3 russet potatoes, peeled and shredded
1 Granny Smith apple - peeled, cored, and shredded
2 eggs
2 tablespoons all-purpose flour
3 green onions, diced
salt to taste
vegetable oil for frying, or as needed
½ tablespoon sour cream

Steps:

  • Place shredded potatoes and apple in a clean kitchen towel. Gather towel on top and wring out excess liquid.
  • Combine potatoes, apple, eggs, flour, and green onion in a bowl.
  • Heat vegetable oil in a large heavy sauce pan over medium-high heat.
  • Form mixture into palm-sized patties; fry in hot oil, working in batches, until golden brown, 2 to 4 minutes on each side. More oil may be needed with each batch.
  • Remove pancakes from oil with a slotted spoon and drain on paper towel-lined plate. Sprinkle with salt.
  • Serve pancakes topped with sour cream.

2 large potatoes, peeled
2 medium apples, peeled
2 large eggs, lightly beaten
1/4 cup finely chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
Oil for deep-fat frying
Sour cream, optional

Steps:

  • Finely shred potatoes and apples; pat dry. Place in a bowl; add the eggs, onion, flour and salt and mix well. , In a skillet, heat 1/4 to 1/2 in. oil over medium-high heat. Drop batter by heaping tablespoonfuls into hot oil. Flatten to form 3-in. pancakes. Fry until golden brown; turn and cook the other side. Drain on paper towels. Serve immediately with sour cream if desired.

5 medium white potatoes peeled, rinsed and patted dry
1/2 small yellow onion
1 Tbsp (heaping tbs) flour
1 large egg
salt/pepper to taste

Steps:

  • 1. IF using a hand grater , grate on finest grate side, potatoes and onions. (if you have a food processor or blender(see *note below) with a grate button this will help speed up the process) .. once potatoes and onions are all grated, pour into med-lrg mixing bowl .. remove excess water ... add flour, egg, salt and pepper .. mix well .. put enough cooking oil in fry pan to cover entire bottom, heat fry pan just like you would making regular pancakes. Add about 1 1/2 heaping tablespoons of potato mixture for each pancake, using the back of spoon spread mixture out evenly forming a round circle ... fry until edges are a golden brown, turn pancakes over, fry until golden brown. Remove from fry pan placing on paper towel to drain excess grease. Add more oil to fry pan before making another batch, repeat this process for each batch. Serve warm with sour cream or apple sauce. Note: You can make extra , they freeze well . Defrost and heat in microware for about 1 minute for 3 pancakes.

  • Beat 3 eggs and milk together, season with salt and pepper. In a hot saute pan melt butter and swirl around entire pan. Add eggs to pan and swirl around pan so eggs come up sides of pan. After a few minutes, when bottom of eggs start to turn light brown, flip eggs with spatula and then place pieces of smoked salmon scattered on top. Add a dollop of sour cream and spread around. Sprinkle with chives. When bottom of omelet turns brown, transfer to plate and cut into wedges. Serve with potato pancakes. Yield: 1 omelet;

  • Preheat oven to 325°F. Place baking sheet in oven. Place colander in large bowl. Line colander with kitchen towel. Using processor fitted with shredding blade, coarsely grate potatoes, onion, celery root and apple at the same time. Transfer potato mixture to towel. Gather towel tightly around potato mixture and squeeze out as much liquid as possible into bowl; discard liquid. Place potato mixture, egg, green onion, marjoram, salt and pepper in same bowl; toss to blend. Mix in flour.
  • Pour enough vegetable oil into heavy large skillet to cover bottom. Heat oil over medium-high heat. Working in batches, drop 1/4 cup pancake mixture into skillet for each pancake.
