OATMEAL APPLE PIE COOKIES

Oatmeal Apple Pie Cookies image

Perfectly soft and chewy little apple pie tart-like cookies with oatmeal! These little guys took first place at my work cookie contest, so I guess they're pretty good!

Provided by Amy Loveless

Time 2h

Yield 48

Number Of Ingredients 22

1 cup unsalted butter, softened
1 cup white sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon apple pie spice
3 cups quick-cooking oats
½ cup chopped walnuts
2 large apples - peeled, cored, and diced
1 tablespoon unsalted butter
1 tablespoon white sugar
1 teaspoon ground cinnamon
2 large egg whites
¼ cup caramel sundae syrup (such as Smucker's®)
1 teaspoon ground cinnamon
1 teaspoon cream of tartar
2 cups powdered sugar, or more to taste
1 tablespoon milk, or more as needed

Steps:

  • Beat butter, sugar, and brown sugar for cookie dough in a bowl with an electric mixer until creamy. Stir in eggs and vanilla.
  • Combine flour, salt, baking soda, cinnamon, and apple pie spice in a separate bowl. Gradually mix into the wet ingredients until incorporated. Mix in oats and walnuts. Cover and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Set out two 24-cup mini muffin tins. Place paper towels under 2 wire racks.
  • Combine apples, butter, sugar, and cinnamon for filling in a microwave-safe bowl; microwave on high for 3 minutes, stirring halfway through to distribute the butter, until apples have softened. Transfer to a strainer to drain and cool.
  • Roll chilled dough into walnut-sized balls. Fill each muffin cup with a ball and press down to flatten slightly.
  • Bake in the preheated oven for 10 minutes. Remove and cool for 2 minutes. Press a shot glass down in the middle of each cookie to form it into a cup shape. Transfer from the pan to the prepared wire racks to cool.
  • Put apple filling into the center of each cookie, making sure it's evenly distributed to fill all cookies.
  • Beat egg whites for icing in a glass, metal, or ceramic bowl until foamy. Mix in caramel syrup, cinnamon, and cream of tartar. Gradually mix in 2 cups powdered sugar and mix until it reaches a good drizzling consistency, similar to that of the caramel syrup. Add more powdered sugar if necessary; you don't want it to be so thin that it will run.
  • Drizzle icing over the cookies; it's okay if it melts into the apple filling.
  • Enjoy right away while they're super fresh, or wait until icing hardens, about 3 hours.

APPLE PIE THUMBPRINT COOKIES

Apple Pie Thumbprint Cookies image

A spiced apple filling tops these buttery cookies, packing all the flavor of an apple pie into a single bite -- for a fraction of the work!

Provided by Food Network Kitchen

Categories     dessert

Time 2h10m

Yield 32 cookies

Number Of Ingredients 10

1 pound baking apples such as Golden Delicious, Gala or Fuji (2 to 3 apples), peeled, cored and cut into 1/4-inch dice (about 2 1/2 cups diced)
1 tablespoon lemon juice (from about 1/2 lemon)
1/2 teaspoon apple pie spice
1/4 teaspoon pure vanilla extract
1 cup sugar
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature
1 teaspoon cornstarch
1 3/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon fine salt
1 large egg

Steps:

  • Toss together the apples, lemon juice, apple pie spice, vanilla and 1/3 cup of the sugar in a medium bowl. Melt 2 tablespoons of the butter in a medium skillet over medium heat. Add the apple mixture and stir to coat with the butter. Cover and cook, stirring occasionally and adding about 1/4 cup water if the mixture becomes too dry or begins to brown, until the apples are tender and shiny, about 20 minutes. When the apples are tender, there should be some liquid left in the skillet; if not, add 1/4 cup water and stir. Mix the cornstarch with 1 teaspoon water in a small bowl and pour it into the apple mixture. Stir well and bring the mixture to a boil to activate the starch. Cook until thick and bubbly, 30 seconds to 1 minute more. Transfer to a bowl and refrigerate for 15 minutes.
  • Whisk together the flour and salt in a bowl. In another bowl, beat the remaining 8 tablespoons butter and 2/3 cup sugar with an electric mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg until just combined. Turn the mixer to low and gradually beat in the dry ingredients in 2 additions, beating until just incorporated.
  • Line 2 baking sheets with parchment. Scoop 1-tablespoon portions of dough and roll between your hands to form 1-inch balls. Place about 2 inches apart on the prepared baking sheets. Gently press a thumbprint into the center of each ball about 1/2 inch deep, being careful not to crack the edges. Fill each indentation with 1 teaspoon of the filling, then chill the cookies 15 minutes in the freezer.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
  • Bake, rotating the baking sheets from top to bottom and front to back about halfway through, until the cookies are set, about 30 minutes. Cool the cookies completely on the baking sheets. Store the cookies in an airtight container in the refrigerator for up to 5 days.

