This is a recipe from Lesley Water's (UK TV-Chef) 'Simple Ways to Success- Healthy' cookbook. I haven't tried it myself yet, but it looked like a great breakfast recipe to share and by posting it here at least i won't forget to try it! ;)

2 large bananas, chopped
2 nectarines, chopped
2 teaspoons runny honey
4 flour tortillas

Steps:

  • In a small bowl mix the honey with the fruit.
  • Heat a non-stick frying pan, preferably griddle pan over medium heat.
  • Divide the fruit between the tortillas, spooning it into the middle of each.
  • Roll up the tortillas and fold over the ends to make a wrap.
  • Place the wraps seam side down into the pan and cook for two minutes on each side, until nicely toasted.
  • Serve immidiately.

The great thing about making wraps is the unbelieveable amount of variations that can be done with them...You are only limited by your imagination! Here's a basic 'breakfast' wrap, but it's only a 'starting point'...Add stuff in, take stuff out, whatever floats your boat! I especially like that I can lower the fat and sodium content using egg substitute, 50% lowfat cheese and low sodium salsa!

1 tablespoon olive oil
3 large eggs
3/4 cup egg substitute (Egg Beaters preferred)
1 tablespoon 1% low-fat milk
1 teaspoon salt (optional)
1/2 teaspoon black pepper
1 cup low-fat cheddar cheese, shredded
3/4 cup salsa, chunky-style (low-sodium, if available)
6 large flour tortillas (I like oat bran and flax seed lavash bread)

Steps:

  • Heat oil in a medium skillet over med-high heat.
  • Combine the eggs, egg substitute, milk, salt (optional) and pepper, beating well.
  • Pour into the skillet and cook the mixture, without stirring, until the bottom and edges begin to set (about 1 min).
  • Then continue to cook the mixture, now stirring continually, until just slightly set (an additional 2 min).
  • Add in the cheddar cheese and stir; remove from the heat.
  • While the egg mixture is cooking, you can also heat the salsa over low heat, until warmed.
  • Wrap the tortillas (or lavash bread) in a clean kitchen towel and zap in the microwave on high for 1 min (to warm).
  • Divide the now cooked egg mixture evenly amongst the tortillas, spreading the mixture down the center of each one.
  • Top each of the portions with 2 tbsp of the warmed salsa.
  • Now to close your wrap: fold over one side of the wrap over the filling, then fold up the bottom, then roll the rest of the wrap up securely.
  • Serve immediately.

1/2 teaspoon salt
1/4 cup shortening
2 -3 tablespoons cold water
2 tablespoons butter, melted, divided
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 large apple, peeled and quartered

Steps:

  • In a bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll out pastry into a 10-in. square; brush with 1 tablespoon butter. Fold into thirds. Roll into a 10-in. x 6-in. rectangle; cut lengthwise into four strips. Brush with butter.
  • Combine sugar and cinnamon; sprinkle half over the strips. Place an apple wedge on each; wrap pastry around apple. Line a baking sheet with foil and coat the foil with cooking spray.

12 eggs (or equivalent egg substitute)
8 ounces low-fat milk
12 slices turkey bacon
1 1/2 cups shredded cheddar cheese

  • Cook bacon in a pan or on a greased rack over a sheet pan in the oven at 350 until done.
  • Mix eggs (or egg substitute) with milk.
