3 apples, chopped
3 pears, chopped
2 peaches, pitted and chopped
Juice of 2 limes
1/4 cup honey
1/4 cup fresh mint leaves, torn

Steps:

  • Add the apples, pears and pieces to a large bowl. Squeeze the juice from the limes over fruit. Add the honey and mint leaves, and toss it all together to coat. Serve immediately or chill until ready.

1/4 cup sugar
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
2/3 cup water
1 egg, lightly beaten
1 teaspoon white vinegar
1-1/2 teaspoons butter
3 medium apples, diced
2 medium firm bananas, sliced
1/3 cup diced celery
1/2 cup seedless red grapes, halved
1/2 cup fresh pineapple chunks
1/3 cup chopped cashews

Steps:

  • For dressing, in a small saucepan, combine the sugars, flour and water until blended. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. , Stir a small amount into the egg; return all to the pan. Cook and stir until mixture reaches 160° and coats the back of a metal spoon. Remove from the heat; gently stir in vinegar and butter. Cool completely. , In a large bowl, combine the apples, bananas, celery, grapes, pineapple and cashews. Drizzle with dressing and toss to coat. Cover and refrigerate until chilled. Serve with a slotted spoon.

6 (3 2/3 ounce) Snickers candy bars (frozen and then chopped up)
1 (12 ounce) container whipped cream

Steps:

  • Start with a big bowl so you have room to mix!
  • Make sure you remove all the seeds from the apples when you chop them up.
  • Place them in the bowl first.
  • Next, add the Snickers bars
  • Stir in the whipped cream and refrigerate for at least 2 hours.

This fruit salad is amazing, and there is NO ADDED sugar to the syrup because it's made with 100% pure apple juice. The colors of the strawberries, blueberries and mangoes together are absolutely beautiful. This is now my new signature "summer" dish that people ask me to bring to picnics and cook outs. I found this in Vegetarian times. It was mentioned that the vanilla apple syrup alone can be used as a sweetener for plain yogurt, iced tea or cocktails, in place of simple syrup made with sugar.

2 cups apple juice
2 slices lemon zest
1/4 vanilla bean
2 medium mangoes, peeled and diced
1 pint strawberry, stems removed, quartered
1 pint blueberries

Steps:

  • Place apple juice and lemon zest in a pot.
  • Slice the vanilla bean in half, and scape out the seeds into the juice. Add bean pod to the pot as well.
  • Bring to a boil over medium high heat.
  • Reduce to medium low and simmer for 30 minutes, or until mixture is syrup-like and reduced to 1/3 cup.
  • Remove lemon zest and vanilla bean, and cool to room temperature.
  • Sometimes I strain the cooled syrup through a mesh strained if there are pieces of the bean pod still left behind.
  • Toss mangoes, strawberries and blueberries with the syrup and serve.

So I removed the cherry pie filling and replaced it with apple pie filling, food coloring, mandarin oranges and doubled the cool whip. OMG it was out of this world. Thanks Lisa.

1 can(s) 8oz. crushed pineapple
1 can(s) 21 oz. apple pie filling
2 bananas sliced
1 can(s) mandarin oranges, drained (anysize)
1 can(s) 14 oz. sweetened condensed milk
8 oz sour cream
1 pkg 16 oz. cool whip, thawed
5-6 drops of red food coloring (or what ever color you would like to make it)

Steps:

  • 1. in a large mixing bowl (5 quart) mix together cool whip, sweetened condensed milk, sour cream and food coloring.
  • 2. stir in remaining ingredients.
  • 3. cover and refrigerate for at least four hours. serve.

Next add the sour cream and mix until fully combined, Next add the cool whip mixing all together well. Make sure your cream cheese is at room temp that will aid in getting your dip nice and smooth. If you are serving several people then you can mix all the dip directly with all the apples and grapes and serve. Leftovers can be stored about 2 days once it's mixed. If you are serving the next day. Just keep the fruit in baggies in the fridge and the dip will last in the fridge on its own about 4 to 6 days once it's made. Just whip it up before each use to make sure everything stays blended.