Yield Makes 12

Number Of Ingredients 19

For the pie dough:
1/4 cup granulated sugar
1 teaspoon kosher salt
2 1/2 cups all-purpose flour, plus more for surface
1 cup (2 sticks) unsalted butter, cut into small pieces, frozen 15 minutes
1 tablespoon chilled apple cider vinegar
For the filling:
2 medium Honeycrisp, Braeburn, and/or Golden Delicious apples (about 1 pound total)
1/4 cup light brown sugar
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons all-purpose flour, plus more for surface
For assembly:
1 large egg
1 tablespoon milk
Demerara or raw sugar (for sprinkling; optional)
Special Equipment
A 3" round cookie or biscuit cutter; a small (about 1 1/2") leaf-shaped or round cookie cutter

Steps:

  • Make the pie dough:
  • Pulse sugar, salt, and 2 1/2 cups flour in a food processor to combine. Add butter and pulse until coarse, pea-sized crumbs form, about 10 seconds. With the motor running, add vinegar and 1/4 cup ice water and process until dough just comes together, about 30 seconds. Squeeze a small amount of dough between your fingertips; if it's very crumbly, add more ice water, 1 Tbsp. at a time (2 Tbsp. maximum). Do not overprocess.
  • Turn out dough onto a lightly floured surface and form into a rough ball. Knead a few times to combine, then divide into 2 equal balls. Flatten each ball into a disc with smooth edges and no cracks. Cover with plastic wrap and chill at least 1 hour or up to overnight.
  • Make the filling:
  • Peel, core, and slice apples into 1/4"-thick slices. Coarsely chop slices. Transfer to a large pot and add brown sugar, lemon juice, cinnamon, salt, 2 tsp. flour, and 2 Tbsp. water; stir to combine. Cook over medium heat, stirring occasionally and adding water 1 Tbsp. at a time if bottom starts to brown, until apples are softened but still have a little bite, about 10 minutes. Let cool to room temperature.
  • Bake the cookies:
  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper. Beat egg and milk in a small bowl.
  • Roll 1 disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut dough into 12 rounds. Transfer rounds to prepared baking sheet. Spoon 1 heaping Tbsp. filling onto each round (do not overfill). Chill on sheet until ready to use.
  • Roll second disc of dough to an 1/8"-thick round about 13" in diameter. Using 3" cutter, cut into 12 more rounds. Using leaf-shaped cutter, cut a hole in center of each round.
  • Brush edges of rounds with apple filling with egg wash. Place cut-out rounds over filled rounds to create sandwiches, then press down lightly around edges to seal completely. Gently press down in center to even out filling.
  • Brush top of sandwiches with egg wash and sprinkle with demerara sugar, if using.
  • Bake cookies until golden brown and crisp on the bottom, 30-35 minutes. Let cool on baking sheet 5 minutes, then transfer to a wire rack and let cool completely.
  • Do Ahead
  • Cookies can be baked 2 days ahead. Loosely cover with foil and store at room temperature. Do not store in a sealed container or they will become too soft.

APPLE PIE COOKIES!

Apple Pie Cookies! image

These Apple Pie-like Cookies are made of real Pie Crust layered with sticky Caramel, and a slathering of Apple Pie Filling, topped with a flaky and adorable Cinnamon & Nutmeg lattice crust.. So good. I use a jar lid for a cookie cutter. You can make these as large or as small as you like. From OhBiteIt. Go to their website for mouthwatering pictures. For a variation, use chocolate frosting and cherry pie filling. Yum. Maybe next time I will use blueberry filling with cream cheese to spread instead of caramel....or how about using jam instead of pie filling?

Time 50m

Yield 6-8 large cookies

Number Of Ingredients 7

1 (14 ounce) box of frozen pillsbury pie crusts (2 sheets per box)
1 (16 -20 ounce) can apple pie filling (just enough for a thin layer)
1 cup caramel sauce (just enough for a light coating-not caramel syrup-it's thinner-the squeeze bottle kind is great)
1 egg, for egg-wash
2 tablespoons cinnamon sugar
1 tablespoon nutmeg
flour, for sprinkling

Steps:

