2 tablespoons butter
1 tablespoon sugar
1/8 teaspoon pepper
1 cup walnut halves
DRESSING:
1/3 cup olive oil
3 tablespoons white wine vinegar
1-1/2 teaspoons Dijon mustard
2 garlic cloves, minced
1/2 teaspoon sugar
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon dried parsley flakes
1/8 teaspoon pepper
2 tablespoons finely chopped onion
SALAD:
5 cups torn romaine
5 cups torn red leaf lettuce
1 medium green apple, chopped
1 medium red apple, chopped
1/2 to 1 cup crumbled feta cheese

Steps:

  • Preheat oven to 350°. In a small skillet, melt butter over medium heat; stir in sugar and pepper. Add walnuts; toss to coat. Spread evenly onto a baking sheet. Bake until lightly browned, about 15 minutes, stirring every 5 minutes. Cool on a wire rack., Place dressing ingredients in a blender; cover and process until blended. Place salad ingredients in a large bowl; toss with dressing. Top with walnuts. Serve immediately.

½ cup chopped walnuts
½ cup crumbled feta cheese
½ cup dried cranberries
2 tablespoons finely chopped green onions
¼ cup vegetable oil
¼ cup blueberries
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
¼ teaspoon salt

Steps:

  • Layer salad greens, Granny smith apple, walnuts, feta cheese, cranberries, and green onions in a large bowl.
  • Combine vegetable oil, blueberries, extra-virgin olive oil, balsamic vinegar, and salt in a food processor or blender; pulse into a smooth dressing.
  • Pour dressing over salad; toss to combine. Chill until serving.

1 head boston lettuce, torn
1 head red leaf lettuce, torn
1 Red Delicious apple, unpeeled and finely chopped
8 ounces feta cheese, crumbled
1/2 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
3 tablespoons unsalted butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground red pepper
1 dash hot sauce
1 2/3 cups pecan halves

Steps:

  • For the pecans: Combine the butter, salt, cinnamon, ground red pepper, and a dash of hot sauce in a medium bowl. Add the pecans, stirring to coat.
  • Spread in a single layer on an ungreased baking sheet. Bake at 300 degrees for 15 minutes, stirring once. Cool completely on baking sheet on a wire rack.
  • For the salad: Combine the lettuces, apple, cheese, and Spiced Pecans in a large bowl; toss gently, and set aside.
  • For the dressing: Combine the olive oil, vinegar, mustard, salt and pepper in a jar. Cover tightly, and shake vigorously. Pour dressing mixture over the lettuce mixture; toss gently. Serve immediately.

Steps:

  • Mix dressing ingredients first so that flavors can blend. In a small skillet melt butter over medium heat. Add pecans, sprinkle with sugar and pepper. Stir until well coated, spread onto a baking sheet. Bake for 5-7 minutes. Cool on a wire rack. In a large bowl combine the remaining ingredients. This is a beautiful and delicious salad. This is also very nice and a bit milder served with Golden Delicious Apples.

5 -6 medium beets, about 1 1/2 lbs
1/2 small red onion, chopped
2 granny smith apples, cored and thinly sliced
3/4 cup feta cheese, crumbled
1 shallot, minced
1 teaspoon Dijon mustard
1 teaspoon prepared horseradish
1 1/2 tablespoons red wine vinegar
1/4 teaspoon celery seed
2 tablespoons canola oil
2 tablespoons olive oil
1/4 teaspoon salt
fresh ground pepper
1/3 cup scallion, chopped
2 tablespoons fresh dill, chopped

Steps:

  • Wash the beets, but do not peel.
  • Place in a very deep pot and cover with cold water until floating. Bring to a boil, cut back to a simmer and cook for about 40 minutes or until tender when pierced with a sharp knife. Note - Beets can be a bit messy and stain terribly. By using a very deep pot you won't have as much splattering.
  • While the beets are cooking, make the salad dressing by combining the ingredients above starting with the shallot and ending with the freshly ground pepper. Shake well.
  • Chop the red onion, slice the green apple, place them in a large bowl and toss with the salad dressing and the feta cheese.
  • When beets are done, cool, peel, cut in half and then slice thinly.
  • Toss with the apples, onion and cheese mixture.
  • Garnish with the scallions and dill.
  • Enjoy!

1 Fuji apple
1 tablespoon fresh lemon juice
2 small or 1 medium fennel bulb, trimmed, quartered, cored and very thinly sliced

2 ounces feta, crumbled (about 1/2 cup)
1 tablespoon sherry vinegar

1/4 c. olive oil
1/4 t. salt

1/4 c. red wine vinegar
Walnuts:
c. walnuts halves
3 T. butter
1/2 c. sugar
1 T. medium ground pepper
Salad:
Lettuce mix (your choice)
2 green apples, cored and thinly sliced
3/4 c. crumbled feta cheese

Steps:

  • Dressing: Mix in food processor or by hand, except for olive oil. When well blended, add olive oil in a steady stream. Walnuts: Preheat oven to 350 degrees. Melt butter in Pyrex dish. Add walnuts and bake for 20 minutes. Stir every 5 mins. Mix sugar and pepper. Drain excess butter and toss walnuts in sugar-pepper mixture. Shake well. Discard excess. Salad: Toss salad with walnuts and dressing

2 tablespoons wine vinegar
1 tablespoon + 1 teaspoon Dijon style mustard
1/2 cup olive oil
salt and freshly ground pepper to taste
1 head red leaf lettuce, torn in pieces
1 head Boston lettuce (or 1/2 Boston and 1/2 romaine), torn in pieces
1 red Delicious apple, finely chopped
1/2 pound feta cheese, crumbled

Spiced Pecans:
3 tablespoons unsalted butter
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cayenne pepper
dash of hot pepper sauce (like Tabasco)
1 2/3 cups pecans (6 ounces)

Steps:

  • Mix vinegar and mustard in large bowl. Gradually whisk in oil. Season with salt and pepper. Add lettuce and toss to coat. Sprinkle apple, cheese, and Spiced Pecans over salad and serve. Spiced Pecans: Melt butter; mix in seasonings. Pour butter mixture over pecans; toss. Spread on heavy cookie sheet. Bake until crisp, about 15 minutes at 300°. Cool completely.
