Kosher salt and freshly ground pepper
6 bone-in pork chops (4 to 5 ounces each)

2 teaspoons dried oregano
1/2 teaspoon dried rosemary
Salt and pepper
1 1/2 cups unseasoned bread cubes (or cut up day-old bread)

PORK CHOPS WITH APPLES AND ONIONS

Pork Chops with Apples and Onions image

Sauteed apples and onion combine with pork chops for a tastiness that never disappoints.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 7

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

Making apple leek pork chops is a healthy and delicious way to enjoy a hearty meal. The combination of sweet apples and savory leeks with tender pork chops creates a mouthwatering dish that will satisfy your taste buds. However, it can be challenging to prepare the perfect apple leek pork chops. To help you out, we have gathered some valuable tips to make apple leek pork chops recipes that are sure to impress your guests.

Tips on Choosing the Right Pork Chops

The first step in making the perfect apple leek pork chops is to choose the right cut of meat. There are various types of pork chops available in the market, such as bone-in, boneless, thick-cut, and thin-cut. However, not all pork chops are created equal, and each type of chop has its unique characteristics.
1. Choose bone-in pork chops
Bone-in pork chops are a better choice than boneless chops because they add flavor to the meat. The bone also helps to keep the meat from drying out during cooking, resulting in a more juicy and flavorful pork chop.
2. Look for thick-cut pork chops
Thick-cut pork chops are better for apple leek pork chops recipes than thin-cut pork chops because they are less likely to overcook and become dry. They also have more surface area, allowing for more seasoning and browning.
3. Choose fresh pork chops
Always choose fresh pork chops over frozen ones. Fresh pork chops have better texture, flavor, and moisture content than frozen ones.

Tips on Preparing the Pork Chops

Once you have chosen the perfect pork chops for your recipe, the next step is to prepare them correctly.
1. Season the pork chops before cooking
Season the pork chops with salt, pepper, and any other seasonings you prefer before cooking them. This allows the flavors to penetrate the meat and create a more delicious dish.
2. Let the pork chops come to room temperature
Take the pork chops out of the refrigerator and let them sit at room temperature for at least 30 minutes before cooking. This will ensure that the pork chops cook evenly and retain their internal moisture.
3. Pat the pork chops dry
Before cooking the pork chops, pat them dry with paper towels. This removes any excess moisture on the surface, allowing them to brown better.

Tips on Making Apple Leek Sauce

The apple leek sauce is the highlight of the dish and adds a sweet and savory flavor to the pork chops. To make the perfect sauce, follow these tips.
1. Use fresh apples
Choose fresh apples that are firm and have a sweet flavor. Apples that are too soft can become mushy when cooked, resulting in a mealy sauce.
2. Cut the leeks correctly
To cut the leeks, trim off the roots and dark green tops. Cut the leeks lengthwise, then slice them crosswise into thin half-moons. Make sure to rinse them thoroughly to remove any dirt or sand trapped between the layers.
3. Add the apples and leeks at the right time
Add the apples and leeks to the pan after searing the pork chops. This allows the juices from the pork chops to infuse into the sauce, creating a richer, more delicious flavor.

Tips on Cooking the Pork Chops

Now that you have prepared the pork chops and apple leek sauce successfully, it's time to cook them to perfection.
1. Sear the pork chops at high heat
Heat the pan on high heat until it's almost smoking. Then, add the seasoned pork chops and sear them for about 2-3 minutes on each side until browned. This creates a flavorful crust on the pork chops.
2. Don't overcook the pork chops
Overcooking the pork chops can make them dry and tough. Use a meat thermometer to check the internal temperature of the pork chops. Cook them until they reach 145°F or until the juices run clear.
3. Let the pork chops rest
Once the pork chops are cooked, remove them from the pan and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute and will result in a more flavorful and tender pork chop.

Conclusion

Making apple leek pork chops can be a delicious and satisfying meal for any occasion. By following these valuable tips, you can create a flavorful and juicy pork chop with a sweet and savory apple leek sauce that will impress your guests. Remember to choose the right pork chops, season them well, and cook them to perfection. Happy cooking!