  • Lay out a sheet of Pie Crust, sprinkle it with some flour and slightly roll it out, just to increase its surface area.
  • Pour some of the Caramel Sauce (Just enough to coat the crust) onto the crust and evenly spread it around, creating a thin layer of caramel.
  • Coarsely chop the Apple Pie Filling into small pieces.
  • Top the caramel layer with a layer of the chopped up Apple Pie Filling, making sure not to add too much pie filling.
  • Roll out the second sheet of Pie Crust the same size as the first sheet, and slice it into strips.
  • Create a lattice crust (just like on a pie) for the top of the pie filling...DON'T create the lattice on the counter, it's not fun getting it on top of the bottom crust.ugh! Create your lattice on top of the actual filling, as if it were a pie! If you want, you can skip this and just place circles of pie crust over the cookies and prick holes in them, sealing with a fork.
  • Dip your cookie cutter into some egg wash and cut out your Pie Cookies.
  • Brush the tops of them with some egg wash and sprinkle them with the Cinnamon Sugar and Nutmeg. Make sure the edges are sealed as well as you can(the cookie cutter through both layers is what seals them! ).
  • Place them onto a baking sheet(it will be easier if you use parchment paper so the juicy caramel doesn't stick to the pan) and bake them at 350 degrees for approximately 20-25 minutes, until they're golden and firm. Let them cool just a little.
  • Pour a glass of cold Milk and grab a warm one, or 5. Open up and bite into the juiciest, chewiest, fruitiest Apple Pie Cookie ever.
  • And any scraps left over? Just roll out the scraps and brush with melted butter then sprinkle with cinnamon sugar and bake till golden. Or cut the cookies in squares to get more cookies and less waste!

Apple pie cookies are delicious treats that are perfect for any occasion. They are easy to make and can be customized to suit your tastes. However, making apple pie cookies can be a bit tricky if you are not familiar with the process. In this article, we will provide you with valuable tips to help you make delicious apple pie cookies.

Choosing the Right Apples

The first thing you should consider when making apple pie cookies is the type of apples you use. Different types of apples have different tastes and textures, which can affect the flavor and texture of your cookies. The best apples for apple pie cookies are firm, tart apples that hold their shape when cooked, such as Granny Smith, Honeycrisp, or Braeburn. Avoid using apples that are too sweet or soft as they will break down during the baking process.

Preparing the Apples

After you've selected the right apples, it's time to prepare them for the cookies. It's essential to peel, core, and slice the apples evenly, so the cookies cook uniformly. You can use either a knife or an apple slicer to cut the apples. Once they are sliced, toss them with lemon juice to prevent browning.

Choosing the Right Spices

Apple pie cookies are traditionally made with cinnamon as the primary spice, but you can add other spices to enhance the flavor. Consider adding nutmeg, allspice, or cloves to the mixture. Be careful not to add too much spice, as it can overpower the apple flavor.

Making the Dough

The dough is the base of your cookies, so it's essential to make it correctly. You can use a pre-made cookie dough mix or make the dough from scratch. If you're making it from scratch, use a recipe specifically designed for apple pie cookies. The dough should be firm enough to roll out, but not too stiff that it crumbles. Adding a little bit of milk or cream can help make the dough more pliable.

Rolling Out the Dough

When rolling out the dough, make sure it's even and not too thick or too thin. Use a rolling pin to flatten the dough to approximately 1/4 inch thickness. You can use a cookie cutter or a cup to cut out the dough into circles. Make sure the circles are big enough to hold the apple mixture.

Adding the Apple Filling

The apple filling is the heart of your apple pie cookies, so it's crucial to get it right. Put a spoonful of the apple mixture in the center of each circle, leaving enough room around the edges to seal the cookies. Overfilling the cookies will cause them to burst open during baking, so don't be tempted to put too much apple mixture in each cookie.

Sealing the Cookies

To seal the cookies, fold the dough over the apple filling, pressing the edges together with a fork or your fingers. Make sure the edges are well sealed so that the filling doesn't spill out during baking.

Egg Wash and Sugar Topping

Before baking the cookies, brush them with an egg wash made from egg whites and a little bit of water. This will help the cookies turn golden brown and give them a glossy finish. You can also sprinkle the cookies with a little bit of sugar to add texture and sweetness.

Baking the Cookies

Bake the apple pie cookies in a preheated oven at 375°F for approximately 15-20 minutes or until they are golden brown. Keep an eye on the cookies as they can burn quickly. Once you remove them from the oven, let them cool on a cooling rack for a few minutes before serving.

Conclusion

Making apple pie cookies is easy and fun, as long as you follow these valuable tips. By choosing the right apples, preparing them correctly, adding the right spices, making the dough correctly, rolling it out, adding the filling, sealing the cookies, brushing them with an egg wash, and baking them, you can make delicious apple pie cookies that will be the envy of all your friends and family. So, what are you waiting for? Start baking and enjoy your delicious apple pie cookies!
