APPLE-GLAZED PORK LOIN

- Rub 1 teaspoon salt and 1/4 teaspoon pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes. , Meanwhile, in a small saucepan, melt jelly over low heat. Whisk in mustard and 1 teaspoon lemon juice. Brush roast lightly with jelly mixture. , Bake 30-40 minutes longer or until a thermometer reads 145°, basting once with jelly mixture. Let roast stand for 10 minutes before slicing., Stir drippings in pan to loosen browned bits. Pour into a measuring cup; skim fat. Stir the remaining jelly mixture, lemon juice, salt and pepper into drippings; heat through. Serve with the roast.

MAPLE-GLAZED ROAST LOIN OF PORK WITH APPLE PUREE

Steps:
- Preheat the oven to 450 degrees.
- Place the pork on a platter and dredge well with the cornstarch. Sprinkle with salt and pepper to taste.
- Place in a roasting pan, ribs down, and set in the oven. After 10 minutes, reduce heat to 325 degrees and brush the loin liberally with the maple syrup; reserve remaining syrup. Continue roasting, basting every 7 minutes, until the loin reaches an internal temperature of 155 degrees, about 1 1/4 hours, or until desired degree of doneness.
- Meanwhile, wash, quarter and core the apples (do not peel). Place in a nonaluminum pan with 3 tablespoons of the remaining syrup. Cover and simmer over medium heat until apples burst and are soft, about 15 minutes. Process through a food mill or sieve and set aside.
- When the loin is done, remove from the oven and set aside on a platter. Drain the fat from the pan and pour in the broth and cider. Reduce over medium heat by half. Strain into a sauce boat.
- Serve the roast with the sauce and apple puree on the side.

APPLE-GLAZED PORK LOIN WITH APPLE STUFFING

- 1. Preheat oven to 400 degrees. STUFFING: 2. To prepare the stuffing, arrange bread cubes in a single layer on a jelly-roll pan. Bake at 400 degrees for 6 minutes or until toasted, set aside. Melt butter in a large nonstick skillet over medium-high heat. Add onion and next 5 ingredients (onion through garlic); cook over medium high heat 5 minutes or until tender. Add apple, salt and 1/4 teaspoon pepper, cook 2 minutes. Add bread cubes and apple juice to stuffing mixture, stir gently. Set aside. ROAST: 3. To prepare roast, trim fat from pork. Combine garlic powder and next 6 ingredients (garlic through 1/4 teaspoon pepper) in small bowl, rub evenly over pork. Place pork on a broiler pan coated with cooking spray, insert meat thermometer into thickest portion of pork, Bake at 400 degrees for 30 minutes. Combine the jelly, ginger, and lemon rind in a small bowl Brush jelly mixture over roast. Spoon the stuffing onto the broler pan around pork. Cover with foil and bake at 400 degrees for 15 minutes; uncover and bake an addional 15 minutes or until therometer reaches 155 degrees, basting pork occasionally with jelly mixture. Cover and let stand 10 minutes before slicing. Yield: 10 3 ounce servings

Steps:
- Dry pork well.
- Combine mustard, thyme and sage.
- Rub all over pork and.
- Let stand at room temperature 30 minute.
- In a bowl combine apple juice or cider and lemon juice.
- On greased grill over medium high heat.
- Sear pork turning often for 15 minute.
- Reduce heat to low.
- Close lid and grill turning often and basting with cider mixture for about 1 1/2 to 2hrs or until meat thermometer reads 160F
- Do not overcook.
- During last 20-30 min baste pork several times with the Apple Glaze.
- Remove from grill.
- Cover with foil and let stand 10 minute before carving.
- Serve with remaining glaze.
