APPLE, RAISIN, WALNUT CAKE

Apple, Raisin, Walnut Cake image

The girls and boys in my junior high home economics classes like this cake because it's not too sweet. I like it because it has high fiber and nutritional value-the apples are used unpeeled. Parents who have apple trees are always glad to donate the apples!

JIM'S APPLE RAISIN POUND CAKE WITH PRALINE GLAZE

Jim's Apple Raisin Pound Cake with Praline Glaze image

This is a very moist cake. With all the grated apples, raisins and pecans, it could stand alone without a topping; however with the praline glaze....well, you be the judge!

Categories     Desserts     Specialty Dessert Recipes     Praline Recipes

Time 1h50m

Yield 20

Number Of Ingredients 17

3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground allspice
1 teaspoon salt
1 ½ cups vegetable oil
2 cups white sugar
4 eggs
3 cups apples - peeled, cored and shredded
1 cup chopped pecans
1 cup raisins
½ cup white sugar
½ cup light brown sugar
½ cup half-and-half cream
¼ teaspoon salt
½ cup butter, softened
1 cup chopped pecans
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt pan. In a bowl, whisk together the flour, baking soda, allspice, and 1 teaspoon of salt.
  • In a large bowl, mix the vegetable oil, 2 cups of sugar, eggs, apples, 1 cup of pecans, and raisins. Mix the flour mixture into the wet ingredients, and pour the batter into the prepared Bundt pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out with moist crumbs, about 70 minutes. Let the cake cool in the pan for about 10 minutes, then turn out onto a rack to finish cooling.
  • For glaze, mix 1/2 cup of white sugar, the brown sugar, half and half, and 1/4 teaspoon of salt in a saucepan. Bring to a boil, reduce heat to medium-low, and boil, stirring constantly, until the mixture thickens to a syrup, 5 to 10 minutes. A candy thermometer will read 220 degrees F (105 degrees C). At that point, stir in butter, 1 cup of pecans, and vanilla extract. Continue to cook and stir until the syrup reaches 234 degrees F (110 degrees C). Allow the glaze to cool for 5 minutes, then spread the warm glaze over the cake.

FRESH APPLE,CRANBERRY AND RAISIN CAKE

FRESH APPLE,CRANBERRY AND RAISIN CAKE image

Categories     Cake     Fruit     Dessert     Bake     Quick & Easy

Yield Serves about 10 mini-loafs.

Number Of Ingredients 12

2 eggs
1 cup of vegetable oil
1 tsp. vanilla
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. salt
3 cups of flour
2 cups of sugar
2 cups of chopped Gala Apples
3/4 cup of walnuts/pecans
1/2 dried sweetened cranberries
1/2 cup of raisin (golden or reg.)

Steps:

  • Combine eggs, oil, sugar, cinnamon and vanilla. Slowly mix flour, salt and soda into egg mixture. Mix apples, cranberries, walnuts and raisins. Combine well, mixture will be thick and difficult to mix throughly. Use muscle to do so. Don't worry about crushing the apples - they melt/smoother into the batter beautifully. Before pouring batter into a bunt cake pan (recipe works great also on mini-loafs, loafs, 9x11 bakinh dish, etc.) Coat bottom of pan with a generous helping of butter and evenly sprinkle light brown sugar on the base of the pan. Make sure batter is evenly spread so no disportion of baking occurs. Bake at 350 for 25-30 Minutes. Depending upon wish baking pan is desired, it may take 15-20 minutes longer if batter is cooked in a larger pan. Rule of thumb - check with clean knife and check center of cake and if you get any batter residue, cook for another 10 minutes. Let cool completely before removing from pan.

APPLE RUM RAISIN CAKE (GLUTEN-FREE, LOW-GI)

Apple Rum Raisin Cake (Gluten-Free, Low-GI) image

I used a gugelhupf pan here, but you can just use a round 7-inch cake pan. If you'd like to lower the glycemic index, you can omit raisins and replace coconut sugar with erythritol or xylitol. This cake is pretty moist and does crumble a little when you slice it, so please don't make the batter too loose by adding too much applesauce. This cake is good with ice cream (vanilla, rum raisin, salted caramel, dulce de leche, etc.). Fore more healthy, gluten-free recipes, please visit my blog, www.innerharmonynutrition.com.

