APPLE-OATMEAL COOKIES

Apple-Oatmeal Cookies image

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

Time 55m

Yield 16 large cookies

Number Of Ingredients 12

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon
Kosher salt
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 cups oats
1 1/4 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
  • In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
  • Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
  • Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
  • To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

If you're looking for a tasty and healthy treat, apple oatmeal cookies are the perfect option. These cookies use traditional oatmeal cookie ingredients, but with the added sweetness and texture of apples. Whether you're an experienced baker or a beginner, here are some valuable tips to help you make the perfect apple oatmeal cookies.

Ingredients

Before you dive into making apple oatmeal cookies, make sure you have all the necessary ingredients. Here are the essential ingredients you'll need for this recipe:
Oats and flour
Use old-fashioned rolled oats, not quick-cooking oats, for the best texture. You'll also need all-purpose flour, which will bind the cookie dough together.
Sugar and spices
Brown sugar adds sweetness and moisture to the cookies, while cinnamon and nutmeg add warmth and depth of flavor.
Eggs and butter
Eggs and butter are essential in any cookie recipe. Be sure to use room temperature eggs and butter, so they mix together more easily.
Apples and nuts
Choose crisp, firm apples such as Granny Smith, and chop them into small pieces. Chopped nuts such as walnuts or pecans are optional but can add a delicious crunch to your cookies.

Preparation

Now that you have your ingredients ready, let's move on to the preparation.
Measuring ingredients
Measuring ingredients accurately is crucial for baking, so use a measuring cup and spoons to ensure you get the right amount of oats, flour, sugar, and spices.
Chopping apples
Chop the apples into small pieces, so they will cook evenly in the oven and blend nicely with the other ingredients. To prevent browning, toss the apples in a bowl of lemon juice before adding them to the cookie dough.
Creaming butter and sugar
Creaming the butter and sugar until light and fluffy is a crucial step in any cookie recipe. This process not only combines the ingredients but also adds air to the mixture, resulting in a light and tender cookie. Cream the butter and sugar together for at least three minutes using a stand mixer or hand mixer.
Adding dry ingredients
Add the dry ingredients, such as oats, flour, and spices, into a separate bowl and whisk them together. Gradually add this dry mixture to the creamed butter and sugar, mixing on low speed until just combined. Don't overmix or the cookies will become tough.
Adding wet ingredients
Add the eggs one at a time, mixing until fully incorporated before adding the next one. Be sure to scrape the sides of the bowl to incorporate everything evenly. Then add the chopped apples and nuts, and mix until just combined.

Baking

Now that your cookie dough is ready, let's move on to baking.
Chilling cookie dough
Chilling the cookie dough for at least 30 minutes before baking will prevent the cookies from spreading too much in the oven. You can place the dough in the refrigerator or freeze it for longer storage.
Scooping cookie dough
Use a cookie scoop or spoon to portion out the dough onto a baking sheet lined with parchment paper, leaving enough space between the cookies to allow for spreading.
Baking time and temperature
Bake the cookies at 350°F for 12-15 minutes until golden brown around the edges. Keep an eye on them to prevent overbaking, which can lead to dry and crumbly cookies.
Cooling cookies
After baking, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will prevent them from breaking or falling apart.

Conclusion

Now you have all the valuable tips you need to make perfect apple oatmeal cookies. Remember to measure your ingredients accurately, chop your apples evenly, cream your butter and sugar well, chill your cookie dough before baking, and bake your cookies at the right temperature for the right amount of time. Enjoy your delicious and healthy apple oatmeal cookies!
