 cup solid vegetable shortening
6 to 7 tablespoons ice cold water

Steps:

  • Preheat the oven to 370 degrees F.
  • Roll out the dough on a lightly floured work surface into an 11-inch round about 1/8-inch thick. Transfer the dough to a 9-inch pie pan. Trim off any overhanging dough to make a 1/2-inch wide overhang around the edge of the pan. Flute the edges of the dough with your fingertips.
  • In a large bowl, mix the rhubarb, apples, sugar, 1/2 cup of the brown sugar, the cornstarch, lemon juice, and brandy, and toss to coat the fruit evenly. Pour the mixture into the piecrust.
  • In a medium bowl, combine the flour, walnuts, remaining 1/2 cup brown sugar, butter, cinnamon and nutmeg and mix well with your fingertips until the mixture resembles coarse crumbs. Sprinkle evenly over the filling.
  • Bake until the top is golden brown and the juices are bubbling, 40 to 45 minutes. Cool on a wire rack for at least 15 minutes before serving.
  • In a mixing bowl, combine the flour, sugar, and salt. Mix well. Add the shortening and mix until the mixture resembles coarse crumbs. Add the water and let sit 1 minute. Using either a fork or your hands, carefully press the mixture together to form a soft ball. Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Preheat oven to 350 degrees F.
  • Remove the dough from the refrigerator and place it on a lightly floured surface. Roll out the dough on the floured surface into a circle about 12-inches in diameter and 1/8-inch thick. Gently fold the circle of dough in half and then in half again so that you can lift it without tearing it, and unfold into a 9-inch by 2-inch deep-dish pie pan. Crimp the edges and place in the oven.
  • Bake until golden, about 15 to 20 minutes. Remove from the oven and cool completely.

Apple rhubarb crumb pie is a delicious dessert that combines the sweetness of apples with the tartness of rhubarb. This dessert is perfect for any occasion, and its unique flavor profile makes it stand out from other pie recipes. In this article, we will provide valuable tips on making an apple rhubarb crumb pie from scratch.

Choosing the Right Apples

Apples are a vital ingredient in apple rhubarb crumb pie, and choosing the right type of apple can make all the difference in the final product. You want to choose apples that are slightly tart, firm, and hold their shape when cooked. Some of the best apples for baking include Granny Smith, Honeycrisp, Braeburn, and Jonathan.

Prepping the Apples Correctly

Once you have selected the apples, you need to prep them correctly. Begin by washing the apples thoroughly, then peeling and coring them. You can use an apple corer or a sharp paring knife to remove the core. After peeling and coring, slice the apples into even pieces. This will ensure that the apples cook evenly, and your pie will have a consistent texture.

Preparing the Rhubarb

Rhubarb is a unique ingredient that adds a nice tartness to the pie, and can be found in most grocery stores when it is in season. However, rhubarb stalks are quite fibrous and can be tough if not prepared correctly. To prepare the rhubarb, wash the stalks thoroughly and cut off the ends. Then slice the stalks into small pieces, about ½ inch thick. If you notice any stringy fibers on the stalks, use a vegetable peeler to remove them.

Creating the Perfect Crumb Topping

One of the standout features of apple rhubarb crumb pie is the crumb topping. Creating the perfect crumb topping can be challenging, but it's worth it in the end. Begin by combining flour, brown sugar, granulated sugar, cinnamon, and melted butter in a bowl. Use a pastry cutter or your hands to work the butter into the mixture. Once the mixture forms pea-sized crumbs, it is ready to go on top of the pie.

Baking the Apple Rhubarb Crumb Pie

Now that you have prepped all the ingredients, it’s time to bake the apple rhubarb crumb pie. Preheat the oven to 375°F (190°C). Begin by rolling out the bottom pie crust and placing it in a 9-inch pie pan. Next, add the prepared apples and rhubarb to the pie shell. Then sprinkle the crumb topping evenly over the filling.

Place the pie in the oven and bake for 50-55 minutes, or until the crust is golden brown, and the filling is bubbling. You may need to cover the crust edges with foil to prevent them from burning. Allow the pie to cool for at least 30 minutes before serving.

Serving Suggestions

Apple rhubarb crumb pie is delicious on its own, but you can take it to the next level with some creative serving suggestions. Serve it warm with a scoop of vanilla ice cream or whipped cream. You can also add some chopped nuts or caramel sauce on top to give it an extra touch of sweetness.

Cooking Tips

Here are a few additional tips to keep in mind when making an apple rhubarb crumb pie:

  • Make sure you use a pie shield or foil to protect the crust edges from burning during baking.
  • A mix of cornstarch and flour can be used to thicken the filling if it becomes too watery. Start with a tablespoon of each and gradually add more if needed.
  • You can adjust the sweetness level of the pie by increasing or decreasing the amount of sugar in the filling and crumb topping.

Conclusion

Apple rhubarb crumb pie is a delicious dessert that is perfect for any occasion. With the right ingredients and techniques, you can create a perfect pie every time. Remember to choose the right type of apples, prep them correctly, prepare the rhubarb properly, create the perfect crumb topping, bake the pie to perfection, and try out some creative serving suggestions.