Valuable Tips for Making Apple Raisin Cake Recipes

Being able to make a delicious apple raisin cake recipe is a skill that every baker should have in their arsenal. This classic dessert is perfect for any occasion, from simple family gatherings to grand festivities. It’s easy to make and always a crowd-pleaser, but there are a few tips that can help you perfect the recipe. Below are some valuable tips to consider when making apple raisin cake recipes.
1. Choose the Right Apples
The type of apples you use can greatly affect the taste and texture of the cake. Some apples are better for baking than others, so it’s important to choose wisely. For apple raisin cake recipes, it’s best to use tart apples like Granny Smith or Rome apples. These types of apples have a firm structure that gives the cake a perfect texture. They also have a tangy flavor that balances well with the sweetness of the raisins and cake.
2. Soak the Raisins
Raisins are a key ingredient in apple raisin cake recipes, but they can become hard and chewy when baked. To avoid this, it’s advisable to soak the raisins in hot water or brandy for at least an hour before adding them to the batter. This softens the raisins and infuses them with flavor, giving the cake a moist and chewy texture.
3. Use High-Quality Spices
Spices like cinnamon, nutmeg, and allspice are essential ingredients in apple raisin cake recipes. However, using high-quality spices can make a big difference in the final taste of the cake. Freshly ground spices are more potent and flavorful than pre-ground ones. So, consider buying whole spices and grinding them yourself for a more intense flavor.
4. Sift the Dry Ingredients
Sifting the dry ingredients like flour, baking powder, and spices is an essential step when making apple raisin cake recipes. Sifting helps to remove any clumps and ensures that the ingredients are evenly distributed throughout the batter. Doing this also makes the cake lighter and fluffier, giving it a better texture.
5. Add Wet Ingredients Gradually
When adding the wet ingredients like eggs, butter, and milk to the batter, it’s important to do it gradually. This prevents the batter from becoming too liquid, which can cause the cake to become dense and heavy. Also, make sure the eggs and butter are at room temperature before adding them to the batter. This helps them to blend well with the other ingredients and gives the cake a uniform texture.
6. Don’t Overmix the Batter
Overmixing the batter is a common mistake when making apple raisin cake recipes. This can cause the gluten in the flour to develop too much, making the cake heavy and tough. To avoid this, mix the dry and wet ingredients until they are just combined. It’s normal for the batter to have some lumps, so don’t try to make it perfectly smooth.
7. Grease the Pan Properly
Greasing the pan properly is essential when making apple raisin cake recipes. This prevents the cake from sticking to the pan and ensures that it has a smooth surface. Use a good quality non-stick baking spray or butter and flour to grease the pan. Also, make sure that the pan is the right size for the recipe. Using a smaller or larger pan can affect the baking time and texture of the cake.
8. Bake Until Golden Brown
Baking time is crucial when making apple raisin cake recipes. It’s important to bake the cake until it’s golden brown and a toothpick inserted in the center comes out clean. This ensures that the cake is fully cooked and has a perfect texture. Keep an eye on the cake during the last few minutes of baking to avoid burning. If the top of the cake is browning too quickly, cover it with foil.
9. Let the Cake Cool Completely
After baking, it’s important to let the cake cool completely before serving or frosting. This prevents the frosting from melting or sliding off the cake. It also allows the cake to set and become firmer. The cooling process takes around an hour, so be patient! You can also refrigerate the cake for a few hours to make it easier to slice and serve.
10. Serve with Whipped Cream or Ice Cream
Apple raisin cake is delicious on its own, but it’s even better with a dollop of whipped cream or a scoop of vanilla ice cream. This adds a creamy and refreshing element to the cake and balances the sweetness. You can also sprinkle some cinnamon or nutmeg on top for an extra flavor boost.

Conclusion

Making a perfect apple raisin cake recipe takes time and practice, but with the above tips, you’re sure to get there. Remember to choose the right apples, soak the raisins, use high-quality spices, sift the dry ingredients, add wet ingredients gradually, don’t overmix the batter, grease the pan properly, bake until golden brown, let the cake cool completely, and serve with whipped cream or ice cream. With these key points in mind, you’re sure to impress your family, friends, or guests with a delicious and moist apple raisin cake.
