GRANDMA'S APPLE NUT CAKE
This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

APPLESAUCE, RAISIN AND NUT CAKE
This is an old recipe that my grandma got off of a VB apple sauce can. She always iced it with plain boiled icing. If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

Baking a delicious apple raisin nut spice cake is a wonderful way to enjoy the flavors of fall all year round. Not only does this cake taste amazing, but it’s also a great opportunity to experiment with different spices, nuts, and fruits. Here are some valuable tips to consider when making your next apple raisin nut spice cake.
Choosing the Right Apples
The right apples can make or break your apple raisin nut spice cake. You want to choose apples that are sweet and firm, with a balanced flavor that complements the spices and nuts in the cake. Some of the best apple varieties for baking include Honeycrisp, Pink Lady, Granny Smith, and Braeburn. Depending on your personal preference, you can also experiment with different types of apples to see what works best for your recipe.
Enhancing the Flavor with Spices
The spices that you use in your apple raisin nut spice cake are key to bringing out the rich, warm flavors of fall. Cinnamon, nutmeg, allspice, and cloves are all great options for adding depth and complexity to your cake. You can also experiment with other spices, such as ginger, cardamom, or even a pinch of cayenne pepper to give your cake a little kick.
Choosing the Right Nuts
The nuts that you use in your cake can add a delicious crunch and texture. Walnuts, pecans, and almonds are all great options, but you can also experiment with other nuts, such as hazelnuts or pistachios. Before adding the nuts to your cake batter, toast them to bring out their full flavor and aroma.
Soaking the Raisins
Raisins are a classic ingredient in apple raisin nut spice cake, but they can sometimes be tough and chewy. To make them more tender and plump, soak them in hot water or a sweet liqueur, such as rum or brandy, for at least 30 minutes before adding them to the cake batter. This will also help infuse the raisins with additional flavor.
Adding Moisture with Applesauce
If you want your apple raisin nut spice cake to be extra moist, consider substituting some of the oil or butter with applesauce. Applesauce not only adds flavor and sweetness, but it also helps keep the cake moist and tender. Use unsweetened applesauce if you want to keep the sugar content of the cake in check.
Experimenting with Mix-Ins
Part of the fun of making apple raisin nut spice cake is experimenting with different mix-ins. You can add dried cranberries, chopped dates, grated carrots, or even chocolate chips to your cake batter. Just be careful not to overdo it, as too many mix-ins can make the cake heavy and dense.
Baking the Cake Perfectly
The key to baking the perfect apple raisin nut spice cake is to make sure it’s cooked all the way through without drying out. To do this, set your oven temperature to 350 degrees Fahrenheit and bake the cake for 45-60 minutes, depending on the size of your pan. Test for doneness by inserting a toothpick into the center of the cake—if it comes out clean, the cake is ready. Let the cake cool for at least 10-15 minutes before slicing and serving.
Decorating Your Cake
There are many ways to decorate your apple raisin nut spice cake to make it look as good as it tastes. You can sprinkle powdered sugar or cinnamon over the top of the cake, add a dollop of whipped cream, or drizzle a glaze made from powdered sugar and milk over the cake. You can also decorate the cake with fresh fruit or chopped nuts for an extra touch of flavor and texture.
In Conclusion
With these valuable tips, you’ll be well on your way to making the perfect apple raisin nut spice cake. Whether you’re a seasoned baker or just starting out, experimenting with different ingredients and techniques is a fun and delicious way to enjoy the flavors of fall.
