Time 30m

Yield 6 serving(s)

Number Of Ingredients 10

1/4 cup sugar
2 teaspoons ground cinnamon
1/2 cup bread flour (or AP flour)
1/2 cup milk, room temperature
3 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon pure vanilla extract
6 tablespoons butter
2 granny smith apples, peeled, cored, and sliced
1/4 cup raisins (optional)

Steps:

  • Preheat oven to 425°F Place oven rack on the middle rack of your oven. In a small bowl, combine sugar and cinnamon. Set aside.
  • In a large bowl, combine flour, milk, eggs, salt, and vanilla extract. Beat until batter is smooth and set aside.
  • In a 8" or larger cast-iron frying pan over medium heat, melt butter, tilting pan to cover sides. Add apples and sprinkle with sugar and cinnamon mixture. Stir and let cook for 5-7 minutes to slightly cook the apple slices. Add raisins if using and remove from heat.
  • Pour the batter over apples into baking pan. Place pan in oven and bake 20 minutes or until puffed above sides of the pan and lightly browned (it may puff irregularly, but this is normal). Remove from oven.
  • Remove pancake from the baking pan by flipping upside down onto a serving platter so that the apples are on top. To serve, cut into serving-size wedges and transfer to individual serving plates. Note: Once out of the oven, the pancake will begin to deflate, but that is okay.

Apple Johnny is easy to make, and it is a great way to use up leftover apples that may be too bruised to eat fresh.

Tips for Making Apple Johnny

1. Choose the Right Apples
Not all apples are created equal when it comes to cooking. Some apples are too sweet or too tart, while others are too soft or too firm. The best apples for making Apple Johnny are firm and tart apples, such as Granny Smith, Honeycrisp, or Jonathan. These apples hold their shape well when cooked and provide a nice balance of sweetness and tartness to the dish.
2. Prepare Your Apples
Before you start cooking, you need to prepare your apples. Wash them under cold running water, peel them, and then core them. If you don't have a corer, you can use a small knife or even a melon baller to remove the cores. Cut the apples into small pieces or thin slices, depending on your preference.
3. Use the Right Cooking Equipment
To make Apple Johnny, you will need a heavy-bottomed skillet or cast-iron pan, a wooden spatula, and a lid. It is best to use a skillet or pan that is large enough to hold all of the apples without overcrowding them. Overcrowding the pan can cause the apples to cook unevenly and turn out mushy.
4. Cook Your Apples Slowly
To make the best Apple Johnny, you need to cook your apples slowly over low heat. This will allow the natural sugars in the apples to caramelize and create a rich, deep flavor. It will also prevent the apples from becoming too soft and mushy. Stir the apples occasionally to prevent them from sticking to the bottom of the pan.
5. Add Spices and Flavorings
Apple Johnny is a simple dish that can be jazzed up with a variety of spices and flavorings. Cinnamon, nutmeg, ginger, and cloves are all popular spices to add to Apple Johnny. You can also add a splash of vanilla extract or a squeeze of lemon juice for extra flavor. Be careful not to add too much spice, as it can overwhelm the natural flavor of the apples.
6. Serve Hot with Accompaniments
Apple Johnny is best served hot, straight from the pan. You can serve it as is, or you can add a few toppings or accompaniments to make it even more delicious. Some popular choices include whipped cream, vanilla ice cream, or a dollop of yogurt. You can also sprinkle some chopped nuts or raisins on top for added texture and flavor.

Conclusion

Apple Johnny is a classic dish that is simple to make and delicious to eat. Using these tips, you can create a dish that is full of flavor and perfect for any meal. Whether you enjoy it hot or cold, on its own or with accompaniments, Apple Johnny is a versatile and satisfying dish that is sure to become a family favorite. So, grab some apples and get cooking!
